Rich and Delicious Banana Bread image

This is an old family recipe that is requested frequently by the children. It's simple to make, rich and delicious.

½ cup shortening
1 cup white sugar
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
  • Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.

This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

3 ripe bananas, mashed
2 eggs
1 3/4 cups flour
1 1/2 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/4-1/2 cup walnuts (optional)

Steps:

  • Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
  • Add the baking soda and flour.
  • Combine well for 2-3 minutes.
  • Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

6 tablespoons butter
10 tablespoons dark brown sugar
5 tablespoons milk
1 cup pecans (or more)
1 cup butter
1 1/2 cups sugar
2 eggs
4 very ripe bananas
1 teaspoon vanilla
4 tablespoons buttermilk
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Mash bananas, beat 2 eggs and add to bananas with vanilla and butter milk.
  • Mix well and add to creamed butter and sugar.
  • Sift together flour, soda and salt.
  • Add to banana mixture; beat well.
  • Pour into 2 greased and floured 9 x 5 loaf pans.
  • Bake 45-50 minutes until bread pulls away from sides of pan.
  • Cool.
  • Prepare topping: Melt butter in sauce pan.
  • Add sugar and milk.
  • Cook until very syrupy about 10 minutes.
  • Remove fron heat and add chopped pecans.
  • Pour over bread, spreading to all corners and place under broiler til brown and bubbly.
  • WATCH CLOSELY!

nonstick cooking spray
3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup firmly packed brown sugar
1/4 cup vegetable oil
2 large egg whites
1 1/2 cups banana puree
1/2 cup cauliflower
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F Coat a 9 x 5 inch loaf pan with cooking spray.
  • In a bowl mix the flours, baking soad, baking powder, salt, and cinnamon then set aside.
  • In another large mixing bowl, combine sugar and oil until well combined. Mix in the egg whites, bananas and cauliflower purees, and the vanilla.
  • Add the flower mix to the wet mix.
  • Pour the batter into the loaf pan and bake for 55 - 60minutes, or until it passes the toothpick test.
  • Let cool on rack for 5 minutes and then turn the bread out of the pan to cool further before serving.
