1 teaspoon unsalted butter, at room temperature
Two 16-ounce bags frozen sliced peaches
1 1/2 cups frozen blueberries
1/4 cup freshly squeezed lemon juice
3 tablespoons turbinado sugar
2 tablespoons arrowroot
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
1 cup old-fashioned rolled oats
1/3 cup all-purpose flour
1/3 cup turbinado sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
6 tablespoons unsalted butter, chilled and cut into cubes
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling: Butter a 7-by-3-inch round baking dish and set aside. In a large bowl, toss together the sliced peaches, blueberries, lemon juice, sugar, arrowroot, vanilla and salt. Pour the mixture into the prepared baking dish.
  • For the topping: In a separate bowl, mix together the oats, flour, sugar, cinnamon and salt. Using your hands, work the butter into the flour mixture until there are no longer any powdery ingredients at the bottom of the bowl. Break apart large pieces of the topping mixture and place on top of the fruit until the fruit mixture is almost entirely covered. Bake until the topping is golden brown and crispy and the fruit mixture is bubbling, about 40 minutes. Let cool for at least 20 minutes. Serve with the ice cream.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange peaches evenly in an 8x8-inch baking dish.

1/2 cup quick-cooking oats
1/3 cup sugar
1 teaspoon ground cinnamon

1/4 cup canola oil
2 tablespoons water
1/3 cup coarsely chopped almonds
3 1/2 pounds ripe peaches (about 11 medium peaches)
1 tablespoon fresh lemon juice
2 tablespoons all-purpose flour
1/4 cup sugar
Vanilla ice cream, (optional)

Steps:

  • For the topping: Preheat the oven to 375 degrees with rack in the middle position. In a large bowl, whisk together flour, oats, sugar, cinnamon, and salt. Stir in oil and water until blended. Topping will look like clumpy wet sand. Stir in almonds and set aside.
  • For the filling: In a large saucepan of boiling water, working in batches, blanch peaches for 1 minute. Remove them with a slotted spoon and transfer to a bowl of cold water. When cool enough to handle, peel off skin. Halve, pit, and cut peaches into 1/2-inch wedges.
  • In a medium bowl, mix together peaches, lemon juice, flour, and sugar. Place filling in an 8-inch square baking pan. Sprinkle topping evenly over peaches. Bake until the topping turns a deep, golden brown and the filling is bubbling around the edges, 30 to 35 minutes. Serve warm or at room temperature with vanilla ice cream, if desired.

1 can (29 ounces) sliced peaches
1 cup packed brown sugar
2 tablespoons cornstarch
2 tablespoons honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup lemon juice
1/2 cup raisins
1/2 cup chopped pecans
TOPPING:
1 cup all-purpose flour
1/2 cup sugar
1/2 cup butter, melted
Vanilla ice cream, optional

Steps:

  • Drain peaches, reserving the syrup in a saucepan; set peaches aside. Stir brown sugar, cornstarch, honey, cinnamon and nutmeg into the peach syrup until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add lemon juice, raisins, pecans and reserved peaches. I read the suggestions and comments in the reviews when I tried this recipe that I adopted from the RecipeZaar account in February 2005. Instead of all the flour, sugar, and cinnamon going into the topping, I increased the amounts of each and mixed some with the peaches. (Originally the recipe called for 1 cup each flour and (white) sugar and only 1/2 teaspoons cinnamon. I like cinnamon.) The result was a dessert with a nice consistency, not runny, and with the sweetness distributed throughout, not just in the topping. This fruity dessert is great served warm with vanilla ice cream.
