ASIAN-INSPIRED CUCUMBERS WITH A KICK
Get a taste of the Orient with these quick and easy cucumbers which have nice presentation and a little kick of heat to make them interesting. Serve as a side salad or a main course by adding some chicken or grilled shrimp.

Steps:
- Whisk rice vinegar, lime juice, honey, ginger, peanut butter, garlic, sesame oil, red pepper flakes, and sriracha sauce together in a small bowl to make dressing.
- Slice red onion into spirals with a spiralizer fitted with a straight-flat blade. Spiralize cucumbers into thin, curly ribbons; snip into serving-size lengths with kitchen shears or a knife. Transfer to a shallow bowl.
- Drizzle dressing over onion and cucumbers; mix gently to combine. Garnish with peanuts and jalapeno pepper.

CUCUMBERS WITH A KICK
as a kid i was introduced to cucmbers in vinegar but the vinegar taste is far too bitter and unpleasant to me and by tweaking the recipe i have found myself to eat 1-3 whole cucumbers at a time.

Steps:
- peel cucumber.
- add into a storage container ( i use ziplock)
- seed lemon squeezing all juices into storage container and as much pulp as desired ( microwave lemon 10 seconds and roll to extract all the juice)
- add salt ( and if desired your chili powder)
- place lid on container and shake
- eat immediatly
- OR leave in fridge a day or so and by all means drink the juice!
CUKE-WITH-A-KICK FINGER SANDWICHES
These are about as far from Grandma's cucumber sandwiches as you're going to get. These babies will light up your spread with their fluorescent red and green color. Don't worry, there's nothing toxic here, it's just red horseradish, cucumber, scallion, and dill. The dill complements the cucumbers perfectly, and the scallions and horseradish give the sandwich some really good kick. My friends go through these things like water because they're so light and poppable. I've learned to make a double batch so I don't wind up back in the kitchen to make more of these during the party.

- Peel the cucumber and slice it very, very thin. Lay the cucumber slices out on a sheet of paper towel and cover them with a second sheet. Let stand until the paper towels soak up the cucumber slices' liquid, about 15 minutes.
- Mash the butter, scallions, dill, horseradish, salt and pepper together in a small bowl until well blended. Spread 5 of the bread slices with half of the dill butter, then top the butter with a layer of cucumber slices¿it's fine if they overlap a little bit. Spread the remaining butter over the remaining bread and top the sandwiches. Cut each sandwich into 4 pieces.

ROASTED CUCUMBERS AND ONIONS WITH FRESH HERBS
I invented this recipe out of a need for a way to use the surplus cucumbers from a friend's garden this summer. I had never heard of someone roasting cucumbers, and a quick internet search turned up nothing, so I thought it would make an interesting culinary experiment. As it turned out, though, I discovered a new family favorite! This fast and easy recipe makes a great side dish for any occasion. Great with chicken or steak! I've even eaten it by itself for a light lunch. What more could you ask for?

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil. Spray the foil with olive oil cooking spray.
- Spread pieces of butter into the baking sheet and lay cucumber spears over the butter. Top with slices of sweet onion and scatter basil, parsley, cilantro, and mint over the top. Spray the vegetables again with olive oil cooking spray.
- Roast cucumber mixture in the preheated oven until cucumber spears begin to soften, about 10 minutes. Turn the cucumbers and onion slices over and return to oven; roast until cucumbers are tender, 15 to 20 more minutes.
