DAD'S SIMPLE STEAK MARINADE
This recipe is one my father taught me. It is the simplest homemade marinade! Just 5 common ingredients! When used overnight, the soy sauce, Worcestershire sauce, and garlic make flank, skirt and sirloin steaks flavorful and, most importantly, tender for the grill! For more flavor, add Kosher salt and cracked black pepper to your steak while it cooks. Red wine vinegar or balsamic vinegar may be substituted for the red wine.

Steps:
- Whisk together the vegetable oil, soy sauce, red wine, Worcestershire sauce, and garlic in a bowl, and pour into a resealable plastic bag.
- To use the marinade, place the meat in the bag, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours to overnight. Discard the marinade after it has been used.

DAD'S JERKY MARINADE
My dad has been making beef jerky for about as long as I can remember. He started on an outdoor smoker before graduating to an indoor dehydrator. He has gotten my husband addicted to it. You can use any type of meat that you like. I usually look for large inexpensive roasts with as little fat and marbling as possible.

Steps:
- Stir together soy sauce, Worcestershire sauce, liquid smoke, and hot pepper sauce in a bowl. Season with garlic powder, onion powder, pepper, and sugar; stir until mixed.
- To use, toss one pound of thinly sliced meat with the marinade until well coated. Place into a resealable plastic bag, and squeeze out the air. Marinate in the refrigerator for 48 hours, mixing twice. Remove meat from marinade, and discard excess marinade. Prepare jerky according to the manufacturer's directions of your smoker or dehydrator.

DAD'S BARBECUE SAUCE
My father was the cook in the family. Any time we would go out to eat, he would come home and try to make a copy cat version. This is his barbecue sauce. I have never purchased any in the store because none of it comes close to this flavor. Don't let the long list of ingredients scare you. They are standard pantry items. It's easy to double the ingredients so you will have some always on tap!

- In large pot, saute shallot in bacon fat till it turns glassy.
- With heat on medium, add remaining ingredients.
- Simmer til sauce bubbles. If necessary, add water to thin sauce to your desired consistency.
- Pour up, refrigerate and enjoy!
- This is excellent on chicken for the grill.

DAD'S BBQ SAUCE
This sauce was my departed FIL's. He was quite proud of his smoked pork. It was a day long process cooking the meat while this sauce simmered inside. He would shred the pork, place on a burger bun, drizzle with this sauce, plop on some coleslaw (Mayo base) put the lid on the bun, then wait for the compliments. They were never in short supply!

- Dissolve cornstarch in water.
- Place all ingredients in large pot and simmer at least 30 minutes.
- Pureed fruit or fruit juice may be added.
- This makes a large batch of sauce. Leftovers should be refrigerated. If I am having guests I'll send a small jar home with them if they like the sauce.

- WHISK all ingredients well in a medium saucepan: One 7 oz. jar Dynasty brand plum sauce, 6 tablespoons tomato paste, 1/4 cup Apipharm brand Thyme and Wild Flower honey, 1/4 cup A-1 steak sauce, 1/4 cup white vinegar, 2 tablespoons Frank's buffalo wing sauce, 2 tablespoons fresh lime juice, 1 tablespoon pineapple juice, 1 1/2 teaspoons mesquite liquid smoke flavoring, 1 teaspoon fresh lemon juice, 1 teaspoon fresh orange juice, 1 teaspoon Lea & Perrin's Worcestershire sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon onion salt, 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cumin, 1/4 teaspoon ground ginger, 1/4 teaspoon ground mustard.
- SIMMER sauce over low heat.
- WHISK occasionally to refresh consistency.
- REMOVE from heat after 30 minutes.
- COOL barbecue sauce completely.
- FUNNEL into plastic squeeze bottles or Ball canning jars.
- USE as you would any barbecue sauce.
- SUGGESTION: Serve with barbecued chicken or ribs, or my favorite -- pulled pork sandwiches.
- STORE refrigerated and capped.
- ENJOY it while it lasts!

- In a medium saucepan, heat oil over medium heat. Add onion and garlic. Cook, stirring, until onion is soft and translucent, about 5 minutes.
- Stir in tomatoes, chile, Worcestershire, vinegar, molasses, and lemon juice. Simmer over medium-low heat until reduced by a fourth, stirring occasionally, about 45 minutes.
- Working in batches, purée sauce in a blender. Season with salt and black pepper. Refrigerate in a jar up to 2 weeks.

- Cut wings into sections and discard tips. Season with poultry seasoning salt, garlic salt, and black pepper.
- Preheat grill for medium heat and lightly oil the grate.
- Cook wings on the grill, turning occasionally, until skin is golden brown, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove wings from grill; keep grill hot.
