CUNETTO'S TUTTO MARE

I found this online on a search for recipe's from Cunetto's house of Pasta in St. Louis. I havent tried it yet but I usually order this when I go to the restaurant. It is wonderful.

1 lb linguine
1 cup chicken broth
3/4 cup chopped clam
3/4 cup medium shrimp
3/4 cup crabmeat
1/2 cup lobster
1 3/4 cups sliced mushrooms
3/4 cup butter (do NOT substitute)
1 teaspoon chopped garlic
1/4 cup chopped parsley
salt and pepper
freshly grated parmesan cheese

Steps:

  • Cook pasta until al dente. In the meantime, simmer rest of ingredients 5 minutes. Add fish mixture to drained pasta and simmer additional 3 minutes. Sprinkle liberally with Parmesan.

1 teaspoon cornstarch
3 teaspoons anchovy paste
1 dash salt
1 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon oregano
1 1/2 cups oil
6 tablespoons red wine vinegar
romaine and iceberg lettuce
parmesan cheese (the shredded kind)
i small jar pimentos
green onion
6 slices crumbled cooked bacon
crouton

Steps:

  • Mix corn starch, anchovy paste, salt, pepper, garlic powder, sugar, oregano with oil and red wine vinegar. blend well. Toss with Romaine and iceberg lettuce, provalone cheese, parmesan cheese, pimento, green onion. Garnish with 6 slices cooked crumbled bacon, and croutons.

SKEWERED CHICKEN WITH LEMON BUTTER SAUCE



Skewered Chicken with Lemon Butter Sauce image

Number Of Ingredients 12

1/2 cup olive oil
1/2 cup dry white wine
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon dried crushed red pepper
6 skinless boneless chicken breast halves, but into 1-inch pieces
3/4 cup dry white breadcrumbs
3/4 cup freshly grated Parmesan cheese (about 2 1/2 ounces)
12 8-inch bamboo skewers, soaked in water 30 minutes
1/4 cup (1/2 stick) butter
2 tablespoons fresh lemon juice

Steps:

  • Mix first 6 ingredients in large bowl. Add chicken; toss to coat. Cover and refrigerate 1 hour.
  • Preheat broiler. Combine breadcrumbs and Parmesan cheese in another large bowl. Remove chicken from marinade; discard marinade. Add chicken to breadcrumb mixture; toss to coat. Arrange chicken on skewers.
  • Broil chicken until cooked through, turning frequently, about 8 minutes. Transfer to platter.
  • Meanwhile, melt butter in heavy small saucepan over medium heat. Remove from heat and mix in lemon juice. Drizzle butter over chicken.
