Delicious dairy-free Irish cream recipe made with coconut milk, honey, and cocoa powder is a wonderful holiday treat!

2 13.5 oz cans coconut milk
1/3 cup honey
1 TBSP cocoa powder
1½ cups Irish whiskey or whiskey/bourbon of your choice
4 eggs (clean, fresh)
2 tsp instant coffee granules
1 tsp vanilla extract
1 tsp almond extract

Steps:

  • In a small sauce pan, bring 1 can coconut milk to a boil. Watch closely as it can boil over quickly.
  • Add honey and cocoa powder and reduce to a simmer.
  • Simmer, uncovered for about 30 mins or until liquid is reduced by about half.
  • Remove from heat and allow to cool.
  • Combine cooled condensed coconut milk and all remaining ingredients in a blender and blend until smooth. You can also use an immersion blender.
  • Store in a tightly sealed container in the refrigerator for up to 1 month.
  • It may separate slightly so gently stir or shake to reincorporate before serving.

Celebrate St. Patrick's Day with your very own dairy free Baileys mix! Delightfully boozy, and perfect for a creamy party beverage.

1 can full-fat coconut milk
1 can light coconut milk
1/3 cup maple syrup
½ cup cold brewed coffee
¾-1 cup Irish whiskey (such as Jameson)
Whipped cream (for garnish)
Shaved dark chocolate (for garnish)

Steps:

  • Add one can of full-fat coconut milk and maple syrup to a saucepan over medium-high heat. Bring to a boil, then reduce heat to medium and let cook for 10-15 minutes, until reduced by about half, then remove from heat.
  • Add the light coconut milk, coffee, and whiskey to the reduced coconut milk and whisk to combine. Refrigerate for at least 2 hours then enjoy cold with whipped cream and shaved chocolate!

27 ounces coconut cream (- that's two 13 1/2 ounces each full fat coconut milk/cream, usually about 17% to 22% per can)
1/4 cup maple syrup plus 1 tablespoon
1 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder
1 teaspoon instant coffee
pinch of salt
3/4 cup Irish Whiskey (- you can use up to one cup like me)

Steps:

  • Put the first six ingredients in a blender. That's everything except the whiskey.
  • Blend until creamy and smooth. It takes less than a minute at the most.
  • Add the Irish whiskey and stir.
  • Pour over ice and sip to your heart's content.

This dairy free homemade Irish cream tastes surprisingly like Baileys. Instead, it's made with silky cashew cream and flavored with cocoa, vanilla, and espresso.

3/4 cup raw cashews1 12-ounce can of sweetened condensed coconut milk1 tablespoon ground espresso2 teaspoons cocoa powder1 cup Irish whiskey1 teaspoon vanilla extract

Steps:

  • In a small pot, cover the cashews with water. Bring to a boil and simmer for 15 minutes. Turn off the heat and let the cashews sit for 15 more minutes.
  • Drain the water from the cashews. Put the cashews in the blender with 1 1/2 cups fresh water. Blend on high for 2-3 minutes or until smooth. If there are any solids still remaining, you can strain the liquid and return it to the blender.
  • Add the remaining ingredients to the cashew cream in the blender. Blend on high for one minute. You now have homemade Irish cream. Give it a taste and blend in any additional flavoring (cocoa powder, espresso, or vanilla) as you like.
  • Store your Irish cream in the fridge for up to two weeks. Serve cold.

  • Refrigerate the coconut milk overnight. Once you’re ready to make your mousse, open the three cans of coconut cream and poke a hole through the thick coconut layer at the top of the can and drain off the liquid milky contents of the can. You will be using the thick layer. The remaining thin, milky layer may be discarded or you can drink it or use it in another recipe.
  • Add the coconut cream to a chilled metal mixing bowl. Beat on medium-high speed for 5 minutes until the cream is thick. Next, add the powdered sugar and vanilla to the bowl and beat for an additional minute. Reserve 2 Tbsp of the mixture and place it in a covered container in the refrigerator to use later as the whipped cream topping.
  • Place the dairy-free bittersweet chocolate in a microwave safe dish. You can use chocolate chips or a chocolate bar that has been broken into pieces. Microwave on low power for 1 minute intervals, stirring each time, until the chocolate is just melted.
  • While continuously mixing, add the instant coffee to the bowl. Do the same, one at a time, with the melted chocolate and then the Jameson Irish Whisky. Continue to beat until evenly combined and then place the mixture in the refrigerator to chill while you work on the next part of the recipe.

  • In a medium or large pot, add the cans of coconut milk and whisk. Now whisk in the sugar. Bring to a low boil, stirring frequently. Simmer for about 8-10 minutes, while stirring frequently, until it cooks down and thickens slightly.
  • Remove from heat and stir in the espresso or coffee. Don’t have a coffee maker? Just buy a cup from the coffee shop and use that. Add in espresso/coffee to taste.
  • Add a pinch of salt and finally the Jameson, to taste. I added about 3/4 + 2 tbsp of whiskey and it was strong, but so is the original! Make it as strong or weak as you prefer.
  • Store in sealed jars and serve over ice, with coffee or tea, or in baked goods. The whiskey and espresso settles to the bottom of the jar slightly, so give it a good stir before using. I’m not positive how long this keeps in the fridge, but it’s been good in our fridge for a couple days now and I expect it to last 4-5 days. Well, not technically…!
