1 egg white
⅛ teaspoon vanilla extract
1 pinch salt
¼ cup unbleached all-purpose flour
¼ cup white sugar

Steps:

  • Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  • Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  • Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
  • Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  • Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

Whether it's sharing a positive prophecy with a friend, proposing marriage, or passive-aggressively letting your roommate know they need to do their dishes, nothing does the job quite like a fortune cookie. The key is to work quickly; you'll want to insert your fortunes and shape these light, crispy cookies right as they come out of the oven. Wearing gloves might be a good idea!

Custom or prepared paper fortunes
1 large egg white
¼ cup white sugar
1 tablespoon milk
⅛ teaspoon vanilla extract
⅛ teaspoon almond extract
1 pinch salt
1 tablespoon melted butter
⅓ cup all-purpose flour, or more as needed

Steps:

  • Print and cut out 3-inch wide paper fortunes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone mat or parchment paper.
  • Combine egg white, sugar, milk, vanilla extract, almond extract, salt, and butter in a bowl. Whisk until sugar is dissolved. Add flour and whisk until batter is smooth and falls off the whisk in ribbons.
  • Scoop 1 tablespoon of batter onto the prepared baking sheet; spread out into a 4-inch circle using the back of a spoon. Repeat once more.
  • Bake first batch in the preheated oven until crispy and golden brown on the edges and still pale in the centers, about 10 minutes.
  • Quickly lift up cookies using a spatula. Add a fortune to each. Fold cookies in half, pressing edges together lightly. Bend each cookie over the rim of the pan, bringing ends down on either side. Lift up and curl ends towards each other. Place cookies in ramekins or muffin tins to hold their shape while they cool.
  • Bake remaining batter in batches, folding and shaping the cookies while hot. Remove from ramekins or muffin tins when completely cool.

This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.

Steps:

  • You will also need: 2 1/2 x 1/2-inch fortune strips.
  • Preheat oven to 350°F.
  • Grease a cookie sheet thoroughly.
  • Whip the egg whites on low speed until light and foamy.
  • Blend in the sugar and continue to beat until soft peaks form.
  • Pour in the melted butter, flour, salt, and extracts; mix until well combined.
  • Drop a tablespoon of the batter onto the prepared cookie sheet.
  • Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds.
  • Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove.
  • Because you must work quickly to shape these cookies, bake just 3 at a time.
  • Bake for about 5-8 minutes or until the edges are a light golden color.
  • Remove the cookies with a spatula and place on a work surface.
  • Lay a fortune in the lower middle of the cookie, and fold in half to make a semi-circle.
  • Bend the edges up toward each other to make a crescent.
  • Drag the crease across the rim of a small measuring cup, with the ends facing down.
  • Cool in mini muffin tins to hold shape until crisp.
  • Repeat with remaining batter.

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
  • Sift in the flour, sugar, and salt through a fine-mesh sieve.
  • Using a spatula, gently incorporate into the batter until paste-like.
  • Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up.
  • Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle.
  • Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat.
  • Bake for 8 minutes, until the edges become golden brown.
  • Working quickly, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. Place the folded fortune cookies in a mini muffin tin until cooled to retain their shape.
  • Repeat with remaining batter.
  • Enjoy!

  • 1. Prepare fortunes by typing or printing poetry, proverbs, or your own thoughts on 3 by 1/2-inch strips of paper. Place near oven. Place a straight-sided pan or bowl and a muffin pan near the oven, as well, for shaping and cooling the cookies. Have a pair of clean cotton gloves handy to protect hands while shaping the hot cookies.2. Preheat oven to 300 F. Grease baking sheets well. In a bowl, combine the flour, cornstarch, splenda and salt. Add the oil and egg whites. Beat until smooth. Beat in the water and vanilla. Drop batter by level tablespoonfuls onto the well-greased baking sheets. Spread out the batter with the back of a spoon into a 4-inch circle. Try only 1 or 2 cookies per sheet at first, until you get the knack of shaping the cookies. Then, advance to 4 circles per sheet as your speed and shaping talent improves. Bake at 300 F. for 14 minutes or until light golden brown. Don't underbake the cookies or they will tear during shaping.3. To shape: Wear cotton gloves. Using a wide spatula, remove one cookie at a time from the oven and flip into your gloved hand. Place and hold one fortune paper in the center of the cookie and quickly fold the cookie in half. Grasp the ends of the cookie and draw it gently down over the edge of the straight-sided pan or bowl to get that "fortune-cookie" curve. (The slit in the cookie will be facing up as you shape the cookie over the pan.) Place the cookie, ends down, in one of the muffin pan cups to cool. This will help them hold their shape while cooling.Note: If the cookie hardens too fast, return it to the oven for about 1 minute to make it more bendable. Repeat for remaining batter, using a cold, well-greased baking sheet for each batch.
