Chicken hashbrown casserole recipe is the perfect casserole to make on busy nights. It's loaded with chicken, hashbrowns and yummy cheese. The entire family will love this Cheesy chicken potato casserole recipe.

20 oz bag of frozen hashbrowns
2 cups of shredded cheddar cheese
1 teaspoon of salt
1 teaspoon of pepper
2 cups of sour cream
10.5 oz can of cream of chicken soup or one batch of homemade cream of chicken soup
1/2 cup of milk
1 lb of cooked chicken (shredded)
2 cups of corn flakes (crushed)
4 tablespoons of butter (melted)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl mix together the salt, pepper, sour cream, cream of chicken soup and milk. Then stir in the chicken, cheese and hashbrowns.
  • Place into a lightly greased 9x13 baking pan.
  • In a small mixing bowl, mix together the crushed cornflakes with the melted butter. Sprinkle over the casserole.
  • Bake for 1 hour or until golden brown.

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon pepper
4 cups diced cooked chicken
1 can (4 ounces) mushroom stems and pieces, drained
1 cup sour cream
2 cups chicken broth or stock
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 teaspoons chicken bouillon granules
2 tablespoons finely chopped onion
2 tablespoons finely chopped sweet red pepper
1 garlic clove, minced
Paprika
1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°. Spread potatoes in an ungreased 13-in. x 9-in. baking dish. Sprinkle with salt and pepper. Sprinkle chicken and mushrooms over the top. Combine the sour cream, broth, soup, bouillon, onion, red pepper and garlic; pour over mushrooms. , Sprinkle with paprika and almonds. Bake, uncovered, until heated through, 50-60 minutes.

1 stick salted butter, divided
1 small onion, diced
3 cloves garlic, minced
2 (10.75 ounce) cans condensed cream of chicken soup
1 (16 ounce) container sour cream
1 teaspoon ground black pepper
1 (2 pound) package frozen hash brown potatoes, thawed
3 cups shredded Cheddar cheese
1 ½ cups crushed cornflakes, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt 4 tablespoons butter in a skillet over medium heat. Add onion and cook until starting to brown, 3 to 5 minutes. Add garlic and cook for 2 minutes more.
  • Transfer mixture to a large bowl; add cans of soup, sour cream, and pepper. Mix to combine. Stir in hash browns and 2 1/2 cups Cheddar cheese until combined. Place in a 9x13-inch casserole dish and top with remaining cheese.
  • Melt remaining 4 tablespoons butter and combine with cornflakes. Place on top of casserole.
  • Bake in the preheated oven until bubbly around the edges and cornflakes are lightly browned, about 45 minutes.

1 lb Russet potatoes
6 tablespoons vegetable oil
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Wash and peel potatoes, then shredd on the large hole side of the grater.
  • Place them in a colander and rinse under cold tap water.
  • Drain and squeeze out as much moisture as possible using a kitchen towel or paper towels. Season potatoes with salt and pepper.
  • Heat up half of the oil in a large skillet.
  • Place half of the shredded potatoes in the skillet and spread thin.
  • Cook undisturbed for 3 to 4 minutes over medium heat.
  • Check if the bottom is golden brown and flip. Cook another 3 to 4 minutes.
  • Remove from pan and repeat with remaining potatoes.
  • Serve garnished with chopped chives or parsley and more salt and pepper.

Simmer until all of the vegetables are just crisp-tender and the liquid is mostly evaporated, about 3 minutes. Stir in the peas and the corn. Transfer the entire mixture to a 13x9 inch pan. Return the skillet to the stove.
  • Heat another 1 tablespoon olive oil in the pan over medium-high heat. Add the mushrooms and rosemary and sauté until the mushrooms are golden brown, 5 minutes. Add them to the vegetable mixture and return the pan to the stove.
  • Melt the butter in the pan over medium heat. Whisk in the flour and whisk occasionally until it turns blond in color, about 3 minutes.
