1/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks
1 dark chocolate candy bar (6.8 ounces), chopped
1/2 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a large saucepan, mix sugar, cornstarch and salt. Whisk in milk until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Reduce heat to low; stir in chocolate until melted. Remove from heat; stir in vanilla. Cool 15 minutes, stirring occasionally., Transfer to a bowl; press plastic wrap onto surface of pudding. Refrigerate until cold. If desired, serve with whipped cream.

85g leftover Christmas pudding or Christmas cake, crumbled
3 tbsp brandy or orange liqueur (or use the juice from the pears)
410g can pear quarters, in juice
8 scoops of ice creams (we used stem ginger ice cream)
25g toasted chopped hazelnuts
100g bar dark chocolate
50ml double cream
1 tbsp brandy or orange liqueur (or use orange juice)
zest 1 orange

Steps:

  • First, make some shavings from the bar of chocolate by dragging a large knife over the surface. You only need a little - enough to top the sundaes. Set the shavings aside and break the remaining chocolate into a saucepan. Add the remaining sauce ingredients and heat gently, stirring, until the chocolate melts and you have a smooth glossy sauce.
  • Crumble the cake or pudding into sundae glasses and drizzle over the alcohol or pear juice. Top with the pear quarters and ice cream. Drizzle over the chocolate sauce and top with the hazelnuts and chocolate shavings.

⅔ cup sugar
¼ cup unsweetened cocoa powder (not Dutch processed)
2½ tablespoons cornstarch
⅛ teaspoon salt
2½ cups whole milk
1½ ounces semi-sweet chocolate, finely chopped (best quality such as Ghirardelli)
2 teaspoons vanilla extract
Toppings, such as whipped cream, fresh berries, sprinkles, candies and maraschino cherries (optional)

Steps:

  • Mix the sugar, cocoa, cornstarch and salt in a heavy medium saucepan. Add half of the milk and whisk until the mixture is smooth. Whisk in the remaining milk. Continue whisking over medium heat until the pudding thickens and comes to boil, about 8 minutes. Continue to boil 1 minute longer, whisking constantly.
  • Remove the pudding from the heat. Add the chopped chocolate and vanilla; whisk until the chocolate melts and the pudding is smooth. Divide between 4 dessert dishes. Cover the puddings by placing a small piece of saran wrap inside the dessert dishes and directly over the pudding (this prevents a film from developing at the top). Cool the puddings in the refrigerator until cold and set, 2-3 hours, and then top with whipped cream and toppings and serve.

2 tablespoons all-purpose flour
1 egg
2 cups milk

2 large eggs
1 cup sugar
2 teaspoons vanilla bean paste
1/2 cup cocoa powder
1/4 cup all-purpose flour
1 stick (8 tablespoons) salted butter, melted
2/3 cup heavy whipping cream

Steps:

  • Coat the insides of four 6-ounce ramekins with baking spray and place them in a 9-by-13-inch casserole dish. Preheat the oven to 325 degrees F.
  • Add the eggs, sugar and vanilla bean paste to a bowl. With an electric mixer, beat the mixture until light and fluffy, about 5 minutes. Sift in the cocoa and flour and fold in with a rubber spatula until just combined. Stir in the melted butter.
  • Divide among the ramekins, then add hot water to the casserole dish, coming halfway up the sides of the ramekins. Bake until the edges of the puddings are set but the centers are gooey, about 40 minutes.
  • Allow to cool for 10 minutes.

2 1/2 cups/590 milliliters whole milk
1/2 cup/120 milliliters heavy cream
1/3 cup/67 grams light or dark brown sugar
2 tablespoons/15 grams unsweetened cocoa powder

Steps:

  • In a small heatproof bowl, whisk together egg and yolks. Set aside.
  • Place chocolate, butter and vanilla extract in a food processor or blender but don't turn on.

Run the machine until the pudding is very smooth (the hot milk mixture will melt the chocolate).
  • Pour into individual bowls or teacups or 1 large decorative bowl and cover with plastic wrap. Refrigerate until firm and cold, at least 4 hours for individual servings and as many as 8 hours for 1 large bowl. Pudding can be made 3 days ahead. Serve with whipped cream or whipped crème fraîche, decorated with chocolate shavings and a pinch of sea salt, if you like.

2½ Tbsp. cornstarch
½ cup (99g) sugar
2 oz. (56g; about ⅓ cup) dark chocolate, chopped
3 Tbsp. dark Dutch-process cocoa powder
1 tsp. vanilla extract
¾ tsp. sea salt
1½ cups (340g) Brooklyn Brewery Black Chocolate Stout, or other stout of choice
1½ cups (340g) unsalted butter, cut into ½-inch pieces
1½ cups (126g) dark Dutch-process cocoa powder
3 cups (360g) all-purpose flour
2¾ cups (544g) sugar
¾ Tbsp. baking soda
1½ tsp. salt
1 cup (227g) sour cream
3 large eggs, at room temperature
16 Tbsp. (1 cup, 8 oz.) cold unsalted butter
7 cups (795g) confectioners' sugar, plus more for thickening
¾ cup Salted Dark Chocolate Pudding
½ cup (42g) dark Dutch-process cocoa powder
¼ tsp. salt

Steps:

  • In a small bowl, whisk together the ¼ cup whole milk and the cornstarch until smooth. Set aside.
  • In a medium saucepan, combine the remaining 1¾ cups milk, sugar, dark chocolate, dark Dutch-process cocoa powder, vanilla extract and sea salt. Heat over medium-low heat, whisking, until the chocolate is melted.
  • Whisk the cornstarch mixture into the chocolate mixture until fully incorporated.
  • Reduce the heat to low, and continue to stir briskly with a wooden spoon or a heatproof spatula. The mixture will come to a simmer and will slowly begin to thicken.
  • Continue to cook for 1 to 2 minutes, or until the pudding coats the back of the spoon and slowly drips off. It will be thick and will just be starting to bubble. Remove the pudding from the heat and pour into 4 serving ramekins or bowls. Let cool.
  • Cover with plastic wrap, refrigerate the pudding until it sets, and serve.
  • Cut the cold butter into ½-inch pieces. Let it come to room temperature.
  • In the bowl of a stand mixer fitted with a paddle attachment, combine the butter, 3 cups of the confectioners' sugar, ½ cup dark Dutch-process cocoa powder, ¼ teaspoon salt, and ¾ cup Salted Dark Chocolate Pudding, and mix on low until just incorporated. Then beat on medium-high until the mixture is creamy and ingredients are incorporated, about 1 minute. Scrape down the sides of the bowl with a rubber spatula.
  • Add more confectioners' sugar, 1 cup at a time, and mix on low until the frosting is thick but spreadable. Beat for 1 minute after each addition. You may not need to add all the remaining sugar. Once you have your desired consistency, scrape down the sides of the bowl.
  • Raise the speed to medium-high, and beat for 3 to 4 minutes, or until very light and fluffy. The buttercream should be thick but spreadable. If the buttercream appears too thick, add more cream, 1 tablespoon at a time. If it appears too thin, add more confectioners' sugar, 1 heaping tablespoon at a time.
  • Preheat the oven to 350ºF. Grease two 9-inch cake pans with butter and dust with flour. Line with parchment rounds and grease the rounds.
  • In a large heavy saucepan over medium heat, bring the stout and unsalted butter to a simmer. (You can also melt the butter in your oven or in a large, microwave-safe bowl in a microwave oven and then whisk in the beer.) Remove the stout-butter mixture from the heat, add the Dutch-process cocoa powder and whisk until the mixture is smooth. Let cool for 5 minutes.
  • While the stout-butter mixture cools, in a large bowl, whisk together the flour, sugar, baking soda and salt.
  • In a separate large bowl, whisk together the sour cream and eggs.
  • Add the stout-butter mixture to the egg mixture and whisk to combine. Then add the flour mixture, and combine with a rubber spatula until all the ingredients are incorporated and the batter is smooth, with no lumps. Be sure to scrape the bottom of the bowl to incorporate any dry flour bits.
  • Divide the batter equally between the prepared cake pans. Bake for 35 to 40 minutes, or until a toothpick inserted in the center of each layer comes out clean. Transfer to a rack to cool.
  • Frost the cake with the Dark Chocolate Pudding Buttercream.

  • For graham cracker crumb layer:
  • Preheat oven to 300°F. Line rimmed baking sheet with parchment paper. Combine all ingredients in processor. Using on/off turns, blend until coarse crumbs form. Spread crumbs out on prepared baking sheet (if necessary, break up any large pieces with fingertips). Bake until crumbs are crisp, stirring once, about 10 minutes. Cool. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.
  • For puddings:
  • Whisk sugar, cornstarch, cocoa powder, espresso powder, and salt in heavy medium saucepan. Add egg yolks and whisk to blend (mixture will resemble wet sand). Gradually whisk in milk, then cream. Whisk constantly over medium heat until mixture comes to boil, then boil 30 seconds. Remove from heat.   • Spoon 1/3 cup pudding into each of six 1-cup glasses; spread evenly. Sprinkle each with graham cracker crumbs, dividing equally. Top each with 1/3 cup pudding, spreading evenly. Cover each with plastic wrap, pressing plastic directly onto pudding. Chill at least 2 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • For marshmallow topping:
  • Blend all ingredients in large bowl of stand mixer fitted with whisk attachment. Set mixer bowl with egg white mixture over saucepan of simmering water. Using hand whisk, whisk mixture constantly until instant-read thermometer inserted into mixture registers 160°F, about 6 minutes. Attach mixer bowl with egg white mixture to stand mixer again and beat on high speed until marshmallow topping forms stiff peaks, 6 to 8 minutes.
  • Top each pudding with 2 large spoonfuls of marshmallow topping, covering top completely and creating peaks, if desired. DO AHEAD: Can be made 2 hours ahead. Chill.
  • Using kitchen butane torch, lightly toast marshmallow topping until golden in spots.

2 tablespoons butter or 2 tablespoons margarine
1 teaspoon vanilla extract
3 cups vanilla ice cream

Steps:

  • In a microwave-safe bowl, combine sugar, cocoa, cornstarch and salt.
  • Gradually stir in milk until smooth.
  • Microwave uncovered, on high for 7-10 minutes, stirring every 2 minutes, until sauce comes to a boil.
  • Stir in butter and vanilla.
  • Serve warm over ice cream.
  • Store leftovers in refrigerator.
