Steps:
- Put water on to boil for potatoes in covered pot.
- Scrub and halve potatoes but do not peel, and boil them in covered pot, about 15 minutes.
- Meanwhile, heat oil and saute onion, cumin, coriander, turmeric, cayenne and black pepper in hot oil.
- When onions begin to soften add peas and break up.
- When potatoes are cooked, drain and quarter and add to peas and onions along with shrimp and yogurt. Heat shrimp and yogurt through but do not allow to boil or yogurt will separate.
- Chop mint or fresh coriander.
- Serve shrimp mixture with sprinkling of mint or coriander.

- Combine chicken broth, oyster sauce, soy sauce and sugar in a small bowl, and set aside.
- In a large skillet, heat the oil over medium-high heat. Add curry powder, garlic, and ginger; stir-fry for 10 seconds. Add peppers, onions, and scallions; stir-fry for 3 to 5 minutes. Stir in chicken stock mixture, and bring to a boil over high heat. Add shrimp and peas, and cook until hot. Add noodles, and cook until dish is heated thoroughly. Serve immediately.

- Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
- Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
- Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
- In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.

- Cook pasta according to package directions, adding snap peas during the last 1-2 minutes of cooking. - In a heavy skillet, heat 2 tablespoons of the butter and olive oil, and saute onion and curry powder until onion is translucent.
- Add shrimp, sugar, ginger, salt and pepper.
- Saute 3-4 minutes, then remove to a plate.
- In the skillet, melt remaining 4 tablespoons butter, stir in flour and cook 5 minutes.
- Slowly add cream, chicken stock and coconut milk, stirring constantly until mixture is smooth and thick.
- Return shrimp to pan, along with snap peas; heat through.
- Serve with steamed rice.

i whipped this up for dinner last night after a week of working many long hours. this was quick, easy and tasty. i steamed some jasmine rice in the rice cooker while i prepared this, and served this with my asian slaw. the leftovers were just as good the next day for lunch.

- sprinkle with curry powder, stirring.
- add shrimp and cook for 1-2 minutes, stirring.
- in a large bowl whisk coconut milk, lime juice and wine with cornstarch, until well blended.
- pour into skillet,stir in sambaal olek to taste.
- bring to boil,stirring, and lower heat to a simmer.
- cook until thickened, 2-3 minutes.
- add the peas, cook for 1-2 minutes, stirring.
- add scallions, stirring.
- serve over rice.
