One 750-millileter bottle white rum
5 whole allspice berries
5 whole cloves
1 whole star anise
One 3-inch piece orange zest
1 vanilla bean, split
1/2 cinnamon stick
1 cup sugar
4 cups fresh squeezed orange juice
1 cup fresh squeezed lime juice
6 dashes bitters, such as Angostura
4 cups mixed orange slices, lime slices, pineapple wedges and maraschino cherries, plus more for garnish
One 2-liter bottle seltzer
Ice cubes, for serving

Steps:

For the Spiced Rum: Remove the cap from the rum bottle and drop the allspice, cloves, star anise, orange zest, vanilla bean and cinnamon stick into the bottle. Reseal and let sit at room temperature for 2 days to up to a week, shaking it once a day.
Put 2 cups of ice cubes in an 8-inch square cake pan and layer in half of the fruit. Top with another 2 cups of ice and then the remaining fruit (the ice cubes keep the fruit from sinking to the bottom). Fill with water and freeze until solid, about 6 hours.
When ready to serve, combine the sugar with 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar is completely dissolved, about 2 minutes. Remove from the heat and let cool to room temperature. Stir together the sugar syrup, orange juice, lime juice and bitters in a large punch bowl. Pour the rum into the punch bowl, through a fine mesh sieve, and discard the spices. Let the ice island sit at room temperature for about 10 minutes, unmold and float in the punch.
Fill a highball glass with ice cubes pour in 1 cup of punch. Top with about 2 ounces of seltzer and the garnish of your choice.

1 teaspoon chopped fresh gingerroot
1 1/2 tablespoons (3/4 oz) lime juice
1 1/2 tablespoons (3/4 oz) orange juice
Ice
1/4 cup (2 oz) cranberry juice
1/8 teaspoon ground allspice

Steps:

In cocktail shaker, add dark rum and light rum. Add gingerroot, then use end of wooden spoon to muddle ginger, releasing its flavor into rum.
Add lime juice, orange juice and ice; shake until cold. Pour into cocktail glass filled with ice. Slowly pour cranberry juice into glass; garnish with allspice.

6 ounces dark rum
6 ounces white rum
5 ounces blood orange juice
5 ounces orgeat (almond syrup)
3 ounces lemon juice
2 pinches kosher salt
Lemon peels, for garnish
Dry ice pellets, for serving

Steps:

Add the dark and white rum, blood orange juice, orgeat, lemon juice and salt to a large pitcher, stirring to combine. Pour over ice-filled rocks glasses and garnish each glass with a lemon peel.
To serve: Add dry ice pellets to a large, shallow platter. Put the glasses on the platter, surrounding each glass with the dry ice but being careful not to touch the pellets with your hands. Carefully serve the drinks on the platter.

Ingredients

2-inch piece fresh ginger
5 1/2 cups water
1/2 cup sugar
1 cinnamon stick
4 whole cloves
10 Celestial Seasonings Red Zinger tea bags
3/4 cup amber rum, or to taste
1 navel orange, sliced

Steps:

Peel ginger and cut crosswise into thin slices. In a medium saucepan boil water, ginger, sugar, cinnamon stick and cloves, stirring, until sugar is dissolved. Add tea bags and remove pan from heat. Steep tea until cool.
Discard tea bags and cinnamon stick and transfer tea to a pitcher. Chill tea, covered at least 12 hours and up to 1 day. Remove ginger and cloves with a slotted spoon and discard. Stir in rum and orange slices.
Serve punch over ice in stemmed glasses.

Steps:

In a small pot, bring water, sugar, and 6 cinnamon sticks to a boil. Reduce to a simmer and cook 8 minutes. Let cool to room temperature; discard cinnamon. (Refrigerate in airtight container, up to 1 month.) In a punch bowl, stir together cinnamon syrup, pineapple juice, rum, and lime juice. To serve, add ice and cinnamon sticks.
