TEKKA DON NO POKE

This Hawaiian poke-style tuna rice bowl is packed with delicious, umami-rich protein.

Number Of Ingredients 11

1/4 cup Japanese soy sauce
1 tablespoon plus 1 teaspoon mirin (sweet rice wine)
2 teaspoons toasted sesame oil
1 to 2 teaspoons tobanjan (chile bean sauce), preferably a Japanese brand
1 teaspoon granulated sugar
1 pound sushi-grade tuna, cut into 1/2-inch cubes
1/2 medium Hass avocado, peeled, pitted, cut into 1/2-inch pieces
6 cups cooked short-grain white rice or cooked, vinegared short-grain white rice, warm
1 nori seaweed sheet
1/4 cup thinly sliced fresh shiso leaves (also called Japanese mint and perilla) or scallion greens
1 teaspoon toasted sesame seeds

Steps:

  • Combine the soy sauce, mirin, sesame oil, tobanjan, and sugar in a medium mixing bowl and stir until the sugar dissolves. Add the tuna and avocado to the bowl, toss well, and set aside to marinate for a few minutes but no more than 5 minutes.
  • Divide the rice among 4 wide bowls. Top each bowl with the tuna and avocado, leaving the sauce behind. Then drizzle the sauce over the tuna and avocado. Tear the nori into small pieces and scatter some over each bowl; top with the shiso and sesame seeds. Eat right away.

1 1/2 pounds sashimi-grade ahi tuna, cut into 1/2-inch cubes
4 ounces green onion, sliced
4 ounces yellow onion, sliced
1 1/2 ounces oyster sauce
1 ounce soy sauce
1 ounce Chile Pepper Water, chilled, recipe follows
1 ounce brown ogo seaweed, roughly chopped
2 teaspoons Hawaiian salt
10 Hawaiian chiles
4 cloves garlic
2 ounces white vinegar
2 teaspoons Hawaiian salt
2 tablespoons limu kohu seaweed, optional

Steps:

  • In a large bowl, combine the tuna, green onion, yellow onion, oyster sauce, soy sauce, Chile Pepper Water, ogo and salt. Mix together and chill before serving.
  • Blend the chiles, garlic and vinegar in a blender or food processor. Transfer the mixture to a small saucepan along with the salt and 2 cups water and bring to a boil. Remove from the heat and add the limu kohu. Let cool, then chill.

The technique for making poke is so basic that even the most inexperienced cooks can get something close to what they'd get in a restaurant. But the one catch is you have to use only the freshest possible tuna, even if that means frozen.

¼ cup soy sauce
2 tablespoons sesame oil
1 teaspoon grated fresh ginger root
⅓ cup thinly sliced green onions, plus more for serving
2 tablespoons crushed, roasted macadamia nuts
1 tablespoon finely crumbled dried seaweed
½ teaspoon hot red pepper flakes
½ teaspoon kosher salt, or to taste
1 pound sushi-grade ahi (yellowfin) tuna, cut into 3/4-inch cubes
1 teaspoon toasted sesame seeds
1 dash Lemon juice, lime juice, or seasoned rice vinegar

Steps:

  • Whisk soy sauce, sesame oil, grated ginger, sliced onions, macadamia nuts, seaweed, pepper flakes, and salt together in a bowl.
  • Place cubed tuna into bowl. Pour in marinade and stir to distribute evenly. Cover and refrigerate 2 hours. Mix again.
  • Serve topped with toasted sesame seeds, sliced green onions, and a sprinkle of lemon or lime juice, or seasoned rice vinegar.
