Number Of Ingredients 12

12 Small prawns, peeled and de-veined (cocktail shrimp may also be used), optional
12 Jalapeño Chile Peppers
12-24 Bacon Strips (depending on size of Jalapeños)
8 oz. Cream Cheese, softened
1 tsp. Cumin
Salt, to taste
Freshly Ground Black Pepper, to taste
1 Garlic Clove, minced
3 T. Fresh Cilantro, finely chopped
3 Eggs
1 Cup Bread Crumbs
Vegetable Oil, For deep-frying

Steps:

  • Directions: If using prawns, cook them in boiling water until they turn pink, about 1-2 minutes. Remove them from water and set aside. Place Jalapeños on a baking sheet under the broiler, turning occasionally until skins blisters and is lightly browned on all sides. Remove and place peppers in a sealed Ziploc bag. In a small bowl, combine cream cheese, cumin, salt, pepper, garlic, and cilantro. Beat eggs in a small bowl and set aside. Place bread crumbs in another small bowl. Remove Jalapeños from Ziploc bag and remove skins, Slice stem and cap off Jalapeños, removing seeds carefully. Cook bacon strips in a large frying pan until just cooked through. Set aside on a plate lined with paper towels. Stuff each pepper with cream cheese mixture and a cooked prawn. Wrap each pepper with one to two strips of bacon. Pour vegetable oil into a heavy saucepan and set over medium-high heat. Roll peppers in the eggs, then coat with bread crumbs. Deep-fry peppers in batches until golden brown on all sides, about 3-5 minutes. Drain on a plate lined with paper towels. Serve immediately. ½ cup cream cheese
½ cup shredded sharp Cheddar cheese
12 jalapeno peppers, halved lengthwise, seeds and membranes removed
12 slices bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet.
  • Bake in the preheated oven until bacon is crispy, about 15 minutes.

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

  • Into the bowl of a food processor add cream cheese, shredded cheese, Worcestershire sauce, Chipotle powder, and pulse until the mixture is well blended. Fill each jalapeno half with cream cheese blend. Wrap the jalapeno pepper with 1 whole slide of bacon.
  • Wrap the popper to where the jalapeno pepper is completely covered. Place poppers in a baking sheet. with a wire rack, or you can use a broiling pan. Bake poppers for approximately 15 minutes or until bacon is browned and crisp. Serve Immediately.
