This slow cooker tacos al pastor recipe is quick and easy to prepare, full of amazing flavor, and your slow cooker does all the work for you!

1 (5-pound) boneless pork shoulder roast (Boston butt), extra fat trimmed off
1 (12-oz.) bottle of beer (I used Modelo Negra, or use chicken stock if making this gluten-free)
2 chipotles in adobo sauce
1 fresh pineapple, peeled and cored, then roughly chopped
1/2 cup chopped red onion
3 tablespoons chili powder (not cayenne)
2 tablespoons fresh lime juice
2 tablespoons white vinegar
2 teaspoons kosher salt
1 teaspoon ground cumin
1/2 teaspoon black pepper
corn tortillas, for serving
optional toppings: crumbled goat cheese, (extra) diced fresh pineapple, chopped fresh cilantro leaves, chopped red onions, diced avocado, thinly-sliced radishes

Steps:

  • Cut the pork shoulder into 2-inch cubes. Add the pork to the bowl of the slow cooker.
  • Add the chipotles in adobo, pineapple, red onion, chili powder, lime juice, white vinegar, salt, cumin and black pepper to a blender or food processor. Puree until the mixture is completely smooth, about 30-60 seconds. Stir in the beer until it is evenly combined. Then pour the mixture on top of the pork, and toss until the pork is evenly coated.
  • Cook on low for 8-10 hours, or on high for 4-5 hours, until the pork is completely tender and shreds easily with a fork. Use two forks to shred the pork, then toss it in the remaining juices.
  • Serve warm on tortillas, garnished with optional toppings.

■1 onion, sliced
■2 lb pork tenderloin
■4 cloves garlic, minced
■1 20oz can crushed pineapple, with juice
■Chipotle peppers in Adobo, up to 6 whole peppers
■1.5 tbsp apple cider vinegar
■1/2 cup orange juice
■1 tsp cumin
■1 tsp dried oregano
■1 tsp chili powder
■1 tsp salt
■1 cup chopped pineapple
■1/4 cup chopped cilantro
■1/2 cup chopped onion
■1 lime, juices
■Corn tortillas

Steps:

  • 1.Place the first 11 ingredients in the slow cooker. Cook for 6 to 8 hours on low. Please note, you can go easy on the chipotle peppers if you aren't into spice. They do pack a lot of punch, so if you want a hint of spice, you can put in 2 or 3 and still get the flavor. Do not chop them up, just put the peppers in whole so you can fish them out. 2.Shred pork in the slow cooker. Combine the chopped pineapple, cilantro, onions and lime juice to make salsa. Warm the tortillas. On the tortilla, put the shredded pork and top with salsa.

  • Slow cook: Into a large slow cooker, add the pork, the marinade, and the remaining 2 cups of diced pineapples. Mix to combine. Cook on HIGH for 4 hours or LOW for 8 hours. 20 minutes before it’s done, transfer the meat to a large plate and shred with a fork. Return the meat to the slow cooker to finish cooking, until the cooking time is up.
