Linguine with Garlic, Breadcrumbs, and Anchovies image

Breadcrumbs give garlicky linguine with anchovies unexpected crunch.

1 loaf round rustic bread (about 1 pound), trimmed of crust, bread coarsely torn
1 1/2 cups extra-virgin olive oil
11 garlic cloves (8 whole, 3 minced)
Coarse salt
1 pound linguine
15 anchovy fillets, rinsed and finely chopped
2 small dried red chiles, crumbled
4 1/2 teaspoons fresh lemon juice plus zest of 1 lemon (1 lemon total)
1 bunch fresh flat-leaf parsley, chopped
Freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Working in batches, process bread in a food processor until coarse crumbs form. Heat 1 cup oil in a large skillet over medium-high heat until hot but not smoking. Add whole garlic; cook until golden, about 2 minutes. Add breadcrumbs; stir to coat.
  • Transfer breadcrumb mixture to a rimmed baking sheet. Bake, stirring occasionally, until golden brown, about 12 minutes. Transfer to a baking sheet lined with paper towels; discard garlic.
  • Bring a large pot of water to a boil; add salt. Add pasta; cook until al dente. Drain, reserving 1 cup pasta water.
  • Heat remaining 1/2 cup oil in a large nonstick skillet over medium heat until hot but not smoking. Add minced garlic; cook until golden, about 2 minutes. Stir in anchovy fillets and chiles; cook, 2 minutes. Add pasta to skillet; toss to coat. Add lemon juice and all but 2 tablespoons parsley. Toss, adding up to 1 cup pasta liquid if pasta seems dry.
  • Season with pepper. Divide among serving dishes; top each serving with some of the breadcrumbs and lemon zest. Garnish with remaining parsley.

Pangrattato, or bread crumbs in Italian, is the secret star of this dish. When mixed with sweet pistachios, bright lemon zest and fresh mint, it makes for a crunchy, flavorful topping that pairs well with garlicky shrimp and linguine. The citrus and herbs provide welcome complexity to an otherwise simple dish. Serve with a shaved vegetable salad of fennel, radishes and Parmesan.

1 pound linguine
1 pound large shrimp, peeled and deveined
Freshly ground black pepper
1/4 cup olive oil, plus more for drizzling
3 garlic cloves, thinly sliced
1/2 teaspoon red-pepper flakes
1 cup chicken stock
4 tablespoons unsalted butter
1/2 cup roughly chopped Italian parsley
1/2 lemon, for serving
Flaky salt, for serving (optional)
1 tablespoon olive oil
1/3 cup panko bread crumbs
2 tablespoons raw pistachios, finely chopped
1 teaspoon lemon zest, from 1 lemon
3 tablespoons finely chopped mint or Italian parsley
Flaky salt

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add pasta, and cook until it is just short of al dente, according to package directions. Reserve 1 cup of the pasta cooking water, and drain.
  • Meanwhile, prepare the bread crumbs: Heat 1 tablespoon oil in a 12-inch skillet with sides over medium-low heat, add the panko bread crumbs, and toast, stirring frequently, until golden, about 2 to 4 minutes. Transfer the crumbs to a small bowl and toss together with the pistachios, lemon zest and mint and season with flaky salt. Set aside. Wipe out the skillet with a paper towel.
  • Season the shrimp well with salt and pepper. In the skillet, heat 1/4 cup olive oil over medium heat, add the shrimp and sauté until just cooked through, about 1 to 2 minutes a side. Remove with a slotted spoon and set aside. Stir in the garlic and red-pepper flakes and cook for 1 more minute, making sure the garlic doesn't burn.
  • Add the chicken stock, raise the heat to medium-high and bring to a simmer. Scrape up any brown bits that have formed at the bottom of the pan and cook until reduced by half, about 3 to 4 minutes. Stir in the butter and cook until it's melted and the sauce becomes emulsified.
  • Turn the heat to low, add the pasta, shrimp and parsley to the skillet and toss until glossy with sauce. Add some of the reserved pasta water, if needed, to loosen up the sauce. Top with half the bread crumbs and a good squeeze of lemon. Serve in bowls and pass the remaining bread crumbs at the table. Drizzle with additional olive oil and season with flaky salt, if desired.

2 tablespoons olive oil
1 medium shallot, chopped (or use green onion)
1 small onion, chopped
10 fresh basil leaves, cut into thin strips
1 pinch red pepper flakes
1/2 cup white wine
3/4 cup vegetable broth
1/3 cup golden raisin
8 ounces linguine
2 tablespoons pine nuts, toasted (To toast pine nuts, place in small, dry pan on medium heat and cook, shaking pan, until golden, 1 1/)
1 tablespoon toasted whole wheat bread crumbs
1 tablespoon parmesan cheese (or try my Vegetarian Parmazano "cheese"#60231)
1 tablespoon flax seed oil or 1 tablespoon olive oil

Steps:

  • Bring large pot of water to a boil.
  • Meanwhile, in medium saucepan, heat olive oil over medium-high heat.
  • Add shallot and onion and cook, stirring often, until lightly browned, 2 to 3 minutes.
  • Reduce heat to medium.
  • Add basil, pepper flakes and wine and cook, stirring occasionally, until thickened slightly, 2 to 3 minutes.
  • Add vegetable broth and raisins and simmer until heated through, about 5 minutes.
  • Add 1 tablespoon salt and pasta to boiling water, stirring to prevent sticking.
  • Cook pasta until just tender, about 8 minutes.
  • Drain well.
  • Add pine nuts, bread crumbs and Parmazan cheese to sauce; stir well.
  • Season to taste with salt and pepper.
  • Remove from heat.
  • Stir in flaxseed or olive oil.
  • Add pasta and toss to coat.
  • Serve hot.

1/2 cup extra-virgin olive oil
8 anchovy fillets
1 large onion, very thinly sliced
1 large fresh fennel bulb, trimmed, halved, very thinly sliced
1/4 teaspoon dried crushed red pepper
2 plum tomatoes, chopped
1/4 cup pine nuts
1/4 cup dried currants
3/4 pound perciatelli (thick hollow spaghetti) or linguine
1/4 teaspoon saffron threads
1 cup fresh breadcrumbs, toasted

Steps:

  • Heat oil in large skillet over medium heat. Add anchovies; mash with back of fork. Add onion, fennel, and red pepper. Sauté vegetables until tender, about 5 minutes. Add tomatoes, pine nuts, and currants. Reduce heat to low and cook 5 minutes to blend flavors; season with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite.
  • Drain pasta, reserving 1 cup cooking liquid. Add saffron to reserved liquid and stir to dissolve. Return pasta and saffron water to pot. Add tomato mixture; toss over low heat until sauce coats pasta. Mix in breadcrumbs and transfer to bowl.

1 lb raw large shrimp, tails
2 cups dry white wine
1/2 cup finely chopped shallot
2 tablespoons chilled butter
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
12 ounces linguine
1 tablespoon salt
5 tablespoons extra virgin olive oil, divided
1/2 cup pine nuts, lightly toasted
2 cloves garlic, finely chopped
2 large sweet red peppers, seeded and juliened
2 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1/2 cup freshly grated padano cheese (optional)

Steps:

  • Shell, devein and butterfly shrimp; set aside.
  • In a saucepan, combine wine and shallots and bring to boil over high heat.
  • Boil until reduced to 2/3 cup, stirring occasionally.
  • Reduce heat to low and whisk in butter.
  • Remove pan from heat when bubbles appear on surface.
  • Season with salt and pepper.
  • Keep sauce warm over very low heat until ready to serve.
  • In a large cooking pot or pasta pot, fill 3/4 full with water and bring to a rolling boil.
  • Add 1 tablespoon of salt and 2 tablespoons of extra virgin olive oil.
  • Add linguini and cook as instructed on package; about 12 to 15 minutes or until el dente'.
  • While pasta is cooking, heat remaining 3 tablespoons of olive oil in a large frying pan over medium heat.
  • Add prepared shrimp, nuts and garlic; saute' for 2 minutes.
  • Add red peppers and saute' until peppers are tender and shrimp are opaque, about 2 minutes.
  • Drain pasta well and transfer to a large platter or a bowl.
  • Spoon sauce and prawn mixture over pasta and gently toss to coat well.
  • Sprinkle with basil and oregano, toss lightly.
  • Sprinkle grated Padano cheese on each serving.
  • Spinach fettucine is another pasta that is great in this recipe.

  • Meanwhile, heat olive oil in heavy large skillet over medium-low heat. Add minced garlic; stir 1 minute. Add red pepper flakes to skillet; stir 30 seconds. Add blanched broccoli florets; stir until heated through, about 2 minutes.
  • Add pasta to skillet and turn to coat with olive oil. Add fresh lemon juice and toss to coat. Mix in 1/3 cup Parmesan cheese. Season pasta generously with salt and pepper. Transfer to heated platter. Sprinkle with toasted pine nuts. Serve, passing additional Parmesan cheese separately.

1 pound linguini noodle
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • 1 Place the walnuts and pine nuts in a food processor or blender. Grind the nuts just until fine. (Don't overprocess into a paste.) 2 In a medium skillet, melt the butter over medium heat. Add the garlic and parsley and cook 1 minute. Stir in the ground nuts and ricotta. Stir to blend and heat through. 3 Meanwhile, bring about 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta, gently pushing it down until the pasta is completely covered with water. Stir well. Cook, stirring often, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. 2 tablespoons anchovy oil
2 garlic cloves, minced
2 teaspoons finely grated lemon zest (from 1 lemon)
1/4 cup homemade or store-bought plain dried breadcrumbs, toasted

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta and set aside. Return pot to medium and add anchovy oil and garlic. Cook, stirring, until fragrant, about 30 seconds.
  • Add anchovies; cook until almost dissolved, about 30 seconds. Add pasta, lemon zest, and enough pasta water to create a sauce that coats pasta. Season with coarse salt and ground pepper. Serve topped with breadcrumbs.
