DAD'S PEACH ICE CREAM

"MY DAD was the ice cream maker at our house. We had an old-fashioned freezer that had to be cranked by hand, and he took great delight in turning the handle until the ice cream was just right! With the addition of fresh fruit that he picked in a nearby orchard, this was a very special treat."

Number Of Ingredients 8

4 cups whole milk
2-1/2 cups sugar
1/4 teaspoon salt
4 large eggs, beaten
5 cups heavy whipping cream
2 cups pureed peaches or nectarines
3 teaspoons vanilla extract
1/4 to 1/2 teaspoon almond extract, optional

Steps:

  • In a heavy saucepan, heat milk to 175°. Stir in sugar and salt until dissolved. Gradually stir a quarter of the hot mixture into eggs, mixing constantly. Return all to the saucepan, stirring constantly. Continue to cook and stir for 10-12 minutes or until a thermometer reads 160° and the mixture coats the back of a metal spoon. Remove from the heat; cool. Chill for at least 2 hours or overnight., In a large bowl, combine the cream, fruit, vanilla and almond extract if desired. Add the chilled milk mixture, stirring well., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving. Freeze according to manufacturer's instructions.

6 fluid ounces brandy
1 fluid ounce triple sec
1 fluid ounce creme de cacao
1 fluid ounce honey- and herb-flavored whiskey liqueur (such as Drambuie®)
½ gallon vanilla ice cream, softened, divided

Steps:

  • Mix brandy, triple sec, creme de cacao, and whiskey liqueur in a glass measuring cup.
  • Put about half the vanilla ice cream and half the brandy mixture in a blender; blend until smooth. Add remaining ice cream and brandy mixture; blend again until smooth. Store in freezer in the ice cream container.

A delicious sugar high, from my childhood, that the men from my family still indulge in. All the ladys just roll their eyes back in their heads, but my brother and I just keep serving ouselves and eat these Sundaes with a big smile!

2 tablespoons strawberry jam
1/8 cup maple syrup
1 glass milk

Steps:

  • Do I really need to tell you how to do this.
  • Scoop ice cream in dish.
  • Add Strawberry Jam on top of Ice Cream.
  • Drizzle syrup in a fiure 8 on top.
  • Grab a glass of milk, sit down and enjoy!
  • Any and all substitutions accepted if they have sugar in them!

This was the recipe my Dad used to make us Ice Cream. I still use it even though the eggs aren't cooked. I warn people of this before serving it to them as the USDA recommends cooking the eggs first.

4 eggs
2 1/4 cups sugar
5 cups milk
4 cups heavy whipping cream
4 1/2 teaspoons vanilla

Steps:

  • Add sugar gradually to all ready beaten eggs. Beat until stiff.
  • Add remaining ingredients and mix well.
  • Pour into ice cream drum that has been chilling in the freezer.
  • Freeze according to your ice cream makers instructions.
  • Make as many variations as you like from this basic recipe - add chocolate chips, oreos, peppermint sticks, heath bits, instant coffee, etc.
  • I usually let it process until it slows a bit before adding mix ins.
