DOUBLE APPLE WALNUT BREAD

Steps:
- Line a 9- by 5-inch loaf pan with waxed or parchment paper (or grease and flour it), then set it aside. Also grease a mini loaf pan. Heat the oven to 350°F.
- Combine the applesauce, sugar, brown sugar, eggs, oil, yogurt, and vanilla extract in a large bowl. Whisk well to blend.
- In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the dry ingredients with a wooden spoon and pour in the applesauce mixture. Stir just enough to combine; do not overmix. Fold in the apples and walnuts.
- Scrape the batter into the prepared pans and smooth the top with a spoon. Evenly sprinkle one tablespoon of sugar over the top. Bake on the center oven rack about 30 to 35 minutes for the mini loaf and 50 to 55 minutes for the large loaf. (Loaf will register 200 degrees F on a cooking thermometer.)
- Remove the pan from the oven and put it on a cooling rack for about 15 minutes, then remove the loaf from the pan and place it on the rack to finish cooling.
- OPTIONAL GLAZE: Whisk 1/2 cup powdered sugar with 2-3 TBSP HOT water. Drizzle on cooled bread and let set.

- In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. , Pour into a greased and floured 9x5-in. loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
- Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
- Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Sift together dry ingredients. Set aside.
- Combine eggs, sugar, oil, milk, and vanilla in a large bowl.
- Add flour mixture; mix gently.
- Fold in apples, nuts and coconut.
- Spoon into lightly greased 9X5 inch pan. Sprinkle top with cinnamon and sugar which have been mixed together.
- Bake 60 minutes at 350 degrees.
- Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
- Mix by hand to avoid overmixing and to insure a tender moist loaf.

- Preheat oven to 350 degrees F. Grease a 9" x 5" loaf pan and set aside.
- Combine the wet ingredients, applesauce through vanilla extract, in a large bowl. Whisk well to blend.
