Cajun seasoning adds flavor, and a crunchy coating helps keep these chicken fingers moist. This recipe makes a great appetizer to serve at any Halloween gathering. It'll "grab" the attention of kids of all ages. -Mary Ann Dell, Phoenixville, Pennsylvania

1 small sweet yellow pepper
2 tablespoons all-purpose flour
2 teaspoons plus 1 tablespoon Cajun seasoning, divided
3 large eggs, lightly beaten
1-1/2 cups cornflake crumbs
2 tablespoons chopped green onion
1 pound boneless skinless chicken breasts, cut lengthwise into 3/4-inch strips
Barbecue sauce

Steps:

  • Cut yellow pepper into 15 triangles; set aside. In a large resealable plastic bag, combine flour and 2 teaspoons Cajun seasoning. Place eggs in a shallow bowl. In another shallow bowl, combine the cornflake crumbs, green onion and remaining Cajun seasoning. , Place a few pieces of chicken in bag; seal and shake to coat. Dip in eggs, then in crumb mixture. Place on a greased baking sheet. Repeat. Bake at 350° for 15-20 minutes or until juices run clear. , Cut a small slit into one end of each chicken strip; insert a pepper triangle into each. Serve with barbecue sauce.

3/4 head green cabbage, finely chopped
8 green onions, finely chopped
1/2 cup sliced almonds
1/2 cup sesame seeds
1/4 cup (1/2 stick) butter
2 3-ounce packages ramen noodles, flavor packets discarded
2 tablespoons sugar
1/2 cup vegetable oil
3 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix the cabbage and green onions in a large bowl. In a small saucepan over medium heat, brown the almonds and sesame seeds in the butter.
  • Combine the dressing ingredients in a small bowl and stir well. Just before serving, add the sesame seeds, almonds, and crushed raw ramen noodles to the cabbage and green onions. Pour the dressing, a little at a time, over the salad mix, then toss.

1 egg
1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz pouch)
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rounds (8 Count)
32 whole cashews

Steps:

  • Heat oven to 375°F. In small bowl, mix egg and taco seasoning mix with fork until well blended; set aside.
  • Spray large cookie sheet with cooking spray. Separate crescent dough into 8 rounds; unroll into strips. Fold each strip in half; starting at folded end, twist 2 to 3 times, leaving 1 inch untwisted on other end. Place on cookie sheet.
  • Using a paring knife or kitchen scissors, cut each untwisted end to make 4 claws. Cut a small slit in each claw. Place 1 cashew in each slit; press to seal cashew in place to make nail. Brush entire claw with egg mixture. Repeat with remaining ingredients.
  • Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet.

1 (2 1/16 ounce) packet shake 'n bake extra crispy seasoned coating mix
1/4 red pepper, cut into 8 triangular pieces
1/2 cup kraft original barbecue sauce

Steps:

  • Heat oven to 400°F.
  • Coat hicken with coating mix as directed on package. Place on baking sheet sprayed with cooking spray.
  • Bake 13 to 15 minutes or until chicken is done.
  • Make 1/2-inch slit in thinner end of each chicken strip; insert red pepper triangle in slit for the monster's claw. Serve with barbecue sauce.

Found this in the Woman's World Magazine. I thought the picture looked ghastly and would be absolutely perfect for Halloween. These could also be made for an every-day snack if you left off the green food coloring.

3 tablespoons butter or 3 tablespoons margarine
1 (16 ounce) package large marshmallows
1 lb candy coating (I use Candiquick brand)
10 cups Cocoa Puffs cereal
green food coloring
1 (2/3 ounce) package red decorating gel

Steps:

  • Line a jellyroll pan with wax paper; coat with cooking spray.
  • Put the Cocoa Puffs in a plastic bowl sprayed with non-stick spray.
  • In a pot over low heat, melt the butter. Stir in the marshmallows. Cook, stirring constantly until melted. When almost completely melted, stir in green food coloring to desired color. (Remember, these are monster brains!).
  • When completely melted, remove from heat and stir in the candy melts. Add more food coloring if it becomes too light. Stir until smooth. (You might pre-melt the candy coating a bit in the microwave if it's in big chunks.).
  • Pour the mixture over the cereal until combined. With hands, shape mixture into 12 "brains". Let stand until completely cool, about 45 minutes. Pipe on the red gel for "blood".
