DECADENT CHOCOLATE CHERRY PIE
Who doesn't love chocolate and cherries together?? This pie is rich and creamy and probably should be a sin!!! Graham cracker crust, Ghirardelli chocolate, and whipping cream...well if its a sin I will take my chances ;-) PS..Pies arent my speciality but this isn't to bad!!

Steps:
- 1. Prepare Graham cracker pie crust. Mix the graham cracker crumbs, sugar, cinnamon in a bowl. Pour melted butter over the mixture. Spread evenly over a 9 inch pie dish. Place in the frig for one hour or the freezer 20min.
- 2. Preheat Oven to 300.
- 3. In a small sauce pan over low heat melt chocolate chips. Stirring until completely smooth and set aside.
- 4. In a large mixing bowl beat cream cheese with an electric mixer until creamy, then add melted chocolate.
- 5. Once chocolate is blended well. add corn syrup then one egg at a time. Then add cream and vanilla
- 6. Pour into prepared pie crust.
- 7. Bake at 325 for 40-45 min until center in almost set.
- 8. Cool then cover and refrigerate for atleast 3 hours
- 9. Then top with cherry pie filling then sweetened whipped cream...use about half of the cream and add more to the pieces if desired
- 10. Drizzle each piece with chocolate if desired
- 11. Store remaining pie covered in frig

- Line a 9-in. pie plate with foil and grease the foil with 1 teaspoon butter; set aside. , In a small saucepan over low heat, melt 1 cup chocolate chips with 1/4 cup butter; quickly spread in an even layer over bottom and sides of prepared pan. Freeze for 30 minutes., In a small saucepan over low heat, heat the condensed milk, salt and remaining butter and chips until melted; stir until well blended. Gradually stir in the water; cook over medium heat for 5 minutes. Add amaretto; cook for 5 minutes or until thickened, stirring constantly. Cool to room temperature. , Fold half of whipped cream into chocolate mixture. Using foil, lift chocolate shell out of pan; gently peel off foil. Return shell to the pie plate; spoon filling into shell. Garnish with remaining whipped cream; sprinkle with almonds. Chill for 3 hours or until set.

CHOCOLATE AMARETTO PIE
This is a yummy, unique pie if you are looking for something different. It is very tasty and rich, but not too heavy.

- Preheat oven to 350 degrees.
- In a large bowl, beat cream cheese, chocolate and salt until well blended.
- Gradually beat in sweetened condensed milk until smooth.
- Add eggs and mix well.
- Stir in Amaretto and almonds.
- Pour into pie shell.
- Bake for 30 to 35 minutes or until center is set.
- Allow to cool.
- You can serve warm or chilled.
- Store in refrigerator.

- For Crust:
- Preheat oven to 350ºF.
- In a medium bowl, whisk flour, sugar and salt to mix. Cut in butter until mixture resembles coarse crumbs. Press firmly onto the bottom and up sides of a 9" pie plate. Bake at 350° for 15-20 minutes or until light golden brown. Cool completely.
- For Filling:
- In a medium saucepan, combine sweetened condensed milk, chocolate chips and salt. Cook and stir over low heat until chocolate melts. Stir in pie filling, liqueur and extract. Pour into cooled crust. Chill 2-3 hours or overnight until firm.
- Garnish with Almond Buttercream (or whipped cream), and maraschino cherries if desired.
- For Almond Buttercream:
- In medium bowl, beat butter, beat in rest of ingredients. Place into a pastry bag with decorator's tip of choice. Makes enough to lightly decorate top.

- Put milk into a sauce pan or dounle boiler. Add chocolate and beaten egg.
- Heat gently until chocolate is melted, stirring constantly.
