This salad is fast and easy to prepare but does not hold well and is best if eaten immediately!

½ large head cabbage, coarsely chopped
1 (3 ounce) package ramen noodles, crushed
½ cup sunflower seeds
½ cup vegetable oil
3 tablespoons white sugar
3 tablespoons distilled white vinegar

Steps:

  • Toss together the cabbage, noodles and sunflower seeds or almonds.
  • Whisk together the ramen flavor packet, oil, sugar and vinegar. Pour over cabbage mixture and toss evenly to coat.

1 1/2 cups frozen baby sweet peas (from 1-lb bag)
4 1/2 cups shredded red or green cabbage (1 medium head)
5 medium green onions, thinly sliced including tops (about 1/3 cup)
1 can (11 oz) whole kernel sweet corn, drained
1 jar (4.5 oz) sliced mushrooms, undrained
1 package (3 oz) instant Oriental noodles with chicken-flavor seasoning packet
1/4 cup tarragon vinegar
1/4 cup vegetable oil
3 tablespoons sugar
1/2 teaspoon pepper
1/2 cup slivered almonds, toasted*
2 tablespoons sesame seed, toasted**

Steps:

  • Cook peas as directed on bag. Drain; cool 10 minutes. In large bowl, mix cooled peas and remaining salad ingredients.
  • In small bowl, mix contents of seasoning packet from noodles, vinegar, oil, sugar and pepper until well blended. Pour dressing over salad; toss to coat. Refrigerate until chilled, at least 2 hours.
  • Break noodles into 3/4-inch pieces. Before serving, stir noodles, almonds and sesame seed into salad. Garnish with leaf of red cabbage, if desired.

1 large head napa cabbage, shredded
½ cup olive oil
1 (3 ounce) package ramen noodles, crushed
½ cup sesame seeds
3 ounces blanched slivered almonds
1 cup canola oil
2 teaspoons soy sauce
⅔ cup white sugar
2 tablespoons balsamic vinegar
6 tablespoons white wine vinegar

Steps:

  • Place the cabbage in a large bowl, cover, and place in the refrigerator to chill for 30 minutes. Heat the olive oil in a skillet over medium heat, and cook and stir the ramen noodles, sesame seeds, almonds until lightly browned; set aside to cool.
  • Prepare the dressing by mixing the canola oil, soy sauce, sugar, balsamic and white vinegars in a blender until smooth.
  • About 30 minutes before serving, toss the dressing and cabbage mixture together; chill. Just before serving, toss the noodle mixture with the cabbage mixture.

1 cabbage, shredded
1 bunch shallot, chopped (green onions)
1 Maggi 2-minute noodles (discard flavourings and crush)
1/2 cup sesame seeds
1 cup slivered almonds
1/3 cup sunflower seeds
2/3 cup olive oil
2 tablespoons soy sauce
1/2 cup sugar
1/3 cup vinegar

Steps:

  • To make dressing mix all ingredients together.
  • Heat some oil in a frying pan and brown noodles, seeds and nuts.
  • Just before serving toss nut mixture through cabbage and shallots.
  • Pour dressing over and serve immediately.

100 grams / 3.5 oz Chang's Original Fried Noodles
1/4 cup White Vinegar
1/4 cup Caster Sugar
1 tablespoon Soy Sauce
2 teaspoon Sesame Oil
1/2 cup Olive Oil

Steps:

  • Place dressing ingredients into a small saucepan. Stir over low heat until the sugar dissolves. Remove from heat and allow to cool.
  • Combine the shredded cabbage, chopped green onions and pepitas in a large salad bowl. Add dressing and noodles and lightly toss to combine. Serve immediately.

I wanted an Asian-style cabbage salad with crispy noodles and lots of herbs, but wanted to avoid the salt and oil of most of the recipes on the site. I modified the lovely sesame-cabbage salad (recipe #55001) by omitting the red cabbage, and adding the crispy noodles just before serving.

1 telegraph cucumber, peeled and seeded
1 medium red onion, finely sliced
4 cups finely shredded Chinese cabbage
1 red capsicum, finely shredded
1/4 cup chopped fresh coriander leaves, only
1/4 cup finely chopped flat-leaf Italian parsley, leaves only
2 tablespoons roasted sesame seeds
100 g chang's original fried Chinese noodles
sesame dressing
1/2 cup mirin
1 tablespoon brown sugar
1 tablespoon sesame oil
1/4 cup low sodium soy sauce
1 small fresh chili pepper, finely sliced (omit seeds for less heat)
1 teaspoon grated fresh ginger

Steps:

  • In a bowl, mix finely sliced cucumber, onion and all the Sesame dressing ingredients. Cover and leave in the fridge - you can prepare this up to the night before.
  • Shred cabbage into a large bowl, and mix through capsicum, parsley and coriander leaves. If this is dry, it will keep loosely wrapped in the fridge for up to 48 hours.
  • Just before serving pour marinated cucumber mixture over the top. Add the noodles and mix well. Sprinkle with toasted sesame seeds.
