CRUNCHY, CRISPY AVOCADO FRIES
We thought we had explored every way to enjoy the buttery-rich yumminess of avocados. But then we swooned over a photo of the breaded avocado fries in chef Hans Röckenwagner's latest cookbook, Das Cookbook. Röckenwagner, known for applying German cooking techniques to Californian cuisine, features these delightful snacks on the menus at two of his Los Angeles-based cafés. Inspired by the photo, we created our own lighter version, and the results were even more delicious than we'd imagined: When you coat creamy avocado wedges with a crisp breadcrumb crust, that contrast of textures makes the avocado seem doubly silky-rich. Be sure to follow Röckenwagner's advice for success and start with firm, ripe avocados; cooking won't add flavor, so the avocado has to be perfect from the start.

Steps:
- Preheat broiler. Place a baking sheet in oven while broiler preheats.
- Combine flour, salt, and pepper in a shallow dish. Place breadcrumbs in a shallow dish. Place egg whites in a small bowl, and whisk until foamy.
- Halve avocados, remove pits, and cut each half into 6 wedges. Pull off peels.
- Dredge avocado wedges in flour, dip in egg white, and then dredge in breadcrumbs. Remove baking sheet from oven; coat with cooking spray. Place avocado slices on baking sheet; coat avocados with cooking spray.
- Broil 5 minutes or until brown on top. Turn and broil 2 more minutes. Remove and serve with lemon wedges.

CRISPY BAKED AVOCADO FRIES
Up your appetizer or snack game with this quick and easy recipe for crispy avocado fries baked to golden brown perfection.

- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a shallow dish, whisk together the flour with the Tajin seasoning (optional). In a second shallow dish, whisk together the eggs. Add the breadcrumbs to a third shallow dish.
- Pit, peel and slice the avocados into 1/2-inch wedges. Squeeze the lime juice on top of the avocado slices to coat them.
- Dredge the avocado slices in the flour mixture, shaking off any excess, then dip them in the eggs and then into the breadcrumbs, coating the avocado slices on all sides.
- Arrange the breaded avocado slices on the baking sheet then spray them with cooking spray.
- Bake the avocado fries for 10 minutes, flip them once and spray them again with the cooking spray then bake them an additional 10 to 15 minutes until they're golden brown.
- Serve the fries with your choice of dipping sauces.

- Preheat air fryer to 400 degrees F (200 degrees C).
- Mix flour, pepper, and salt together in a shallow bowl. Beat together egg and water in a second shallow bowl. Place panko in a third shallow bowl.
- Dredge an avocado slice through the flour, shaking off excess. Dip into egg and allow excess to drop off. Finally press slice into panko so both sides are covered. Set on a plate and repeat with the remaining slices.
- Spray avocado slices generously with cooking spray and arrange in the bowl of the air fryer, sprayed-side down. Spray the top side of the avocado slices as well.
- Cook in the preheated air fryer for 4 minutes. Turn avocado slices over and cook until golden, about 3 more minutes.

- Heat oven to 400°. In a bowl, combine 3/4 cup panko breadcrumbs, 2 tablespoons ground flax and 1 teaspoon mild chili powder. In another bowl, whisk 1 egg. Cut 2 peeled avocados into 16 wedges, dip wedges in egg, press into breadcrumb mixture and transfer to a baking sheet. Coat with vegetable oil cooking spray. Bake until outside is crispy, 10 to 12 minutes. Season with salt and drizzle with hot sauce.
AVOCADO FRIES
This recipe calls for firm-ripe medium Hass avocados because they have to be able to stand up to frying. In the end, the fries are crunchy and creamy, the best of both worlds.

- Heat oven to 200 degrees. In a medium saucepan, heat 1 1/2 inches of oil to 375 degrees.
- Mix flour with salt in a shallow plate. Put eggs and panko in separate plates. Dip avocado wedges in flour, shaking off excess. Dip in egg, then in panko to coat. Set on 2 plates in single layers.
- Fry 1/4 of the avocado wedges at a time until deep golden, 30 to 60 seconds. Transfer to plate lined with paper towels. Keep warm in the oven while cooking remainder. Sprinkle with salt to taste.
