DILLED FETA RICOTTA SPREAD



Dilled Feta Ricotta Spread image

Can be prepared in 45 minutes or less.

Yield Makes about 2 cups

Number Of Ingredients 7

8 ounces feta cheese, crumbled (about 1 1/3 cups)
1 cup whole-milk ricotta cheese
1/4 cup finely chopped scallion
1/4 cup pine nuts, toasted lightly and cooled
2 tablespoons chopped fresh dill, or to taste
2 teaspoons fresh lemon juice, or to taste
Accompaniment: crackers or toast points

Steps:

  • In a food processor blend cheeses until smooth.
  • Add remaining ingredients and pulse motor until combined well but still chunky. Spread may be made 3 days ahead and chilled, covered.
  • Serve spread chilled or at room temperature with crackers or toast points.

1/2 cup low-fat plain yogurt
1/4 cup low-fat sour cream
1 tablespoon lemon juice
3 garlic cloves, minced
1/4 cup fresh dill, finely chopped
1/2 teaspoon ground black pepper

Steps:

  • Combine feta, yogurt, sour cream, lemon juice, dill and pepper in a blender or a food processor, puree until smooth.
  • Transfer mixture to a bowl and serve as a spread or a dip.
