CRISPY ROASTED POTATOES
As a kid growing up, I always loved these slightly spicy, yet crispy, roasted potatoes. If only I had known then how easy they were to make!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a large baking pan.
- Place potatoes into a large bowl.
- Whisk oil, onion powder, garlic salt, pepper, and paprika together in a small bowl. Pour over potato cubes, hand-tossing to coat. Place potatoes into the prepared pan, spreading them so that they are evenly dispersed.
- Bake in the preheated oven for 45 minutes. Stir. Continue to bake until potatoes are crispy brown and tender, 10 to 20 minutes.

CRISPY BAKED POTATOES
Steps:
- Mix 2 tablespoons olive oil, 2 teaspoons kosher salt and 1 teaspoon pepper. Pierce 6 russet potatoes with a fork; rub with the oil. Bake on the top oven rack at 375 degrees F (put a baking sheet below to catch drippings) until tender, 50 minutes. Slice open and top with butter, salt, pepper and chives.
CRISPY SKIN BAKED POTATOES
I used to microwave baked potatoes for about half the cooking time and finish them off in the toaster oven. My better half said they had steamed taste-not like real baked. I found this recipe in one of the many cooking magazines that I subscribe to (not sure which one).

- Scrub potatoes with a vegetable brush, coat with vegetable oil and sprinkle liberally with sea or kosher salt.
- Pierce twice on each side with a fork and place in a 450°F oven.
- Bake for 1 hour or more, depending on the size of potatoes.
- These are fabulous with a moist and fluffy interior and a crispy skin if you care to eat it.

ONE-PAN GLAZED MEATLOAF AND ROASTED POTATOES
Steps:
- Preheat oven to 375 degrees F. Coat a large sheet pan with nonstick cooking spray.
- In large bowl, combine all meatloaf ingredients. Mix well to combine. Form mixture into a log (about 4-5 inches thick) on the sheet pan.
- Toss the potatoes with olive oil. Spread around the sheet pan, surrounding the meatloaf. Sprinkle generously with salt and pepper.
- Bake for 45 minutes.
- In a small bowl, mix all ingredients together for the sauce. Spread over meatloaf, then return to oven. Bake additional 15 minutes, until potatoes are tender.
- Rest meatloaf 10 minutes before slicing. Cut meatloaf into slices and serve with potatoes.

TWICE-BAKED POTATOES WITH CRISPY PORK BELLY AND CHEDDAR CHEESE

- For the potatoes: Preheat the oven to 400 degrees F.
- Make a bed of salt on a quarter-sheet tray and place the potatoes on top. Bake until tender, about 1 hour. Slice the potatoes in half lengthwise, then hollow out the skins, scooping the flesh into a bowl. Add the cream, butter, egg yolks and cheese to the potato filling and mix thoroughly.
- For the pork belly: Meanwhile, turn the heat under a large stovetop pressure cooker to medium-high and add 2 tablespoons oil, along with the onions and garlic. Allow to sweat, about 3 minutes. Add the juniper, allspice, clove, mustard seeds, peppercorns and bay leaves and stir to combine. Pour in the beer and stir in the soy sauce and brown sugar. Bring to a simmer, then gently add the pork belly. Carefully secure the pressure cooker lid and bring to high pressure over medium-high heat. Cook at pressure for as long as it takes for the potatoes to cook, 45 minutes to 1 hour. Turn off the heat and carefully run the pressure cooker under cold water until cool enough to open. Open and remove the pork.
- Preheat a deep-fryer or a large Dutch oven with oil to 350 degrees F.
- Set aside some of the pork pieces for garnish, glazing with what is left in the pressure cooker. Fry the pieces in batches until crispy, 2 to 3 minutes.
- Chop the crispy fried pork into chunks, then fold them into the potato mixture. Spoon the potato mixture into the potato skins and bake until crispy and browned, about 15 minutes. Top each with any remaining pork belly pieces and green onions.
TURKEY MEATLOAF WITH SIDE OF BAKED POTATOES
Never used ground turkey, but my daughter said she had used it to make chili and other things and really liked it. So got a package with the intent to make chili but started thinking about meatloaf (one of my favorites) so decided to make that. When checking my pantry for the fixings, saw the box of the cream of Spinach soup and this is what I came up with. When I turned the oven on to preheat, thought to add the potatoes. Will be adding to my list of go to recipe

- Preheat oven to 350 degrees.
- * Prior to putting meatloaf together, I washed and poked baking potatoes. You can oil or spray with cooking spray and place in the oven directly on the sides of rack and set the timer for 15 minutes, but next time will do sweet potatoes .
- In a mixing bowl, combine the turkey, soup mix, shallots, celery, mushrooms and egg and mix together well. Add bread crumbs (you could use oatmeal or cracker crumbs instead) and as much of the water as needed to make the mixture moist but stay together. Shape into a loaf and place on a baking pan that has been lightly greased or sprayed with Pam. Top with the shredded swiss chesse.
- When the potatoes have baked for 15 minutes , add pan with meatloaf in the center of the oven rack and bake for 30 minutes. At the end of 30 minutes, turn potatoes over and rotate meatloaf pan and bake timer for 20 additional minutes (check with meat thermometer, when it reaches 170-175 degrees) remove from oven and cover with foil and let it rest 10 minutes.
