Detroit style pizza sauce isn't that different from other styles of cooked American pizza sauces. It's simmered at a low temperature for an extended time and it's flavored with lots of different seasonings. In terms of ingredients, Detroit style pizza sauce is actually very similar to cooked New York City style pizza sauce (check my recipe here). It's made from fresh crushed tomatoes and includes basil, oregano, garlic, salt and pepper. The difference with Detroit style pizza sauce from other styles is how you use it. Unlike a traditional pizza sauce that you apply before baking, Detroit style pizza sauce is spooned onto each slice after it's baked. For this reason, Detroit style pizza sauce is cooked longer. This is a very simple Detroit pizza sauce recipe. Simply combine the ingredients, simmer at a low heat for at least 1 hour. This sauce is not baked along with the pizza and is spooned onto each slice afterwards, which means the sauce is ready when you like how it tastes.

Steps:

  • Empty can of tomatoes into a saucepan.If you're using whole tomatoes, use a potato masher, immersion blender or your hands to mash them up to your liking. Add seasonings and mix them in well.Cover the pan and let it simmer at a low heat for at least 45 minutes to 1 hour while stirring occasionally. Taste test the sauce and take it off the heat when it's to your liking.While your pizza is baking, get the sauce simmering again. It should be nice and hot when you spoon it on the finished pizza.

1 1/2 lbs sugar
1 teaspoon clove, ground
1 teaspoon ginger, ground

2 pints vinegar
2 ounces garlic

  • Boil all for 2 hours, Skim off stones. Put through a sieve and pour into air tight bottles or jars.

1 1/2 cups prunes
1/2 to 1 cup water
1/3 cup red onion (chopped)
1/4 cup soy sauce
1/4 cup honey
3 tablespoons rice vinegar (or apple cider vinegar)
3 cloves garlic (chopped)
1 tablespoon white wine
1 tablespoon ginger (fresh grated)
Optional: 1 teaspoon finely chopped fresh chile pepper
1 small pinch star anise (or cloves; less than 1/8 teaspoon)

Steps:

  • Gather the ingredients.
  • Combine all of the ingredients in a medium size pot. Start out with the smaller (1/2 cup) amount of water. Bring the ingredients to a boil over high heat. Reduce the heat and simmer, stirring occasionally, for 20 minutes.
  • Add additional water only if the sauce starts to stick to the bottom of the pot. Dried plums that were dehydrated at home tend to be drier than their commercial cousins and may require the extra water.
  • Turn off the heat and let the ingredients cool for 10 minutes. Transfer them to a blender or food processor and puree the sauce until smooth. (Alternatively, leave the sauce in the pot and, after the cooling off period, puree it with an immersion blender.)
  • Store the plum sauce in the refrigerator for up to three weeks, or process it in a boiling water bath so that it can be stored in sealed jars at room temperature for a year or more.
  • To can the plum sauce, return it to the pot over medium heat and bring to a boil. Immediately turn off the heat and spoon the sauce into clean quarter or half-pint canning jars. It is not necessary to sterilize the jars for this recipe. Leave 1/2-inch of headspace between the surface of the food and the rims of the jars.
  • Press down on the center of the sauce with the back of a spoon to release any air bubbles. Wipe the rims of the jars clean with a moist paper or cloth towel (any sauce stuck there could prevent the lids from sealing.) Process the jars of plum sauce in a boiling water bath for 10 minutes (adjust the canning time if you live at a high altitude .)
