This recipe freezes well and is easily halved. Serve with shredded Cheddar cheese and garlic croutons.

½ pound bacon
1 (2 pound) package frozen hash brown potatoes
2 (16 ounce) packages frozen O'Brien hash brown potatoes
8 cubes chicken bouillon
1 teaspoon celery seed
½ teaspoon ground black pepper
8 (10.75 ounce) cans cream of chicken soup, undiluted
2 quarts milk

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving drippings in the skillet. Chop bacon into smaller pieces.
  • Combine hash brown potatoes, O'Brien hash brown potatoes, chicken bouillon, celery seed, and black pepper in a large pot over medium heat; bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, 20 to 30 minutes.
  • Puree potatoes with an immersion blender until smooth.
  • Pour reserved bacon drippings, cream of chicken soup, and milk into the pot. Simmer until heated through, about 10 minutes. Sprinkle chopped bacon on top.

2 green onions, chopped
2 teaspoons canola oil
1 package (28 ounces) frozen O'Brien potatoes, thawed
2 cups 2% milk
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
6 turkey bacon strips, diced and cooked
1/2 cup shredded cheddar cheese

Steps:

  • In a small skillet, saute onions in oil until tender. In a 5-qt. slow cooker, combine the potatoes, milk, soup and onions., Cover and cook on low for 6-7 hours or until heated through. Top each serving with 2 tablespoons bacon and 1 tablespoon cheese.

2 medium Yukon gold potatoes (about 10 ounces), scrubbed
1 large parsnip, (about 5 ounces)
2 scallions (white and green), chopped
2 tablespoons minced flat-leaf parsley
1/2 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil

Steps:

  • Grate the potatoes, with their skin into a large bowl. Peel and grate the parsnip; add to the potatoes. Toss the vegetables with the scallions, parsley and season with the salt and pepper, to taste.
  • Heat a large (12-inch) nonstick skillet over medium heat and brush the skillet with about half the oil. Add the potato mixture and form into an even cake by pressing lightly with a spatula. Cook, shaking the pan periodically to prevent sticking, until the hash browns are crisp and brown, about 10 minutes.
  • Remove the pan from the heat; place a flat plate over the top of the skillet. Carefully flip the pan so the potato cake goes onto the plate. Brush the skillet with the remaining olive oil and then side the hash browns back into the skillet. Cook until browned and crisp, about 10 minutes more. Slide out of the skillet onto a heated serving plate. Cut into wedges to serve.

3 (14 ounce) cans chicken broth
1 (32 ounce) bag frozen hash browns
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups milk
1 lb Velveeta cheese
bacon bits (optional)

Steps:

  • Saute onion in butter or oil until transparent.
  • Add broth, bring to boil.
  • Add hash browns, bring to boil.
  • Add soups (don't dilute) and milk, bring to boil.
  • Add Cheese and Heat until cheese melts. Optional, serve with bacon bits on top.

1 small onion, chopped
1/2 teaspoon salt

2 lbs frozen southern style hash brown potatoes, thawed
2 tablespoons melted butter
1 (10 3/4 ounce) can condensed cream of chicken soup
8 ounces fat free sour cream or 8 ounces light sour cream
1 cup chopped onion
2 cups shredded reduced-fat sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon ground black pepper
2 cups crushed corn flakes cereal (just use your hands to crush the flakes into a 2 cup measure)
canola oil cooking spray

Steps:

  • Preheat oven to 350-degrees.
  • Coat a 9 x 13 x 2-inch baking dish with canola cooking spray.
  • Add hashbrowns, butter, broth, condensed cream of chicken soup, sour cream, chopped onion, cheese, salt and pepper to a large bowl and stir to blend well.
  • Place mixture in prepared baking dish.
  • Sprinkle Cornflakes over the top, press gently over the top of the Cornflakes.
  • Generously coat the Cornflakes with canola cooking spray.
  • Bake covered in oven for 30 minutes.
  • Remove cover and bake an additional 10-15 minutes or until casserole is lightly brown on top and bubbling.
