These easy roasted sunchokes are crispy and delightful!

1 pound sunchokes (Jerusalem artichokes), scrubbed
2 tablespoons olive oil
1 tablespoon chopped fresh thyme
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
optional topping - squeeze of fresh lemon juice, a drizzle of honey, fresh herbs

Steps:

  • Preheat oven to 400 degrees F.
  • Thinly slice the sunchokes into 1/4 strips. They are all different shapes, so cut them into strips or coins.
  • Toss the sunchokes with olive oil, thyme, salt, and pepper.
  • Lay the sunchokes flat on a parchment-lined baking sheet and bake in the oven for 30 to 35 minutes or until crispy. Halfway through cooking, toss them so they cook evenly.
  • Remove from the oven and serve as is or with optional toppings.

Sunchokes are a very flexible vegetable, but this simple treatment brings out the best.

3 - 4 (7oz, 210gr) Jerusalem artichokes aka sunchokes
1 tbs olive oil
1/2 tsp dried thyme
1/2 tsp dried marjoram
sea salt, optional

Steps:

  • Scrub sunchokes with a vegetable brush under running water.
  • Slice 1/4″ (.5cm) thick.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • When hot add sunchokes slices and quickly sauté until golden brown and crisp-tender, 7 - 9 minutes.
  • Sprinkle with herbs and sea salt if using and serve.

  • Thinly slice the sunchokes and place them immediately in a medium sized saucepan filled with salted water.
  • Place the saucepan on the stove and bring to a boil. Reduce to a simmer and cook for about 4 to 5 minutes or until the sunchoke slices are tender but not falling apart. Drain and set aside.
  • In the meantime make the persillade by finely chopping the flat leaf parsley, lemon zest and garlic together. Set aside.
  • Heat oil or butter in a large saute pan or skillet on medium heat. Add the mushrooms and a pinch of salt and pepper and turn to coat them well.
