- In a Dutch oven, cook pasta according to package directions. , Meanwhile, in a large saucepan, melt butter over medium heat. Add garlic if desired; cook and stir for 1 minute. Stir in flour, pepper and salt until blended; cook and stir until golden brown, about 5 minutes. Gradually whisk in milk, stirring until smooth. Bring to a boil; cook 2 minutes longer or until thickened. , Remove from heat. Stir in 4 cups cheddar cheese and Asiago cheese until melted. Mixture will thicken. , Preheat oven to 350°. Drain pasta; stir in cheese sauce. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining cheddar cheese., Bake, uncovered, 35-40 minutes or until golden brown. Let stand 5 minutes before serving.

- Cook macaroni according to package directions. Meanwhile, place cottage cheese in a food processor; cover and process until smooth. Set aside.
- In a large saucepan, melt butter. Stir in the flour, salt, pepper and garlic salt until smooth. Gradually add cream and milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Drain macaroni; transfer to a large bowl. Add the cheddar cheese, cottage cheese and white sauce; toss to coat. Transfer to a greased 13-in. x 9-in. baking dish. (Dish will be full.) Combine bread crumbs and butter; sprinkle over the top.
- Bake, uncovered, at 400° for 20-25 minutes or until bubbly.

- Preheat the oven to 325 degrees F. Bring a large saucepan of salted water to a boil. Add the macaroni and cook until slightly al dente, about 10 minutes. Drain and set aside to keep warm.
- Whisk the eggs in a large bowl until frothy.
- Add the Velveeta, butter and 2 cups of the half-and-half to the large bowl of eggs. Add the warm macaroni tossing until the cheese has melted and the mixture is smooth. Add the remaining half-and-half, 3 cups of the sharp yellow Cheddar, the remaining grated cheeses, and salt and pepper, tossing until completely combined in the large bowl.
- Pour the mixture into 9 by 13-inch casserole or baking dishes (approximately 3 (3-quart) baking dishes) and bake for 30 minutes. Sprinkle with the remaining 1 cup of sharp yellow cheese and bake until golden brown on top, about 30 minutes more.
- Serve hot.

- Heat oven to 375ºF.
- Cook pasta as directed on package, omitting salt.
- Meanwhile, melt 2 Tbsp. butter in large saucepan over medium heat. Add garlic; cook and stir 1 min. Stir in flour; cook 1 min., stirring constantly. Gradually whisk in milk; cook and stir 3 to 5 min. or until sauce is thickened. Add paprika, pepper and 1-3/4 cups cheese; cook 1 to 2 min. or until cheese is completely melted, stirring constantly.
- Drain pasta. Add to cheese sauce; mix lightly. Pour into 10-inch cast-iron skillet.
- Melt remaining butter; mix with bread crumbs and parsley. Sprinkle over macaroni mixture.
- Bake 15 min. or until sauce is hot and bubbly, and crumb topping is golden brown. Top with remaining cheese; bake 2 min. or until melted.

- Prepare the elbow macaroni according to package directions.
