1 teaspoon dry mustard
1 Tablespoon ground cumin

¼ teaspoon cayenne pepper
salt and pepper
1 stick butter (sliced)
12 chicken drumsticks (skin on, bone in )
BBQ Sauce (or Low Carb BBQ Sauce, to taste)

Steps:

  • Pour chicken broth into the bottom of a 6 quart instant pot or electric pressure cooker and place pot rack on top.
  • Place all the seasonings and brown sugar into a gallon sized baggie and shake well.
  • In batches, throw chicken legs in the bag and toss to season well before placing into your instant pot rack.
  • Top with butter and seal lid-- making sure that your seal valve is set to seal.
  • Cook on Poultry or Manual Setting on High Pressure for 22 minutes.
  • Naturally release with the warming feature turned off for 15 minutes after cooking and then flip to quick release.
  • Place drumsticks on a lined cookie sheet and brush with BBQ Sauce.
  • Broil for 2-5 minutes (watching closely) on each side.

1 tablespoon plain or smoked paprika
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon thyme leaves
1 teaspoon white pepper
1/2 teaspoon garlic powder

4 pounds chicken drumsticks , skinned
1 onion, chopped
1/3 cup honey
1/4 cup brown sugar
2 tablespoons ketchup

Steps:

  • Gather the ingredients.
  • Rub spice mixture into chicken, skin side and bone side, making sure it is evenly distributed and pressed down deep into chicken.
  • Cover and cook on low for 8 to 12 hours until very tender. If you have a newer crock pot, the chicken will most likely be done in 7 to 8 hours. Check with a food thermometer (an instant read thermometer is great)-the temperature should be 165 F. Serve immediately with lots of napkins.

4 pounds of drumsticks and/or wings
½ Cup honey
½ Cup light brown sugar
⅓ Cup balsamic vinegar
⅓ Cup low sodium soy sauce or gluten-free tamari sauce
3 tsp minced garlic
2 tsp ground ginger

Steps:

  • In a large bowl, whisk together honey, brown sugar, vinegar, soy sauce, garlic and ginger to create sauce
  • Add drumsticks/wings to a 5 qt or larger crockpot.
  • Pour the honey mix onto the drumsticks/wings and mix well.
  • Cook on high in the slow cooker for 4 hours. After 2 hours give the drumsticks a toss to coat in the sauce again. Cover and continue cooking.
  • Once fully cooked, remove drumstick/wings from the crockpot and place on a baking pan that is lined with foil and has been sprayed with cooking spray.
  • Broil for 2 minutes or until browned.
  • Remove the drumsticks/wings from the oven and turn them to the other side.
  • Broil the other side for 2 minutes or until browned. Watch very carefully they may not need as long depending on your oven. This step is optional but gives the chicken a better texture on the outside.
  • Serve. This is great with some steamed rice!Gluten Free

1 1/2 cups bbq sauce (divided)

Steps:

  • In a small bowl combine the paprika, cumin, and garlic salt. Stir to combine.
  • Sprinkle over the drum sticks and rub all over chicken skin.
  • Place chicken drumsticks in slow cooker.
  • Pour 1 cup of barbeque sauce over the chicken drum sticks.
  • Cover and cook on low 4-6 hours until the chicken is tender. (You can cook on high if you prefer but reduce the hours on high.)
  • When finished place the chicken on a cookie sheet lined with foil and cooking spray.
  • Brush half of the bbq sauce on the drum sticks. Broil for 1-5 minutes until it begins to brown.

6 -8 chicken drumsticks
6 -8 slices pancetta
cooking spray
1/2 teaspoon fresh grated gingerroot
2 tablespoons cornstarch
1/2 cup pomegranate juice
1/2 cup dried mango
1 tablespoon red pepper flakes
1/4 cup apple cider vinegar
2 tablespoons liquid smoke
2 tablespoons lemon juice
1/2 cup honey

Steps:

  • Spray cooking spray in crock pot sides and bottom.
  • Wrap each drumstick in a slice of pancetta. Add drumsticks to the crock pot, seam side of pancetta down in one layer. Add ginger root.
  • In a bowl, stir all ingredients except cornstarch.
  • Cook on low 6-8 hours. Chicken should fall off the bone and be cooked through. There should be no pink color.

1/2 cup light brown sugar
1/3 cup balsamic vinegar
1/3 cup low sodium soy sauce
6 garlic cloves, minced
2 tablespoons fresh grated ginger
2 teaspoons sriracha (or other hot pepper sauce)
black pepper
10 chicken drumsticks, skin removed and discarded
cilantro
toasted sesame seeds

Steps:

  • In a sauce pan add the honey, brown sugar, balsamic vinegar, soy sauce, garlic, ginger, sriracha and season to taste with black pepper. Bring to a boil, then lower the temperature and simmer for 5 minutes, until the sugars have dissolved and the sauce is beginning to thicken. Remove from heat and allow to cool for a few minutes.
  • In the bowl of a slow cooker, add the skinned chicken drumsticks and pour the sauce over. Move the chicken around a bit with tongs to coat completely. Put the lid on and cook on high for 4 hours, flipping chicken a couple of times during the cooking process. Just before serving, sprinkle with torn cilantro leaves and sesame seeds.
  • Serve with steamed white rice and your favorite veggie and devour!
