Here's the very best cheese toast: you won't believe the flavor! This easy recipe is a great fast meal or snack: it takes only 5 minutes to make.

1 large slice bread (artisan, no knead, whole wheat, etc)
1/2 tablespoon mayonnaise
1/2 teaspoon Dijon mustard
1 pinch kosher salt
1/3 cup shredded cheese (we used a mix of mozzarella, sharp cheddar, and Parmesan)
1 pinch dried oregano

Steps:

  • Preheat a broiler. Place the bread on a baking sheet and broil it 1 to 2 minutes per side, until lightly toasted.
  • Spread the bread with a thin coating of mayonnaise, then Dijon mustard. Top with 1 pinch salt. Add the shredded cheese and sprinkle with oregano.
  • Place the toast bake on the baking sheet. Broil again for about 1 to 2 minutes until the cheese is melted. Enjoy!

This is an easy Taste of Home recipe that my family really likes. I love the zing from the cayenne and will sometimes use pepper jack cheese if I want a little more heat. I like to serve this with a bowl of soup.

1/2 cup olive oil
1 teaspoon dried thyme
1/4-1/2 teaspoon cayenne pepper, to taste
2 cups shredded Mexican blend cheese

Steps:

  • Slice the bread about 1/2" thick and place on an ungreased baking sheet.
  • Combine the oil, thyme and cayenne in a bowl; whisk to blend and brush on the bread slices.
  • Sprinkle with cheese and bake at 300 degrees until the bread is golden brown and the cheese is melted and bubbly.
  • Serve immediately.

2 cups grated Monterey Jack
1/2 cup mayonnaise
1/2 cup grated Parmesan
1/2 stick (4 tablespoons) butter, softened
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon seasoned salt
1 crusty French loaf

Steps:

  • In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
  • Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
  • The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.

1/4 cup granulated sugar
8 slices whole wheat bread
2 eggs
2 Tbsp. milk
2-1/2 cups corn flakes, crushed
2 cups sliced fresh fruit (bananas and/or strawberries)
1 Tbsp. powdered sugar
1/2 cup maple-flavored or pancake syrup

Steps:

  • Heat oven to 350°F.
  • Mix cream cheese and granulated sugar until blended. Spread each of 4 bread slices with 2 Tbsp. cream cheese mixture. Cover with remaining bread slices to make 4 sandwiches.
  • Spray baking sheet with cooking spray. Whisk eggs and milk in shallow dish until blended. Place crushed cereal in separate shallow dish. Dip sandwiches, 1 at a time, into egg mixture, then cereal, turning to evenly coat both sides of each sandwich with each ingredient. Place on prepared baking sheet. Press cereal gently into sandwiches to secure.
  • Bake 20 min. or until golden brown. Cut each sandwich diagonally in half; top with fruit. Sprinkle with powdered sugar. Serve with syrup.

This is an excellent way to use up bread that's no longer fresh-using day-old bread actually enhances the flavor, making the toasts all the crunchier.

1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1/2 cup extra-virgin olive oil
1 loaf olive bread, (approximately 5 by 11 inches), cut lengthwise into 1/4-inch-thick slices
4 ounces Parmesan or Gruyere cheese, grated (about 1 cup)

Steps:

  • Preheat oven to 300 degrees. Line two baking sheets with Silpats (French nonstick baking mats) and cooling racks.
  • In a small bowl, stir thyme and cayenne pepper into oil. Place bread on racks in one layer. Brush with oil. Sprinkle cheese evenly over bread.
  • Bake until golden and crunchy, 25 to 30 minutes. Cool on racks. Store in an airtight container for up to 1 week.

fresh goat cheese, 3 oz (90 g), at room temperature
walnuts, 1/4 cup (1 oz/30 g) coarsely chopped
roasted walnut oil, 1 tsp
sea salt and freshly cracked black pepper
honey, for drizzling
fresh thyme leaves, 1/2 tsp

Steps:

  • Preheat the oven or toaster oven to 375°F (190°C). Arrange the toasts on a small rimmed baking sheet. Spread the toast slices evenly with the goat 1 cheese, and sprinkle with the walnuts, dividing them evenly. Drizzle 1/4 tsp of the walnut oil over each toast. Bake until the walnuts are toasted and the cheese is warm, about 5 minutes.
  • Transfer the toasts to plates and season with salt and pepper. Drizzle each toast with honey, then sprinkle with the thyme leaves and serve.
