2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup dandelion flowers
1/4 cup canola oil
4 tablespoons honey
1 egg
1 1/2 cups milk

Steps:

  • Combine dry ingred. in large bowl, including petals & make sure to separate clumps of petals.
  • In a separate bowl mix together milk, honey, oil & beat in egg.
  • Add liquid to dry mix. Batter should be fairly wet & lumpy.
  • Pour into buttered bread tin or muffin tin.
  • Bake 400* muffins (12) 20-25 min, bread 25-30 min or until done.

This recipe is taken from a cookbook issued by employees and retirees from Santa Fe railroad in Topeka, KS in 1976. PS: You have to gather the dandelions yourself or pay your kids to do it for you!

3 quarts dandelion flowers
3 quarts boiling water
3 lbs sugar
6 oranges, sliced
2 lemons, sliced
1 tablespoon active dry yeast

Steps:

  • Pour the boiling water over the dandelion blooms and let stand for 3 days and 2 nights. Strain. To the liquid add the remaining ingredients and mix well. Let the mixture stand for 3 weeks then bottle.

It seems like a lot of greens but they cook down to almost nothing.And if you want you can replace the dandelion with spinach. I use hot sausage which gives this a real kick, but if you rather go for mild or just use chopped beef.

1 lb cooked pasta
1/2 lb crumbled sausage
1 lb chopped beef
1 cup breadcrumbs
2 tablespoons chopped fresh parsley
2 tablespoons finely chopped onions
2 cloves garlic, chopped
1 teaspoon salt
1 egg
1/4 cup milk
6 cups young stems removed dandelion greens
4 -6 cups of your favorite tomato sauce
1 teaspoon dried basil or 1 teaspoon dried marjoram
salt and pepper
1/2 cup grated parmesan cheese

Steps:

  • Blanch greens for 3 minutes and set aside.
  • Brown meats, onion and garlic, add bread crumbs, parsley, dried herbs, salt, pepper, egg, and milk.
  • Squeeze dandelion greens of all moisture.
  • In a buttered casserole alternate layers of dandelions, pasta, crumbled browned meat mixture and tomato sauce.
  • Top with cheese and bake 350 degrees for 20-30 minutes.
  • Garnish with hot pepper flakes and Parmesan cheese and serve with crisp fresh bread.

½ cup olive oil
⅛ cup balsamic vinegar
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound dandelion greens

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line 2 baking sheets with parchment paper.
  • Combine olive oil, vinegar, garlic powder, salt, and pepper in a bowl. Add leaves and toss until well combined. Lay the leaves in a single layer on the prepared baking sheets and drizzle with remaining olive oil mixture.
  • Bake in the preheated oven until dandelion chips are crisp, making sure they do not burn, 12 to 16 minutes. Leaves will stiffen as they cool.

¼ cup whole wheat flour
¼ cup steel cut oats
2 tablespoons brown sugar
1 tablespoon flax seeds
1 tablespoon chia seeds
8 large dandelion blossoms, yellow petals only
⅛ teaspoon dried lavender flowers
1 teaspoon vanilla
¾ cup water, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet or line with parchment paper.
  • Combine flour, oats, brown sugar, flax, chia seeds, and dandelion petals in a bowl. Crush lavender flowers with fingers; add to flour mixture. Stir in vanilla extract and enough water to create a moist dough that holds together when squeezed. Portion dough into 6 cookies and arrange on prepared baking sheet.
  • Bake in preheated oven until cookies are dry and fragrant, about 10 minutes. Allow to cool before removing from baking sheet.
