Steps:
- Soak the bread crumbs in the milk while you prepare the other ingredients.
- Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
- Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.

Note: In the spirit of Marie, if you're giving this lasagana recipe to your daughter-in-law, leave out the peas, mushrooms and hard-boiled eggs. - Throughly mix all ingredients (except oil) in bowl and form into balls about the size of a quarter.
- Heat 1- 1 1/2 inches of vegetable oil in fry pan. When oil sizzles as a drop of water is added, add meatballs and fry until golden brown.
- Transfer to Doris Roberts' Meat Sauce (see recipe on this site).

Steps:
- Combine the meat, bread crumbs, cheese, parsley, garlic and egg in a bowl, but do not overmix.
- In a pan, heat all but two tablespoons of the oil to 370 degrees. Meanwhile, form the meat mixture into little balls, no more than about of an inch in diameter. When the oil is hot, fry a few at a time until they are brown on all sides and then drain them on paper towels.
- In a saute pan, soften the onion in the remaining oil for 5 minutes. Add the tomatoes and use a fork to smash them, continuing to cook until the sauce is thick, about 7 minutes. Season with salt and pepper to taste.
- Puree the sauce in a food processor. Return to the pan, add the meatballs and let them bubble gently over medium-low heat for 3 mintues. Just before serving, stir in the fresh herbs.

- Cover the bottom of a large pan with good olive oil and turn heat under it to medium. When the oil becomes fragrant, it is warm enough to add the garlic. Add garlic, onion, basil, parsley, oregano, salt and pepper and saute until onion is golden.
- Add meat and cook until brown, breaking it apart with a wooden spoon.
- Add the tomatoes, crushing them by hand. Add puree. Cover and lower heat, stirring occasionally for 15 minutes. Uncover and continue cooking another 15 minutes. Serve over your favorite pasta or use in lasagna.

DANISH MEATBALLS WITH DILL SAUCE
This is a very tasty, but unique, meatball recipe perfect for holiday parties. For some reason, men love these! I have found that purchasing pre-made meatballs cuts the prep time significantly and tastes good, too.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix beef, pork, veal, salt, pepper, eggs, onion and heavy cream. With moistened hands, shape the mixture into 1 inch balls. Roll the balls in the bread crumbs until all balls are well coated. Arrange in a single layer on a large, shallow baking sheet.
- Melt 1/2 cup butter in a large saucepan over low heat. Stir in the flour. Gradually stir in the chicken broth. Continue stirring until thickened and bubbly, then blend in the sour cream and fresh dill.
- Melt remaining butter in a small saucepan, and drizzle over the meatballs. Bake meatballs in the preheated oven 35 minutes, turning occasionally, until evenly browned.
- Place meatballs in a chafing dish and cover with the sauce to serve.

- Preheat the oven to 375 degrees F. Line 2 rimmed baking sheet with parchment.
- In a stand mixer fitted with the paddle attachment, combine the beef, chili powder, cumin, salt, egg, tomato paste and tortilla chips and mix on low speed until thoroughly combined. Stir in the cheese with a rubber spatula. Using a 1-ounce portion scoop, form the meatballs. Scoop onto the prepared baking sheets and bake until golden brown and cooked through, 18 to 20 minutes.

Fry gently in olive oil until lightly browned, or place on foil on a cookie sheet and bake for 1/2 hour at 350 degrees fahrenheit. Gently place in your own hot spaghetti sauce and cook on medium low heat for 1 hour.

- Pour the whole tomatoes into a large Dutch oven and use your hands or a pair of kitchen scissors to tear or cut them into bite-size pieces.
