1 1/2 cups water
2 cups whole fresh green beans
2 tablespoons chopped fresh dill weed
1/4 cup thinly sliced onion
1/3 cup white wine vinegar
2 teaspoons canola or soybean oil
1/2 teaspoon sugar
2 cloves garlic, sliced
1/8 teaspoon crushed red pepper flakes

Steps:

  • In 2-quart saucepan, heat water to boiling. Add beans. Cover and cook about 3 minutes or until bright green but still crisp; drain.
  • In medium bowl, toss beans, dill weed and onion.
  • In 1-quart saucepan, mix vinegar, oil, sugar, garlic and red pepper flakes. Heat to boiling; reduce heat. Simmer uncovered 2 minutes, stirring occasionally. Pour over green beans; mix well.
  • Cover and refrigerate 20 minutes or until serving.

1 lb yellow beans
4 garlic cloves (you can add more if you like garlic)
2 tbsp sunflower oil
salt and pepper to taste
chopped parsley and dill (optional)

Steps:

  • Roughly chop beans
  • Smash garlic cloves
  • Heat the oil and add half the garlic and saute a little
  • Add the beans and saute for 2-3 minutes
  • Add 1 cup water and cook for 20 minute
  • Just before removing from stove, add the rest of the garlic
  • Add chopped dill and parsley (optional)

Spicy pickled green beans made the old fashioned way. This was my Grandmother's recipe, I hope you enjoy!

6 cups water
1 cup pickling salt
6 cups distilled white vinegar
8 heads fresh dill weed
½ cup pickling spice
½ cup mustard seed
8 dried red chile peppers
16 cloves garlic, peeled
1 teaspoon alum
5 pounds fresh green beans, rinsed and trimmed

Steps:

  • Sterilize 8 (1 pint) jars in boiling water for at least 5 minutes.
  • Combine the water, pickling salt and vinegar in a large pot, and bring to a boil. When it begins to boil, reduce heat to low, and keep at a simmer while you pack the jars.
  • In each jar place the following: 1 head of dill, 1 tablespoon of pickling spice, 1 tablespoon of mustard seed, 1 dried chile pepper, 2 cloves of garlic, and 1/8 teaspoon of alum. Pack beans into the spiced jars in a standing position.
  • Ladle the hot brine into jars, leaving 1/2 inch of space at the top. Screw the lids onto the jars, and process in a hot water bath for 6 minutes to seal. Store for at least 2 weeks before eating.

This recipe is from my Grandmother's cookbook she made to pass to all her grandchildren. They come out very, very crisp with a wonderful dill flavor. The red pepper flakes give them a nice punch. They are much better than the recipes that call for cooking the beans first.

2 ½ pounds fresh green beans
2 ½ cups distilled white vinegar
2 cups water
¼ cup salt
1 clove garlic, peeled
1 bunch fresh dill weed
¾ teaspoon red pepper flakes

Steps:

  • Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
  • In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
  • Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

4 lbs green beans
1/2 teaspoon crushed red pepper flakes, per jar
1/2 teaspoon mustard seeds, per jar
1/2 teaspoon dill seed, per jar
1 whole garlic clove, per jar
5 cups vinegar
5 cups water
1/2 cup salt

Steps:

  • Clean and Cut beans to fit in tall Mason Jars. (one pint).
  • Place ingredients 2-5 into each jar.
  • Add beans to jar(s) until full.
  • Bring to boil ingredients 6-8.
  • Pour boiling liquid over beans.
  • Tighten lids.
  • Process in boiling water for 5 minutes. *Correction: Processing time should be 10-15 min, not 5.*.
  • I use what ever amount of beans I have on hand and make the liquid accordingly.

2 1/2 pounds green beans (5 to 6 inches long)
2 tbsps McCormick® Dill Seed
2 tbsps McCormick® Onions, Minced
2 tsps McCormick® Celery Seed
1 tsp McCormick® Garlic, Minced
1 tsp McCormick® Red Pepper, Crushed
2 1/4 cups water
2 tbsps non-iodized salt
2 tbsps sugar
2 1/4 cups distilled white vinegar (5% acidity)

Steps:

  • Wash beans with cold water. Trim ends and cut beans to about 4-inch lengths.
  • Place 1/2 tablespoon each dill seed and minced onion, 1/2 teaspoon celery seed and 1/4 teaspoon each minced garlic and crushed red pepper in each of 4 hot sterilized pint canning jars. Pack green beans vertically into jars. (Lay jar on side for easy filling.)
  • Mix remaining ingredients in medium saucepan; bring to boil, stirring to dissolve salt and sugar. Ladle over green beans, leaving 1/4-inch headspace. Run thin, non-metallic utensil down inside of jars to remove air bubbles. Wipe rim of jars clean with damp cloth. Cover jars with metal lids and screw on bands.
  • Process in boiling water canner 10 minutes. After processing jars, remove from water bath canner. Cool at room temperature on towel or rack for 12 to 24 hours. Check for seal.

3 tablespoon kosher salt
3.5 pound fresh green beans, trimmed and cut into pieces
6 heads fresh dill weed or 6 tablespoons dill seeds

Steps:

  • In a 3-quart saucepan combine vinegar, 2 1/2 cups water, and 3 Tbsp. kosher salt. Bring to boiling. Boil, uncovered, one minute. Cover; keep hot on low. Pack a hot, clean pint canning jar with beans and a dill head, leaving 1/2-inch headspace. Pour hot brine over beans, maintaining 1/2-inch headspace. Add lid and screw band. Repeat for a total of six jars. Place jars in a water-bath canner. Process 5 minutes, beginning timing when water returns to a boil. Let cool on wire racks at least 4 hours. Makes 6 pints.

1 tablespoon pickling salt
2 tablespoons vinegar
1/2 teaspoon sugar
1 sprig dill
1 clove garlic, sliced

Steps:

  • These directions are for one jar.
  • Adjust to suit the number of jars you will need for your beans.
  • Sterilize canning jar (s) and lids (&rubber rings, if you are using old style jars).
  • Trim ends off beans.
  • Cook in boiling water just until tender (4-8 minutes).
  • Drain and pour cold water over beans to chill.
  • Drain thoroughly then arrange in (sterilized) jar.
  • To each jar add salt, vinegar, sugar, dill, and garlic.
  • Add COLD water to fill.

Spicy Garlic & Dill Pickled Beans Recipe image

4½ lbs. green beans, washed, trimmed and cut into jar-length pieces
3 Tbsp. pickling salt
3 cups water
3 cups white vinegar
6 cloves of garlic
1½ tsp. dried chilli flakes (divided) OR 6 fresh or dried chilli peppers
6 fresh heads of dill seed

Steps:

  • Prepare your canner and jars.
  • Wash and trim vine ends off beans. Remove strings from string bean varieties. Cut beans into jar-length pieces, being sure to leave enough room for a ½ inch of headspace between the top of the beans and the top of the jar.
  • In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
  • Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
  • Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
  • Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
  • Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.
