FAVORITE FRENCH CANADIAN MEAT PIE



Favorite French Canadian Meat Pie image

I'm a seventh-generation French Canadian, and my ancestors started the tradition of serving this meat pie on Christmas Eve. One year I didn't make it, and my daughter and I felt something was missing. The savory pie goes well with salad and fresh rolls for a lighter meal, and it's good served in small portions with turkey and all the trimmings, too.

Number Of Ingredients 15

1-1/4 pounds ground pork
1/2 pound ground beef
1/4 pound ground veal
1 cup grated peeled potatoes
1/2 cup grated onion
3 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon dried savory
1/4 teaspoon rubbed sage
1/8 teaspoon ground cloves
1/4 cup plus 2 tablespoons water, divided
1/4 cup dry bread crumbs
1 egg
Dough for double-crust pie

Steps:

  • In a large skillet over medium heat, cook the pork, beef, veal, potatoes and onion until meat is no longer pink; drain. Stir in the garlic, seasonings and 1/4 cup water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes, stirring frequently., Remove from the heat; cool to room temperature. Stir in bread crumbs. Combine egg and remaining water; stir into meat mixture. , Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill with meat mixture. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Cover edges loosely with foil., Bake 15 minutes. Remove foil. Reduce heat to 375°; bake 30-35 minutes or until crust is golden brown.

Good Old Meat Pie image

A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

Number Of Ingredients 12

1 recipe pastry for a 9 inch single crust pie
3 tablespoons margarine
½ cup chopped onion
1 potato, diced
⅓ cup all-purpose flour
½ teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon black pepper
1 ¼ cups beef broth
1 carrot, chopped
1 cup frozen green peas
2 cups cubed cooked or leftover beef

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
  • Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
  • Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

This easy meat pie is made is a hearty and delicious mixture that is baked inside a flaky pie crust!

Number Of Ingredients 14

1 pound lean ground pork
½ pound lean ground beef
1 small onion (finely diced)
2 cloves garlic (minced)
1 large russet potato (peeled & cubed)
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon ground sage
¼ teaspoon dried thyme leaves
½ teaspoon allspice
⅛ teaspoon cloves
½ cup beef broth
1-2 tablespoons breadcrumbs (if needed)
pastry for a 9-inch double-crust pie

Steps:

  • Bring potatoes to a boil in salted water. Simmer 15 minutes or until tender. Drain well and mash.
  • While potatoes are cooking, brown ground beef, pork, onion, and garlic until no pink remains using a spoon to break it up. Add remaining ingredients (including mashed potatoes) except for pie crust and bread crumbs.
  • Bring to a boil, reduce heat and simmer 15 minutes or until thickened. Add 1 tablespoon of breadcrumbs to help the mixture hold together if needed. Cool for 20 minutes.
  • Preheat oven to 425°F.
  • Line a deep-dish pie plate with crust and add filling.
  • Add top crust and seal edges. Add a few slits to allow steam to escape. Brush crust with beaten egg if desired.
  • Bake for 45-55 minutes or until bubbly and crust is golden.

Pie Crust Recipe
2 cups flour
1/2 teaspoon salt
2/3 cup shortening
6-7 tablespoons cold water
2 lb ground beef
1/4 cup oil
2 medium onions
3 cloves fresh garlic
2 shredded carrots
1 cup celery
2 sm. cans cream of chicken soup
1 and 1/3 cups Kraft Parmesan Cheese
Salt and pepper to taste
6 cups mashed potatoes

Steps:

  • Pie Crust: Stir together flour and salt. Using a pastry blender, cut shortening till pieces are pea sized. Add water 1 tablespoon at a time mixing in each time. Divide in half, forming each half into a ball. On a lightly floured surface roll dough into a 12 in. circle. To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate being careful not to stretch dough. Crimp pastry around the edge of pie plate.
  • Brown and season meat. Add onions, garlic, and veggies. Cook slightly. Add soup, parmesan cheese, and seasonings. Divide evenly in pie crusts and top with mashed potatoes.
  • Bake for 35-45 minutes at 350 degrees F.

3/4 cup white sugar
1/2 cup all-purpose flour
3 cups half-and-half (or milk)
1/2 teaspoon salt
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla
1 cup coconut, flaked
1 tablespoon coconut, toasted
1 pie crust, 9-inch deep dish
3 egg whites
1/4 teaspoon cream of tartar
8 tablespoons sugar
1/2 teaspoon vanilla

Steps:

  • Preheat oven 400 degrees.
  • Bake pie crust for 8 minutes. Let cool.
  • Combine sugar, flour, salt and milk in saucepan.
  • Cook and stir over medium heat until mixture boils. Boil 2 more minutes. Remove from heat. Temper egg yolks into mixture. Cook over low heat 2 to 3 more minutes.
  • Remove from heat. Stir in butter, vanilla and coconut.
  • Cover with plastic wrap and let cool.
  • Pour into baked pie shell.
  • Beat egg whites and cream of tartar until fluffy. Add sugar and vanilla. Beat until stiff peaks.
  • Spoon on top of custard.
  • Sprinkle with toasted coconut.
  • Bake 400 degrees until lightly brown, about 8 minutes
  • Chill.

1 cup margarine
3/4 cup dark brown sugar
1/2 cup sugar
1 tablespoon molasses
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/8 teaspoon cinnamon
1 1/2 cups quick oats
2 teaspoons very hot water
1/4 teaspoon salt
1 (7 ounce) jar marshmallow cream
1/2 cup shortening
1/3 cup powdered sugar
1/2 teaspoon vanilla

Steps:

  • In large bowl, cream margarine, sugars, molasses, vanilla, and eggs.
  • Combine flour, salt, baking soda, and cinnamon.
  • Add to the creamed mixture; mix in the oats.
  • Drop dough by TBSP on ungreased sheets.
  • Bake at 350°F.
  • Bake for 10-12 minutes,or until just starting to brown around the edges.
  • They will look moist; don't overcook.
  • While the cookies bake prepare the filling.
  • In small bowl, dissolve the salt in the hot water.
  • Allow this to cool.
  • Combine marshmallow cream, shortening, powdered sugar, and vanilla in med bowl; mix on hi until fluffy.
  • Add the cooled salt water and mix well.
  • Spread filling on flat side of one cookie, press 2nd cookie on top.

  • In a food processor, place the flour and baking powder. Pulse for one second to combine. Add the butter and pulse for a few seconds at a time, until the mixture has a coarse and grainy texture. Add the egg, water and vinegar, pulsing a few seconds at a time, until a ball begins to form. Remove the dough from the processor. Form into a ball with your hands, dust with flour and cover with plastic wrap. Refrigerate for about 1 hour.
  • In a skillet, brown the onions and garlic in the oil. Add the mushrooms and cook until their water has evaporated. Add the ground pork and cook, breaking it up with a spoon, until cooked through. Season with salt and pepper. Let cool. Add the remaining ingredients and stir to combine.
