Sweet-Sour Chicken Dippers image

Meet the Cook: Since you can chop up all the ingredients the night before, this can be ready in about 30 minutes. So it's a great after-work dinner. You can also serve it as a snack or an appetizer...similar to chicken nuggets. I've even substituted quail for the chicken, and it was delicious. Number Of Ingredients 18

1 can (8 ounces) crushed pineapple
1-1/2 cups sugar
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup white vinegar
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tablespoon soy sauce
1/4 teaspoon ground ginger
1 tablespoon cornstarch
BATTER:
1 cup all-purpose flour
1 cup cornstarch
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons sugar
1-1/3 cups cold water
Oil for deep-fat frying
1-1/2 pounds boneless skinless chicken breasts, cut into chunks

Steps:

  • Drain pineapple, reserving juice. In a large saucepan, combine sugar, tomatoes, vinegar, onion, green pepper, soy sauce, ginger and pineapple. Simmer for 20 minutes. , Meanwhile, in a small bowl, combine cornstarch and the reserved pineapple juice until smooth; add to tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside. , For the batter, in a small bowl, combine the flour, cornstarch, baking powder, baking soda, sugar and water until smooth. , In a deep-fat fryer, heat oil to 375°. Dip chicken pieces in batter; drop into oil and fry about 3-5 minutes on each side or until golden brown and juices run clear. Serve immediately with sweet-sour sauce.

1 ½ cups shredded chicken
1 cup BBQ sauce, divided
1 cup shredded cheddar cheese
½ cup red onion, diced
2 tablespoons fresh parsley

Steps:

  • Preheat oven to 400°F (200°C).
  • In a bowl, mix shredded chicken with ½ cup (115) barbecue sauce. Set aside.
  • Spread pizza dough out on a parchment-lined pan.
  • Bake 10 minutes.
  • Top with remaining barbecue sauce, cheddar, chicken, mozzarella, red onion, and parsley.
  • Bake an additional 10 minutes.
  • Slice and dip!

1/4 cup packed brown sugar
1 tablespoon cornstarch
2/3 cup apple or pineapple juice
1/4 cup cider vinegar
2 tablespoons orange juice
1 can (8 oz) jellied cranberry sauce
2/3 cup chili sauce

Steps:

  • Bake chicken nuggets as directed on package.
  • Meanwhile, in small saucepan mix all ingredients for sweet and sour sauce. Cook over medium heat until mixture boils and thickens, stirring constantly.
  • In another small saucepan mix all ingredients for tangy chili sauce. Cook over low heat, stirring mixture until well blended and thoroughly heated. Serve chicken nuggets with warm sauces.

2 cups spaghetti sauce
1 egg white
1 tablespoon water
½ cup all-purpose flour
1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon salt
⅛ teaspoon ground black pepper
4 (4 ounce) skinless, boneless chicken breast halves - pounded 1/4 inch thick
butter-flavored cooking spray
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Pour spaghetti sauce into a saucepan over low heat.
  • Whisk egg white and water together in a shallow bowl until evenly combined. Spread the flour out onto a plate. In a shallow bowl, mix the bread crumbs, Parmesan cheese, basil, oregano, salt, and black pepper until thoroughly combined.
  • Dip the chicken breasts into the flour, and shake off loose flour; dip them into the egg white, then gently press into the seasoned crumbs. Shake off loose crumbs; spray both side of the chicken breasts with the cooking spray. Lay the chicken breasts onto a nonstick baking sheet.
  • Bake the chicken breasts in the preheated oven until golden brown, 10 to 12 minutes. Remove from oven, and sprinkle with the mozzarella cheese; return to oven and bake until the cheese is melted and starting to brown, 1 to 2 more minutes. Serve topped with the hot spaghetti sauce.
