SPRING PANNA COTTA WITH FRESH STRAWBERRIES AND BALSAMIC SYRUP

Steps:
- 1. Grease 4 (1-cup) size ramekins with nonstick spray to evenly coat the insides.
- 2. Begin by adding milk, cream and sugar to a pot and set over medium heat. Add vanilla bean and seeds and 4 strips of lemon peel (try not to get any of the white pith). Bring to a simmer. Once the mixture begins to bubble, turn off the heat.
- 3. While the mixture is heating, combine the gelatin and lemon juice, whisking as you go to avoid lumps. Temper the gelatin with about 1/2 cup of the heated milk/cream mixture and whisk back into the remaining mixture. Strain cream mixture using a fine mesh strainer, into a bowl and discard the vanilla pod and lemon peel. Add the creme fraiche and gently whisk to combine the mixture. Distribute evenly among the ramekins and place in the refrigerator for 4 to 6 hours or until they are set.
- 4. In a small saucepan reduce balsamic vinegar over low heat until slightly syrupy 5 to 7 minutes. Add sugar and stir until dissolved.
- 5. Remove the ramekins from the refrigerator and top with quartered strawberries. Drizzle the tops with the balsamic syrup and serve.
CRèME FRAîCHE PANNA COTTA WITH STRAWBERRIES
The stated purpose of my junior year abroad was to study at the famous London School of Economics, but the first thing I did when I got to England was land a part-time job at the Roux brothers' (also famous) restaurant, Le Mazarin. Of all the challenges of living abroad, I never thought I'd have a problem finding something decent to eat. Boy, was I wrong. While the food we served guests at Le Mazarin was topnotch, staff meals were a different story. Stripped chicken carcasses, limp vegetable trimmings, and, if we were lucky, a box of just-add-water mashed-potato flakes were the components of just about every meal. The rest of London wasn't offering many great options either at that time. Fish and chips and heavy pub fare dominated the food scene in the late eighties, before Britain's culinary renaissance. The one thing I found worth eating (and could afford on the £10 a week my job paid) was scones with clotted cream and strawberries. And that's exactly what I ate, for 6 straight months. After so many meals of strawberries and cream, it's a wonder that I still love that combination. Panna cotta ("cooked cream"), a silken, eggless Italian custard, is an easy-to-make complement to perfectly ripe berries. I've added crème fraîche to the traditional recipe to balance the strawberries' sweetness with some tang. You can make the panna cotta in individual ramekins and unmold them just before serving or make it in a large gratin dish and spoon it out at the table family-style.

- Place the milk in a large bowl, sprinkle the gelatin over it, and stir to combine.
- In a medium saucepan, bring the cream and 5 tablespoons sugar to a boil. Lightly oil eight 4-ounce ramekins or custard cups (or a large gratin dish if serving family-style).
- When the cream mixture comes to a boil, turn off the heat and let it sit a few minutes.
- Slowly whisk the cream into the gelatin, and then whisk in the crème fraîche.
- Strain the mixture, and pour it into the prepared molds. Chill in the refrigerator for at least 3 hours.
- Ten minutes before serving, slice the strawberries, and toss them with a tablespoon or so of sugar, to taste.
- Run a hot knife around the edges of the panna cotta and invert it onto a large chilled platter. Surround the custard with the strawberries and their juice.
BUTTERMILK PANNA COTTA WITH RHUBARB-STRAWBERRY JELLY

- For panna cotta:
- Place 1/4 cup cold water in a small bowl and sprinkle gelatin over; let stand until softened, about 10 minutes.
- Meanwhile, combine cream, sugar, and salt in a small saucepan; scrape in seeds from vanilla bean and add pod. Bring just to a simmer. Add softened gelatin and stir until dissolved. Remove cream mixture from heat; let cool.
- Remove vanilla pod from cream mixture; discard. Whisk in buttermilk, then crème fraîche. Divide mixture among eight 6-ounce jars, ramekins, or glasses. Chill until set, at least 2 hours.
- For rhubarb-strawberry jelly:
- Place strawberries, sugar, and 2 1/2 cups rhubarb in a medium heatproof bowl; stir to combine and cover tightly with plastic wrap, crimping plastic wrap just under rim of bowl. Set bowl over a saucepan of simmering water (plastic wrap should not touch saucepan) and cook, without stirring, until mixture looks pale and soft, 40-45 minutes.
- Strain mixture through a fine-mesh sieve into a measuring cup (do not push mixture through or jelly will be cloudy); discard solids. Add water, if needed, so liquid measures 1 cup.
- Place 2 tablespoons cold water in a small bowl and sprinkle gelatin over; let stand until softened, about 10 minutes.
- Meanwhile, bring rhubarb-strawberry liquid to a boil in a small saucepan. Add remaining 1/2 cup rhubarb and cook, stirring occasionally, until tender, about 3 minutes; remove from heat.
- Add softened gelatin to saucepan and stir until dissolved. Let jelly cool completely.
- Top chilled panna cotta with jelly, dividing equally. Cover and chill until jelly is firm, 2-4 hours.
- DO AHEAD: Panna cotta can be made 3 days ahead. Keep chilled.
ROASTED STRAWBERRY PANNA COTTA

- Preheat oven to 350°F. Place 6 cups strawberries and 6 tarragon sprigs in 13x9x2-inch glass baking dish. Sprinkle with 2 tablespoons sugar and lemon juice; toss to coat. Roast uncovered until strawberries are soft and syrup forms, stirring occasionally, about 20 minutes; cool 30 minutes.
- Strain strawberry mixture into medium bowl, pressing on fruit to release as much pulp as possible; discard seeds in strainer. Transfer 1 1/2 cups strawberry purée to another medium bowl; mix in crème fraîche. Reserve any remaining purée for another use.
- Place 2 1/2 tablespoons cold water in small saucepan; sprinkle gelatin over. Let stand until gelatin softens, about 15 minutes.
- Scrape seeds from vanilla bean halves into another small saucepan; add bean. Add cream and remaining 1/2 cup sugar. Bring to simmer over medium heat, stirring until sugar dissolves. Remove cream mixture from heat; add gelatin mixture and stir to dissolve. Cool slightly. Stir cream-gelatin mixture into strawberry cream. Strain into large measuring cup; divide among six 3/4-cup ramekins or small goblets. Cover and chill until panna cotta is set, at least 6 hours and up to 1 day. Garnish with whole strawberries and remaining tarragon sprigs.
PANNA COTTA TARTLETS WITH STRAWBERRIES
Steps:
- In a small bowl, sprinkle gelatin over the water; let soften 10 minutes.
- Prepare an ice-water bath. Bring cream and 1/2 cup plus 2 tablespoons sugar to a simmer in a medium saucepan, stirring occasionally. Add gelatin mixture, and cook over medium-low heat, stirring, until gelatin and sugar are dissolved. Remove from heat. Whisk in crème fraîche and vanilla. Pour into a medium bowl set into ice-water bath. Let cool completely, stirring occasionally. Divide mixture evenly among six 5-ounce ramekins or custard cups. Refrigerate until set, 3 hours or up to 1 day.
- Place six 4-inch tart rings on a parchment-lined rimmed baking sheet. Divide dough into 6 pieces. On a lightly floured surface, roll out each piece of dough to a 6-inch round, 1/8 inch thick. Gently press each round into a tart ring. Trim excess dough flush with rings. Refrigerate or freeze until firm, about 30 minutes.
- Preheat oven to 375°F. Pierce bottoms of shells all over with fork. Line shells with parchment, and fill with pie weights or dried beans. Bake until edges are golden, about 18 minutes. Remove parchment and weights; continue baking until surfaces are golden, about 10 minutes more. Let cool on a wire rack. Remove from tart rings.
- Cook berries, remaining 2 to 4 tablespoons sugar (depending on sweetness of berries), and vinegar in a skillet over medium-low heat, stirring, until juicy, about 5 minutes. Let cool slightly.
- Dip ramekins in warm water; pat dry. Run a small knife around edge of each panna cotta; gently invert onto a baked, cooled tart shell. Top with berries and sauce, and serve immediately.
PANNA COTTA TARTS WITH STRAWBERRIES
