1 tablespoon chopped fresh flat-leaf parsley
1 large egg, lightly beaten
1/2 tablespoon olive oil
1 tablespoon ketchup, plus more for serving
2 tablespoons grated Romano cheese
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 ounces 96-percent lean ground beef
Twelve 2 1/2-inch diameter sweet dinner rolls, halved, such as King's Hawaiian

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, stir together the cereal, parsley, egg, oil, 1 tablespoon ketchup, cheese, salt, and pepper. Add the ground beef and gently stir to combine. With damp hands, roll the mixture into 12 mini meatballs. Arrange the meatballs on the prepared baking sheet and bake until cooked through, about 15 minutes Cool for 10 minutes.
  • Make an indentation in the center of the bottom half of a roll. Slice a meatball in half and put in the indentation. Add about 1 teaspoon of ketchup to the meatballs and cover with the top half of the roll. Repeat with the remaining rolls and filling.
  • Arrange the sandies on a platter and serve.

3 ½ cups cornflakes cereal
¼ cup butter, melted

Steps:

  • Grease a 13x9-inch baking dish with butter.
  • Cut bread slices into quarters. Arrange half the bread into the bottom and up the sides of the prepared dish in an even layer to cover completely.
  • Mix ham and Cheddar cheese in bowl; spread over the bread layer and top with remaining bread.
  • Beat milk, eggs, and mustard together in a bowl until smooth; pour over the bread to soak completely.
  • Put corn flakes cereal into a bowl; drizzle melted butter over the cereal and stir to coat. Spread coated cereal over the top of the casserole.
  • Cover casserole with plastic wrap and refrigerate 8 hours to overnight.

1 1/2 lbs ground sirloin
1 large egg, beaten
1 cup Italian seasoned breadcrumbs
1 medium onion, chopped fine
4 garlic cloves, crushed and minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons Worcestershire sauce
1/4 cup flat leaf parsley, chopped
1/4 cup grated parmigiano or 1/4 cup romano cheese
coarse salt
black pepper

Steps:

  • Place ground sirloin in a large mixing bowl and punch a well into the center of meat.
  • Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper.
  • Mix up meatball ingredients until well combined, yet not over-mixed.
  • Divide mix into 4 equal parts.
  • Roll each part into 4 balls and space equally onto a nonstick baking sheet.
  • Place meatballs in oven and roast about 12 minutes.

2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
4 teaspoons dried oregano

6 cloves garlic, minced
2 tablespoons olive oil
¼ cup red wine
1 ¼ pounds ground meatloaf mix (beef, pork veal)

Steps:

  • For the sauce, combine the chopped tomatoes, 2 cans tomato paste, tomato sauce, 4 teaspoons oregano, 2 teaspoons parsley, basil, 2 teaspoons sugar, salt, 6 cloves garlic, olive oil, and red wine in a large, heavy pot. Cover, and cook over medium heat until bubbling. Uncover, reduce heat to low, and simmer for at least one hour, stirring often.
  • Preheat an oven to 350 degrees F (175 degrees C). Coat a baking sheet with non-stick cooking spray.
  • Combine the meatloaf mix, corn flakes, eggs, 3 garlic cloves, Parmesan cheese, 3 tablespoons tomato paste, 2 teaspoons dried oregano, 2 tablespoons dried parsley, 1 tablespoon sugar, garlic salt, nutmeg, and black pepper in a large bowl. Mix well with a large fork. Form the meat mixture into 1 1/2 inch firm balls. Place the meatballs on the prepared pan.
  • Bake meatballs until browned and cooked though, about 20 to 30 minutes. Drop cooked meatballs into hot spaghetti sauce, and serve immediately.

Found on Kellog's web site and placed on Zaar for safekeeping. Sounds like the basis for a great meal with buttered noodles or rice. An easy sandwich or appetizer for football games too. OAMC adaptable because I am sure this will freeze well. Kelloggs had a 30 minute preparation time which must be inaccurate, so I guess-timated something that seems more reasonable.
