Easy Salmon Cakes image

These healthy salmon cakes are a delicious way to boost your intake of omega-3s. It is also a great way to use convenient canned (or leftover) salmon. The tangy dill sauce provides a tart balance to these easy salmon patties.

3 teaspoons extra-virgin olive oil, divided
1 small onion, finely chopped
1 stalk celery, finely diced
2 tablespoons chopped fresh parsley
15 ounces canned salmon, drained, or 1 1/2 cups cooked salmon
1 large egg, lightly beaten
1 ½ teaspoons Dijon mustard
1 3/4 cups fresh whole-wheat breadcrumbs, (see Tip)
½ teaspoon freshly ground pepper
Creamy Dill Sauce (see Associated Recipe)
1 lemon, cut into wedges

Steps:

  • Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray.
  • Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley; remove from the heat.
  • Place salmon in a medium bowl. Flake apart with a fork; remove any bones and skin. Add egg and mustard; mix well. Add the onion mixture, breadcrumbs and pepper; mix well. Shape the mixture into 8 patties, about 2 1/2 inches wide.
  • Heat remaining 1 1/2 teaspoons oil in the pan over medium heat. Add 4 patties and cook until the undersides are golden, 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.
  • Bake the salmon cakes until golden on top and heated through, 15 to 20 minutes. Meanwhile, prepare Creamy Dill Sauce. Serve salmon cakes with sauce and lemon wedges.

12 ounces boneless skinless salmon ((2 cans, drained))
1/4 cup onion ((finely chopped))
3 eggs
3 tablespoons fresh dill ((can substitute 3 teaspoons dried dill weed), divided)
1/4 teaspoon salt
1/2 teaspoon pepper
4 cups frozen hash browns
1/2 cup panko bread crumbs
2 tablespoons olive oil
1/3 cup reduced-fat sour cream
1 teaspoon lemon juice

Steps:

  • Combine salmon, onion, eggs, 2 tablespoons dill, salt and pepper. Add the potatoes and the panko crumbs, and stir to combine.
  • Form and press the salmon mixture into cakes, approximately 3 inches across.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Once it is heated, add the cakes and cook until brown, about 4-5 minutes.
  • Flip the cakes and cook for another 4-5 minutes to brown the other side.
  • Repeat process for the remaining cakes.
  • Combine the sour cream, lemon juice, and remaining dill in a small bowl. Drizzle over the cakes or serve on the side.

1.25 cup panko bread crumbs
2 5-6 ounce cans skinless, boneless salmon, drained
1 Meyer lemon, halved (one half finely chopped, second half juiced)*
2 tablespoon finely chopped fresh dill weed
3 tablespoon vegetable oil
2 cup torn mixed greens
Olive oil

Steps:

  • In a medium bowl stir together egg, 3/4 cup panko, salmon, chopped lemon, dill weed, 2 Tbsp. water, and 1/4 tsp. each salt and black pepper.
  • Place remaining 1/2 cup panko in a small bowl. For each cake, shape 1/4 cup salmon mixture into a ball. Roll in panko to coat; press to 1/2 inch thick.
  • In a large skillet heat 2 Tbsp. vegetable oil over medium-high heat; add half of the salmon cakes in a single layer. Cook 5 to 7 minutes or until browned and crisp, turning once. (If necessary, reduce heat to medium to prevent overbrowning.) Remove; cover to keep warm. Repeat with remaining oil and cakes.
  • Meanwhile, for salad, in a bowl toss greens with lemon juice and a drizzle of olive oil. Serve salad with salmon cakes; top with additional dill weed.
  • *For regular lemon: Use 1 tsp. zest and 1 Tbsp. juice in salmon cakes; use 2 Tbsp. lemon juice over salad.

Several sprigs of dill to yield 2 tablespoons chopped
1 tablespoon capers
1 tablespoon horseradish
2 egg whites
10 ounces salmon fillet

Steps:

  • Preheat broiler or prepare grill on top of stove.
  • Chop whole onion; wash and chop dill, and rinse capers. Mix ingredients together with horseradish and egg whites in a bowl large enough to hold all the ingredients.
  • Grill or broil salmon following the Canadian rule: measure fish at thickest point and cook 8 minutes to the inch. When salmon is cooked, flake and stir into bowl, and mix well. Shape into 4 patties.
  • Grill patties on top of stove, or preheat a nonstick skillet and saute them until brown on both sides, about 4 or 5 minutes total.

1 small garlic clove, minced
1-1/2 teaspoons lemon juice

¼ cup fresh parsley, chopped

2 tablespoons butter

Steps:

  • In a large mixing bowl, place 1 1/2 cups bread crumbs. Set aside remaining 1/2 cup. Add eggs, parsley, green onions, dill weed, lemon juice and black pepper. Mix well.
  • Add salmon and mix with hands, breaking up salmon into small pieces. Form into 8 patties; each about 1/2 inch thick.

1 egg, lightly beaten
1 tablespoon mayonnaise
1/4 teaspoon salt

1/4 cup seasoned bread crumbs
1/2 cup breadcrumbs (for coating cakes)
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons butter
2 tablespoons flour
3/4 cup reserved salmon liquid (add milk to make it 3/4 cup)
1 tablespoon fresh dill

Steps:

  • Flake salmon so no large lumps remain.
  • Add egg, mayo, salt, pepper, dill and breadcrumbs. Mix well.
  • Form into four cakes. Coat with additional breadcrumbs.
  • Heat a skillet over medium heat and melt 1 Tbsp of butter. Add olive oil.

800g skinless salmon fillet
2 bay leaves
small bunch dill , stalks and fronds separated
500ml milk
600g Maris Piper potato , peeled and chopped into even sized chunks
zest 1 lemon
4 tbsp mayonnaise
1 tsp Dijon mustard
4 tbsp caper , rinsed and dried
flour , for dusting your hands
1 egg , beaten
100g breadcrumb
4 tbsp vegetable or sunflower oil
lemon wedges and watercress, to serve

Steps:

  • Poaching the salmon: Put the salmon in a frying pan with the bay leaves and dill stalks. Pour over enough milk to cover the fish (you may not need all the milk), bring to the boil, then lower heat to a gentle simmer and leave to poach for 4 mins. Turn off the heat, then leave the fish to continue cooking in the poaching liquid for 5 mins. Lift the salmon out with a fish slice onto a plate. Flake into large pieces with a fork, then leave to cool.
  • Making and drying out the mash: Meanwhile, cook the potatoes in boiling salted water for about 10 mins, or until tender. Drain well, then leave to cool in a colander for 2 mins. Tip back into the pan and return to the hob on a low setting. Mash the potatoes, watching that the mash doesn't catch at the bottom of the pan, for 2-3 mins - it should be dry and fluffy. Stir in lemon zest, mayonnaise, mustard, capers and some seasoning.
  • Mixing and shaping fish cakes Pat away any liquid from the fish, then carefully lift the pieces into the pan with the mash. With your hands, gently mix together until roughly combined; it should take just a few movements or the fish will break up. Dust hands and work surface with flour. Shape a handful of the mix into a patty-shaped cake, about 2.5cm thick. Repeat to make 8 cakes.
  • Breadcrumbing and frying Dip the cakes into the egg, then press into the breadcrumbs all over. Heat half the oil in a frying pan until very hot. Fry 4 fish cakes for 5 mins each side until golden. Remove; keep warm. Repeat with the rest, or freeze. Serve with lemon wedges and watercress.
