2 lbs ground beef
1 (29 ounce) can tomato sauce
2 (29 ounce) cans kidney beans (drained)
1 cup diced onion
1/2 cup celery, diced
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder (more if desired)
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
1 cup green pepper
2 garlic cloves, minced

Steps:

  • brown ground beef over medium heat, drain off fat. using fork crumble the beef into pea-size pieces, combine the beef plus all the remaining ingredients and bring to a simmer over low heat. cook, stirring every 15 minutes for 2-3 hours.

Boneless chicken breasts are pounded thin, then rolled with prosciutto, provolone, and spinach, and cooked in olive oil and white wine.

8 skinless, boneless chicken breast halves - pounded thin
3 tablespoons olive oil, divided
salt and black pepper to taste
1 (10 ounce) package frozen chopped spinach, thawed and drained well
8 slices thinly sliced prosciutto
8 slices provolone cheese
½ cup freshly grated Parmesan cheese
1 ½ cups dry white wine

Steps:

  • Brush each chicken cutlet with olive oil and season with salt and pepper.
  • Squeeze excess water out of the frozen spinach, then season with olive oil, salt, and pepper.
  • Place 1 piece of prosciutto, 1 piece of provolone, and a thin layer of spinach on each chicken cutlet. Then sprinkle Parmesan over the tops.
  • Beginning at the short, tapered end, roll up each chicken cutlet, and secure with a toothpick.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Place chicken in the skillet, then pour in wine. Cook, turning the chicken, until the wine evaporates, and the chicken is cooked through and its juices run clear, about 20 minutes.

1 (1 pound) loaf frozen bread dough, thawed
1 egg
1 (14 ounce) package Hillshire Farm Lit'l Smokies® Smoked Sausage
1 (15 ounce) can no-bean chili
1 ½ cups shredded Cheddar cheese
¼ white onion, chopped
1 (12 ounce) jar sliced pickled jalapenos

Steps:

  • Cut thawed dough into 36 to 40 one-inch pieces. Roll each piece into a small oval shape and place on a parchment-lined baking sheet. Cover with greased plastic wrap and let rise in a warm place until doubled in size.
  • Heat oven to 375 degrees F. Whisk egg with 1 teaspoon water and gently brush the tops of each roll. Bake until golden, about 15 minutes.
  • In a skillet over medium-high heat, cook Lit'l Smokies smoked sausages until browned. At the same time, heat chili in a saucepan over medium heat until hot.
  • Cut each roll in half down the top, not cutting all the way through. Place a smoked sausage into each roll, top with a spoonful of chili and garnish with cheddar cheese, onion and jalapenos.
