CRISPY CHICKEN AND BUTTERMILK WAFFLES WITH SRIRACHA HONEY
Crispy baked chicken nuggets paired with buttermilk waffles and topped with a quick and easy homemade sriracha honey sauce!

Steps:
- Preheat oven to 400
- Line a baking sheet with parchment paper
- Sprinkle the cut up chicken with 1/4 tsp paprika, 1/2 tsp salt and 1/4 tsp onion powder, toss around
- Crunch up the sun chips and add 1/2 tsp paprika in a large bowl
- In a bowl whisk together the egg and 2 tbsp of buttermilk until combined
- Add a handful of chicken to the wet batter, shake off the excess and then toss it into sun chips, toss this around to coat all the sides
- Place them on the baking sheet, not touching
- Hold off on putting them in the oven until the waffle batter is done
- In a bowl combine the flour, salt, baking soda and baking powder, stir
- In a separate bowl combine the butter, buttermilk and eggs, whisking together (if you add cold milk and eggs to warm butter the butter will sort of seize up and you don't want this)
- Make a well in the flour mixture and pour in the liquid, mix just until combine, lumps are okay
- Let it sit 10 minutes, give it another stir and start making your waffles in a waffle maker
- Now put the chicken in the oven and bake for 20 minutes
- Meanwhile mix up some sriracha honey, you only need a little squeeze of sriracha
- Serve a buttermilk waffle with the crispy chicken nuggets on top drizzled with the sriracha honey

SRIRACHA CHICKEN AND WAFFLES
There are few American foods more iconic than chicken and waffles, but the appeal is universal no matter where you come from. Our version uses panko, which is a white breadcrumb that is more jagged (like icicles) than round and makes a super crunchy crust.

Steps:
- For the sriracha chicken: Stir the buttermilk, sriracha, 1 1/2 teaspoons seasoned salt and 1/2 teaspoon pepper together in a small baking dish or medium bowl. Set aside.
- Place a 12-inch-long piece of plastic wrap over a cutting board. Place a chicken breast on the plastic, drizzle with some olive oil and cover with another piece of plastic wrap. Using a mallet, small frying pan or rolling pin, pound the breast until it is about 1/2-inch-thick. Sprinkle with seasoned salt and pepper to taste.
- Place the pounded breast in the buttermilk brine. Repeat with the remaining breast. Cover the dish or bowl with plastic wrap and soak for 4 hours to overnight.
- For the light and crispy honey waffles: Preheat a waffle iron to approximately 400 degrees F or its highest setting.
- In a medium bowl, whisk the all-purpose flour, cake flour, baking powder and salt together. In a small bowl, whisk the egg until golden and fluffy, about 1 minute. Whisk in the milk, oil, honey and vanilla.
- When the waffle iron is hot, pour the wet ingredients into the dry ingredients and stir until the ingredients just come together as a batter, about 30 seconds; it's okay to have tiny pockets of flour.
- Spray the preheated waffle iron with cooking spray. Using a small cup measure, pour in the correct amount of batter onto the waffle iron. Cook until golden brown. If not serving immediately, you can hold the waffles in a 200-degree-F oven on a rack.
- Meanwhile, pour 3 to 4 inches of frying oil into a heavy medium pot. Heat the oil until it registers 365 degrees F on a deep-fry thermometer.
- In a separate medium bowl or baking dish, combine the breadcrumbs, flour and the remaining 1 1/2 teaspoons seasoned salt and 1/2 teaspoon pepper and stir until combined.
- When ready to fry, remove a chicken breast from the buttermilk but do not shake off the excess buttermilk. Coat the breast in the breadcrumb mixture and press it firmly onto the chicken. Shake off excess. Carefully place the chicken in the oil and repeat with the remaining breast. Fry until cooked though and an instant-read thermometer inserted into a breast registers 160 degrees F, 3 to 5 minutes. Transfer the chicken to a wire rack-lined baking sheet to drain.
- To serve, place the fried chicken on top of the waffles. Serve with softened butter, maple syrup and sriracha.
FRIED CHICKEN AND BUTTERMILK WAFFLES
Steps:
- Chicken: Heat enough vegetable oil to come about 1-inch up the sides of a large, deep cast iron skillet to 350 degrees F.
- Rinse the chicken under cold running water and do not dry; leave wet. In a large sealable bag, combine the flour with the Essence. Add the chicken pieces 1 at a time, seal, and shake to coat evenly. Remove and place on a wire rack over a baking sheet and let sit for 5 to 10 minutes.
- Carefully add the chicken to the hot oil and fry, turning once, until golden brown and the meat is cooked through, 20 to 30 minutes (the thighs and legs will take longest to cook). Remove and drain on paper towels. Remove the pan from the heat and with a slotted spoon, scoop out any browned bits remaining in the pan and drain on paper towels.
- Waffles: Preheat a waffle iron and lightly grease. Into a large bowl, sift the dry ingredients together.
- In a clean bowl, beat the eggs. Add the butter and buttermilk and beat to combine. Add the wet ingredients to the dry ingredients, and mix well.
- Pour the batter into the hot waffle iron and cook until golden brown and lightly crisp. Remove and if desired, top with a slice of butter, and serve with the chicken and maple syrup.
- Combine all ingredients thoroughly and store in an airtight jar or container.

CRISPY BUTTERMILK WAFFLES
These waffles are AMAZING! They are so crispy, you won't believe it. TIP: Cool leftovers, and freeze. To reheat, put waffles directly on oven rack at 350 degrees F., and bake for 5-7 minutes.

- Prepare the batter and refrigerate at least 8 hours before baking--all day to have waffles for dinner (try over under ice cream), OR overnight to have them for breakfast.
- Make the batter in the morning OR evening:.
- Combine and whisk together the dry ingredients in a large bowl: flour, yeast, sugar and salt. Combine the melted butter and milk (or buttermilk). Add the mixture to the dry ingredients. Whisk eggs and vanilla together in a separate small bowl. Add the egg-vanilla mixture to the other mixture, and whisk until well-combined. Cover with plastic wrap and stick in the fridge until tomorrow morning.
- That evening OR following morning:.
- Prepare waffle iron as usual. Stir the batter to deflate it (it should be puffy and frothy). Add to waffle iron the same way you would other batter, keeping in mind that this batter will rise more than batters that use baking powder instead of yeast.
- Makes 4-6 large round waffles.
- NOTE: This recipe is easily made with milk OR buttermilk.

- On a cutting board, slice each chicken breast into strips.
- In a bowl, combine the buttermilk and Sriracha and mix to combine. Add the chicken strips and submerge in the buttermilk mixture. Cover with plastic wrap. Or toss all of the ingredients into a resealable bag. Refrigerate for at least 2 hours.
- Preheat oven to 425˚F (220˚C).
- In a shallow dish, add the Panko, flour, salt, pepper, paprika, and seasoning salt and mix to combine.
- Dip the chicken strips in the panko mixture, ensuring they are fully coated.
- Line a rimmed baking sheet with parchment paper and brush with canola oil.
- Transfer the chicken to the baking sheet, and bake for 10 minutes. Flip the chicken over, and bake for an additional 10 minutes. If desired, broil for 2-3 minutes to crisp up at the end.
- Transfer the chicken to a paper towel-lined plate to remove extra grease.
- Enjoy!

- To prepare the chicken, season the chicken thighs with salt and pepper add to the crockpot. Whisk together the honey, Sriracha, and soy sauce and pour over the chicken. Cook on low 8-10 hours. Shred the meat using two forks. Set aside.
- To make the Buttermilk Ranch, simply combine the listed ingredients. Store in the refrigerator until use.
- To make the Buttermilk Waffles, whisk together the ingredients listed in the order given. Cook to golden brown in the waffle iron.
