These Crispy Caramelized Sweet Potatoes use a mandoline. By thinly slicing the potatoes and standing them upright, the edges become crispy. There is also a brown sugar-ginger glaze which makes them caramelized in the oven.

Number Of Ingredients 8

2 tablespoons vegetable oil, such as canola
Up to 8 large, peeled sweet potatoes (about 7 pounds), of even thickness
4 tablespoons salted butter, melted
u2153 cup firmly packed light-brown sugar
2 tablespoons all-purpose flour
1 teaspoon kosher salt
u00bd teaspoon ground ginger
u00bd teaspoon freshly ground black pepper

Steps:

  • 1 Preheat the oven to 400u00b0 F and set a rack to the middle position. Grease a 3-quart baking dish with the vegetable oil and set aside.
  • 2 Slice 6 of the potatoes on a mandoline into very thin slices (about u215b inch), using the blade guard to protect your fingers. Arrange the potato slices on their sides in concentric circles around the oiled baking dish. You can save the smaller end pieces for the center. If your dish isnu2019t full from the 6 potatoes, slice and add an additional potato or two. The dish neednu2019t be packed tightu2014just enough so the potatoes stand upright.
  • 3 Brush the potatoes evenly with the butter, pushing the brush between the slices to coat them thoroughly, then cover tightly with foil and bake for 40 minutes. Meanwhile, in a small bowl, whisk together the brown sugar, flour, salt, ginger, and pepper. Set aside.
  • 4 After 40 minutes, remove the foil from the potatoes and sprinkle them evenly with the brown sugar mixture. Bake uncovered until the sauce is bubbling and the top is crisp and browned, another 30 to 40 minutes. For extra browning, run the pan briefly under a broiler, about 3 inches from the heating element (watch closely, as it can burn). Serve warm.

It is faster this way than baked and I always have the ingredients on hand. It originally came from Better Homes and Gardens. I have reduced the sugar after Kumquat's kind review.

2 large yellow onions, cut in 3/4-inch chunks
4 teaspoons margarine
2 large sweet potatoes, peeled and sliced 1/2-inch thick (or 1#)
1/4 cup water
2 teaspoons brown sugar
3/4 teaspoon dried rosemary, crushed

Steps:

  • In a large skillet cook onions in margarine over medium high heat for 3-4 minutes, or until onions are nearly tender, stir frequently.
  • Stir in sweet potatoes and water.
  • Cover and cook over medium heat for 12 to 15 minutes or until sweet potatoes are NEARLY tender, stirring occasionally. Notice that in last step you are cooking a bit longer.
  • Uncover skillet; add brown sugar and rosemary.
  • Cook over medium low heat for 4-5 minutes or until onions and sweet potatoes are glazed, stirring gently occasionally.

2 1/2 tablespoons garlic, minced
3/4 cup dry white wine
1 1/2 cups homemade or low-sodium store-bought chicken stock
2 tablespoons packed dark-brown sugar
1 teaspoon coarse salt

Steps:

  • Heat oil in a large skillet over medium heat. Add sweet potatoes; cook, turning occasionally, 3 minutes. Add garlic; cook, stirring constantly, 1 minute. Add wine and stock; simmer, stirring occasionally, until almost all liquid has evaporated, about 20 minutes. Add brown sugar and salt; cook, carefully turning potatoes to brown both sides, about 20 minutes. Transfer caramelized sweet potatoes to a plate. Let cool slightly.

2 tablespoons butter
2 medium sweet potatoes, peeled, cut lengthwise, and each cut into 8 1/2-inch wedges
3 ounces freshly squeezed orange juice
1/4 cup light-brown sugar
2 tablespoons granulated sugar
Salt and freshly ground pepper
Zest of 1 orange

Steps:

  • In a large saute pan over medium-high heat, melt butter. Add potato wedges to the pan, and stir until coated with butter. Add 1 cup water and the orange juice; cover, and cook until potatoes are fork-tender, about 5 minutes.
  • Remove cover, reduce heat to medium, and continue cooking, tossing occasionally, until most of the liquid has evaporated, 3 to 4 minutes more.
  • Combine sugars, and sprinkle over potatoes; toss until coated. Continue cooking until the sugar starts to caramelize and potatoes have a brown glaze, 5 to 6 minutes, tossing occasionally to prevent potatoes from burning. When caramelized sugar bubbles and browns around the edges, remove potatoes from pan. Season with salt and pepper, garnish with orange zest, and serve immediately.

½ cup butter

½ cup water

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.
  • Peel, and slice sweet potatoes lengthwise into 1/2 inch slices. Place in a 9x13 inch baking dish.

3/4 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
1 cup chopped walnuts (optional) or 1 cup pecans (optional)

Steps:

  • Preheat oven to 375°F.
  • Butter 2-quart casserole dish.
  • In small saucepan over med-high heat, combine butter, honey, whisky, and sugar. Bring to simmer, whisking until butter and sugar are melted, reduce the heat to med-low and simmer, uncovered for 10 minutes.
  • In large bowl (or ziplock bag if you let the butter mix cool a bit), toss potatoes with butter mixture, salt, and pepper. Transfer to prepared dish and bake, tossing occasionally, until tender and glazed, about 45 minutes. Serve warm.
