2 pounds large long carrots, peeled
2 cups orange juice
1 1/2 teaspoons (packed) dark brown sugar
2 tablespoons (1/4 stick) butter
2 teaspoons honey
1/4 teaspoon balsamic vinegar
Chopped chives

Steps:

  • Run vegetable peeler down length of carrots, shaving off long ribbons (you will need about 8 cups ribbons). Cook in large saucepan of boiling salted water 2 minutes. Drain and gently pat dry. (Can be made 6 hours ahead. Cover; chill.) Stir orange juice and sugar in heavy large skillet over medium-high heat until sugar dissolves. Boil until reduced to scant 1 cup, about 5 minutes. Add carrots and butter; simmer until carrots absorb most of orange syrup, about 4 minutes. Add honey and vinegar. Mix gently. Season with salt and pepper. Transfer carrots to serving bowl. Sprinkle with chives.

4 chicken leg quarters (4 1/2 lb)
1 teaspoon salt
1 teaspoon freshly ground pepper
1 tablespoon vegetable oil
1/4 cup real maple syrup
1/4 cup chicken broth
2 teaspoons grated orange peel
2 tablespoons orange juice
2 tablespoons bourbon
1 tablespoon Dijon mustard
1 1/2 lb fresh Brussels sprouts, trimmed, cut in half
4 carrots, cut into 2-inch pieces
2 tablespoons butter, cut into pieces
1/2 cup pecan pieces, toasted

Steps:

  • Heat oven to 350°F. Sprinkle chicken with 1/2 teaspoon each of the salt and pepper. In 12-inch skillet or Dutch oven, heat oil over medium-high heat. Add chicken; cook 2 minutes on each side or until browned. Remove chicken to large shallow roasting pan.
  • In small bowl, mix syrup, broth, orange peel, orange juice, bourbon, mustard, and remaining 1/2 teaspoon each salt and pepper. Place Brussels sprouts and carrots around chicken in pan; dot with butter. Drizzle vegetables with 1/4 cup of the orange mixture. Brush chicken with 1/4 cup orange mixture.
  • Roast 1 hour 15 minutes, brushing every 20 minutes with orange mixture and stirring vegetables once, or until meat thermometer reads at least 165°F. In 1-quart saucepan, heat remaining orange mixture to boiling. Boil 2 minutes. Serve orange sauce with chicken and vegetables. Sprinkle with pecans.

4 medium carrots, washed and trimmed
1 medium fennel bulb
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
¼ teaspoon dried thyme
1 tablespoon maple syrup
¾ teaspoon grated orange zest

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Cut carrots on the diagonal into 1/4 inch slices. Place in the center of the baking sheet. Trim the bottom off the fennel and cut off any green parts and fronds from the top. Cut fennel bulb in half, then cut each half into into 1/4-inch thick slices. Place on the baking sheet with the carrots. Sprinkle with salt, pepper, and thyme. Drizzle with olive oil and toss vegetables to coat evenly. Spread in a single layer on baking sheet.
  • Roast in the preheated oven until soft, turning vegetables halfway through, about 20 minutes. During the last 5 minutes, drizzle vegetables with maple syrup and sprinkle with orange zest. Toss gently to combine, and return to the oven. Serve immediately. Garnish with additional orange zest, if desired.

2 medium zucchini
2 tablespoons butter
3/4 cup reduced-sodium chicken broth
2 tablespoons minced fresh parsley, divided

Steps:

  • Using a vegetable peeler, cut the vegetables lengthwise into very thin strips., In a large skillet over medium heat, melt butter. Add broth. Bring to a boil; cook until liquid is reduced to 1/3 cup. Add the vegetable strips and 1 tablespoon parsley; cook and stir for 2 minutes or just until crisp-tender. Sprinkle with remaining parsley. 1 cup orange juice
4 garlic cloves, pressed
2 teaspoons grated orange peel
1/2 teaspoon ground allspice
1/2 teaspoon dried thyme, crumbled
2 pounds baby back pork ribs (about 2 slabs)
1/4 cup maple syrup

Steps:

  • Combine first 5 ingredients in large baking dish. Add ribs and turn to coat. Cover and chill 6 hours or overnight.
  • Prepare barbecue (medium-high heat). Remove ribs from marinade and season with salt and pepper. Grill until cooked through, turning occasionally, approximately 25 minutes.
  • Meanwhile, place marinade in heavy small saucepan. Add maple syrup and boil until reduced to 1/4 cup, about 18 minutes. Brush ribs with glaze. Grill ribs 1 minute longer and serve.

Quantities are variable, so feel free to make adjustments according to your personal taste. Adding a sprig of fresh rosemary (not dried) when cooking carrots adds another layer of flavor, but there is so much going on already I had to stop somewhere. I also love to add 2 or 3 chopped slices of cooked bacon, either as a garnish or in the sauce. A few walnuts or pecans add a nice crunch to this dish. Enjoy!

16 ounces baby carrots or 2 cups sliced carrots
2 -3 tablespoons butter
1 teaspoon orange zest or 1 tablespoon frozen orange juice concentrate
2 tablespoons maple syrup or 2 tablespoons dark brown sugar
salt
ground pepper

Steps:

  • Saute the carrots in butter with optional rosemary, almost to tender crisp in a medium saucepan with high sides and enough room to stir.
  • Add the orange and maple flavors, along with cooked bacon and walnuts if using in sauce, add a bit of water if using brown sugar to help it melt. Stir to glaze carrots and reduce glaze over low heat until sticky and hot. Add the salt and adjust sweetness just before serving. The salt really brings out the flavor of the carrots, use less salt if adding bacon as a garnish.
  • Garnish with fresh ground pepper, nuts and bacon if desired. The bacon and nuts are optional and can be added either to sauce while cooking or as a garnish.
