CURRIED EGGPLANT SOUP
This is a quick, easy soup to make for lunch. It is a great way to use up leftover eggplant. When adding the curry powder, the quantity given is approximate. There is a huge variation in the spiciness of curry powder. Use an amount that makes the soup taste good to you. If you do not have vegetable stock, any other stock will work.

CURRIED CHICKEN SOUP
My German mother would occasionally cook dishes that were not traditional German recipes. One of my favorites was her Curry Chicken Soup. I've added my own touches to it, such as the chickpeas, coconut milk and fresh cilantro.-Deanna Hindenach, Paw Paw, Michigan

Steps:
- Place eggplant in a large colander and sprinkle lightly with salt. Let stand for 30 minutes (sweating the eggplant). Rinse thoroughly to remove salt and drain well.
- In a large non-stick pot, heat 2 Tbsp olive oil and garlic over medium heat, being careful not to burn the garlic (approx. 2 minutes).
- Add eggplant to pot and saute for 12 minutes.
- Add onion; saute until translucent.
- Add diced tomatoes (including liquid), dried thyme, and salt & pepper. Bring to boil. Then, simmer for 30 minutes stirring often and gently to break up tomatoes.
- Meanwhile, place thawed spinach into colander and use your hands to squeeze out any excess water; set aside.
- Add chicken broth, chicken, and spinach. Simmer 30 minutes.
- Serve with crusty French bread.
- NOTES: Eggplant is a thirsty vegetable and will soak up olive oil when sauteing. Do not be afraid to add extra oil as needed. If using store-bought chicken broth, then reduce to 4 cups and add 2 cups water.

Steps:
- Wrap tofu in several layers of paper towels. Place in a colander in the sink. Set a plate on top of tofu and weigh down with a large, heavy can. Let stand for at least 20 minutes.
- Meanwhile, shake cans of coconut milk well prior to opening. Pour 1/2 of 1 can into a large saucepan. Bring to a simmer over medium heat. Whisk in curry paste until well blended. Add eggplant, onion, and bell pepper, stirring well with a rubber spatula to prevent breaking of tender eggplant during cooking.
- Stir remaining 1 1/2 cans coconut milk, dark brown sugar, tamari, rice vinegar, and salt into the saucepan. Mix well. Increase heat and bring to a boil. Reduce heat to low and simmer until thickened, about 20 minutes.
- Unwrap tofu and cut into bite-sized cubes. Stir into curry mixture. Cook until heated through, about 5 minutes. Add peas and cook until warm, 1 to 2 minutes more.

- To Roast the Eggplant: Preheat oven to 400F. Cut eggplants on the diagonal into 1/2-inch slices. Drizzle slices with olive oil and sprinkle 1/2 teaspoon of the salt on top. Toss to coat. Spread slices evenly across two parchment-paper-lined rimmed baking sheets. Roast until eggplant begins to brown on bottom, about 15 minutes. Using a spatula, flip the slices over and continue to roast about until eggplant is soft and has browned on both sides, about 10 more minutes. Remove eggplant from the oven and set aside.
- Meanwhile, trim the excess fat from the chicken thighs (optional - I don’t bother), cut into 1/2-inch pieces. Place chicken in a medium-sized bowl and, mixing with your hands, coat with the smoked paprika, turmeric and 1/2 teaspoon of the salt. Let the chicken thighs marinate in the spices either at room temperature while you prepare the rest of the curry ingredients, or up to overnight. It is important to refrigerate the chicken if you will be marinating it for longer than 2 hours.
- In a large pot or dutch oven, heat canola oil over medium-high heat. Add the onions, lower heat to medium-low and cook, stirring frequently until the onions become translucent and soft, about 10 minutes. Stir in the garlic. Continue to cook for 5 more minutes.
- Add the chicken to the pot and stir the chicken and onions together to coat evenly with the spices. Add the coconut milk and bring to a boil. Simmer for about 5 minutes and lower the heat to medium-low. Add the fish sauce and water and bring the mixture back up to a boil.

- Toss eggplant in a medium bowl with 1/4 cup oil, 1/2 teaspoon salt and pepper. Spread in a single layer on a large rimmed baking sheet. Roast for 10 minutes. Turn the eggplant over and roast until very soft, 8 to 10 minutes more.
- Meanwhile, heat the remaining 1 tablespoon oil in a large pot over medium heat. Add onion and garlic; cover and cook, stirring occasionally, until the onion is soft, 8 to 10 minutes. Stir in bell pepper and cook, uncovered, for 2 minutes more. Sprinkle sweet and hot paprika (or cayenne to taste) over the vegetables and stir until well coated. Stir in the eggplant, parsley, oregano, turmeric and ginger until well mixed. Add broth (or stock) and chicken. Bring to a boil over high heat. Reduce the heat and simmer for 10 minutes.
- Whisk half-and-half, egg yolks and cornstarch in a medium bowl. Stir in 1 cup of the hot broth until combined. Gradually stir this mixture back into the pot, taking care that it does not boil, which will scramble the eggs. Whisk in lemon juice and season with the remaining 1 teaspoon salt. Serve with lemon wedges, if desired.
