Steps:
- In a medium bowl, cream together the butter and 2/3 cup of flour. Divide into 2 equal parts, and roll each half between 2 pieces of waxed paper into a 6 x12 inch sheet. Refrigerate.
- In a large bowl, mix together the dry yeast and 3 cups of the remaining flour. In a small saucepan over medium heat, combine the milk, sugar and salt. Heat to 115 degrees F (43 degrees C), or just warm, but not hot to the touch. Mix the warm milk mixture into the flour and yeast along with the eggs, and lemon and almond extracts. Stir for 3 minutes. Knead in the remaining flour 1/2 cup at a time until the dough is firm and pliable. Set aside to rest until double in size.
- Cut the dough in half, and roll each half out to a 14 inch square. Place one sheet of the cold butter onto each piece of dough, and fold the dough over it like the cover of a book. Seal edges by pressing with fingers. Roll each piece out to a 20x 12 inch rectangle, then fold into thirds by folding the long sides in over the center. Repeat rolling into a large rectangle, and folding into thirds. Wrap in plastic and refrigerate for at least 30 minutes.
- Remove from the refrigerator one at a time, and roll and fold each piece two more times. Return to the refrigerator to chill again before shaping. If the butter gets too warm, the dough will become difficult to manage.
- To make danishes, roll the dough out to 1/4 inch thickness. The dough can be cut into squares, with a filling placed in the center. Fold 2 of the corners over the center to form a filled diamond shape. Or, fold the piece in half, cut into 1 inch strips, stretch, twist and roll into a spiral. Place a dollop of preserves or other filling in the center. Place danishes on an ungreased baking sheet, and let rise until doubled. Preheat the oven to 450 degrees F (220 degrees C). Danishes can be brushed with egg white for a shiny finish.
- Bake for 8 to 10 minutes in the preheated oven, or until the bottoms are golden brown.

BUTTERHORNS
To DIE for, buttery crescent rolls that divide up the work between two days. This yeast-raised dough may be kept in the refrigerator, and used over a period of 2 weeks! So you can make them fresh when you like.

- Crumble the compressed yeast into a small bowl, and mix in 2 teaspoons of sugar. Set aside. In a small saucepan, heat milk until a skin forms on the top. Remove from heat, and set aside to cool slightly.
- Place 1 cup of butter and remaining 1/2 cup of sugar into a large bowl. Pour the hot milk over them, and stir until butter is melted. Let the mixture cool to just above body temperature. Beat in the eggs, one at a time mixing well after each one, then stir in the yeast mixture. Add 3 cups of flour, and mix until well blended. Gradually mix in the remaining flour, mixing as well as you can. The dough will be sticky. Cover the bowl with a towel, and let rise in a warm place until doubled in size, about 1 hour.
- After the dough has risen, punch down, cover, and refrigerate overnight.
- Divide the dough into four pieces. Use one piece at a time, leaving the rest in the refrigerator. On a lightly floured surface, roll the piece of dough out into a 12 inch circle. Spread about 2 tablespoons of butter over the surface. Cut into 8 wedges, as you would a pizza. Roll each wedge starting at the wide end, and ending at the point. Place onto a lightly greased cookie sheet, and bend the ends so that they are crescent shaped. Cover with a towel, and let rise in a warm place until doubled. This will take about 2 hours because the dough is cold.
- Preheat the oven to 375 degrees F (190 degrees C). Bake for 15 minutes in the preheated oven, or until golden.

BUTTERHORNS WITH HAZELNUTS
Easy-to-follow recipe for butterhorns with hazelnut topping. Very delicious butterhorns which are perfect as a snack in the afternoon or in the lunchbox.

- Melt the butter; set aside and let it cool off.
- In a large bowl; dissolve the yeast in the lukewarm milk. If using dry yeast - add this with the flour instead.
- Add sugar.
- Add the melted and cooled butter.
- Add an egg and stir.
- Add the flour and salt and stir/knead until the dough has a good consistency.
- Let the dough rise some place warm for about 30 minutes.
- While the dough rises prepare the hazelnut filling; mix sugar, soft butter, and chopped hazelnuts together.
- Divide the dough into two pieces and roll them out into to circles using a rolling pin. Divide each circle into 8 slices.
- Divide the hazelnut filling onto the 16 slices and roll them so they become horns.
- Place the hazelnut horns on an oven plate lined with parchment paper.
- Brush the horns with a beaten egg and decorate them with finely chopped hazelnuts.
- Let the horns rise for another 30 minutes.
- Bake the horns at 225 C (440 F) for about 8 minutes or until they are nice and golden.
BUTTERHORNS

- 1. Mix together the first four ingredients as for pastry and set aside.
- 2. Set yeast in warm water and sugar, set aside for 10 minutes. Scald milk, cool and add egg. Add yeast to egg and milk and mix. Make a well in the pastry mixture, add the liquid all at once and mix thoroughly. Cover tightly in bowl with waxed paper and damp cloth and refrigerate at least 2 hours, no longer than 48 hrs.
- 3. Remove from fridge, flour board well and roll out paste to rectangle. Cut into 1" wide x 12" long strips (I use a pizza cutter). Twist and make into a circular shape. Place on greased or parchment papered cookie sheet and let rise 1 1/2 hours. Bake 12-15 minutes at 400F. Frost and sprinkle with your choice of nuts or coconut. toasted coconut is my personal favorite.
- 4. We used a very thin frosting of icing sugar and milk.
GERMAN BUTTERHORNS
This is a fabulous old recipe...the pastry has yeast in it yet requires no rising or kneading! This recipe is great for bakers who are not yet experts- These butterhorns are shaped like cresents and are beautiful anytime of the year but are extra special to serve during the holidays. I did see this recipe posted on another sight but not here on zaar. This recipe does take a bit of time but it is sooo worth it!!!! Please note that you need to refrigerate the pastry dough for at least 6hrs (I usually do mine overnight to split the work up:)-I did not include this time in the prep time. Please note that this recipe asks that you roll the dough out on a surface sprinkled with powdered sugar-not flour...please make sure you have enough before hand.

- Sift together flour, sugar, salt and yeast. Cut in shortening until dough resembles pie dough. Add egg yolks, vanilla and sour cream. Mix with hands until dough forms a ball. Divide into 5 even balls and refrigerate for 6 hrs or overnight.
- When ready to roll out the dough make the filling by beating the egg whites until stiff. Add sugar and vanilla; beat well. Fold in walnuts.
- Sprinkle bread board with powdered sugar and roll each ball of dough into a 12 inch circle. Cut each circle into 6 pie shaped pieces. Spread with filling and roll up, starting at the wide end.
- Bake at 375 degrees for 15 minutes. Butter horns will be a light golden color when done.
- At this time in a small sauce pan melt the butter for the glaze, remove from heat and stir in powdered sugar and the almond extract -- add a bit more butter or sugar as needed so that you can dip the tops of the butterhorns in the glaze and place on wax paper to set up.

- In a large bowl, beat butter and cheese until blended; Combine flour and salt; gradually add to cheese mixture and mix well. Cover and refrigerate for 4 hours or overnight. , Turn onto a lightly floured surface; divide into thirds. Roll each into a 12-in. circle; cut each circle into 12 wedges. Roll up wedges from the wide ends and place point side down 2 in. apart on greased baking sheets. , Bake at 350° for 30 minutes or until light golden brown. Remove to wire racks. BUTTERHORN DANISHES WITH STRAWBERRY CREAM CHEESE OR MAPLE WALNUT FILLING
Steps:
- Put yeast and sugar in bowl add the warm water and let sit for 10 minutes.
- In a bowl, measure out the flour, second amount of sugar and the salt. Cut in the butter using a pastry blender. The mixture should be well blended.
- Place milk in a liquid measuring cup or bowl and microwave for about 45 seconds to warm it up. Add the slightly beaten egg.
- Combine the yeast mixture & the milk/egg mixture into the dry ingredients. Stir until it's well blended. The end result is a cross between a batter and a kneadable dough. Don't add more flour.
- Cover the bowl in plastic wrap and then refrigerate for at least 4 hours or overnight. The dough will increase in size a bit, so make sure your bowl is larger than the mound of dough.
- After the dough has chilled sprinkle flour on your counter. Roll the dough out to 1/2 inch thickness. The dough will be sticky, but it's easiest to work with when it's cold, so don't remove the bowl of dough from the fridge until your ready to use it.
- Use a pizza cutter to slice 3/4 inch strips. Twist them, starting at one end and then roll it up into a circle.
- Put the twists onto a greased pan. Let rise for about an hour or until doubled in size. (I turn my oven on to preheat for about 2 minutes, then turned it off & had my rolls rise in the warm oven.)
- After the dough rises, add the toppings of choice. (See below)
- Bake at 350 for about 10-15 minutes. Watch carefully for browning after about 7-8 minutes, if they're getting too brown, place some foil over the top. (Just lay it there, don't tuck in edges or anything).
- Make a powdered sugar icing by mixing 1 cup of icing sugar, 1/2 teaspoon of vanilla and enough milk to make a spreadable consistency. Drizzle over butterhorns as desired and enjoy!

- In a large bowl combine the four and salt. Add in the cubed butter and cut in using a pastry cutter or fork until the mixture is crumbly. Add in the egg yolk and sour cream and stir until combined and the dough comes together. Wrap the dough in cling wrap and refrigerate for 3 hours or overnight.
- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- For the filling, in a small bowl combine the light brown sugar and cinnamon.
- Divide the dough into 3, equal portions. Roll each portion out on a floured surface into a thin circle, 12-inches in diameter. Sprinkle 1/3 of the filling mixture onto each dough round.
- Using a pizza cutter, cut each round into 12 equal wedges. Roll up each wedge, starting at the wide edge tightly. Place onto the prepared baking sheet with the seam side down and pinched.
- Bake for 16-18 minutes, or until the butterhorns are lightly golden. Some of the filling might leak out, this is fine.
- Transfer to a wire rack to cool completely.

- Divide dough into 4 parts. Roll out each part like pie dough, and cut into 12 pie shaped wedges. Roll big end to little end.
