DOUGHLESS DELUXE LOW CARB PIZZA
Uses chicken puree as a crust. It tastes close to regular crust, but you have to be careful not to overcook the chicken so it does not dry out. I use alot of sauce to balance it out. This helps alot. You could also try some dark meat, or even ground chicken or beef to raise the moisture level. It is a good way to lower your carb intake and raise the protein, which assists in weight loss and muscle building.

Steps:
- Preheat oven to 350F degrees.
- Boil chicken until cooked.
- Combine chicken, eggs, parmesan, and spices in a blender and puree until you've got a fairly thick liquid.
- Coat a pizza pan or cookie sheet and pour mixture into pan spreading so that it's an even thickness.
- Spread tomato sauce evenly over crust.
- Add, pepperoni, mozzarella, mushrooms, peppers, onion and olives.
- Bake for 10-15 minutes, until cheese is melted and toppings cooked.

Steps:
- Dissolve yeast in warm water about 110 degrees F (43 degrees C) in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Whisk together all-purpose flour, bread flour, sugar, and salt in the bowl of a stand mixer. Pour in canola oil, olive oil, and warm yeast mixture. Mix on low speed using the dough hook until dough comes together and pulls away from the bowl. Increase mixing speed to medium-high; let knead for 10 minutes.
- Turn dough out onto a lightly floured work surface and form into a ball. Place dough ball into a bowl that's been brushed or sprayed with oil; cover with plastic wrap. Let dough rise for 1 hour.
- Place dough onto a lightly floured work surface and punch down. Divide dough in 1/2 and form into 2 balls. Cover with a kitchen towel and let rise for an additional 45 minutes.
- Place each dough ball on a lightly floured work surface and form into a 12-inch round pizza crust.
- Preheat the oven to 400 degrees F (200 degrees C). Top pizzas as desired.
- Bake in the preheated oven until golden, 18 to 24 minutes.

LOW CARB SUPREME PIZZA CASSEROLE
This is an adaptation of several recipes I found in some old church cookbooks. Most called for pasta, this one does not and is not missed according to my high carb eating husband. Look for pizza sauce that has no added sugars and one that is lowest in carb counts.

Steps:
- Brown meats with Italian Seasonings and drain off fat. Add onions, peppers, garlic and mushrooms and saute until tender. Remove from heat and add pizza sauce and most of the pepperoni, mix well.
- Spray a 13X9 Pyrex baking dish with Pam, add meat mixture. Top with most of the black olives. Mix mozzarella and cheddar together and spead over the black olives. Sprinkle with parmesan and decorate the top with the remaining pepperoni and black olives.
- Bake 425 degrees for 15-20 minutes. Let rest 10 minutes, cut and serve.

EASY HOMEMADE PIZZA DOUGH

Steps:
- Stir whole wheat flour, all-purpose flour, yeast, salt, sugar, olive oil, and warm water with a spatula until formed into a sticky ball of dough that pulls away from sides of a large bowl, about 3-4 minutes.
- Cover the bowl with a light cloth or plastic wrap and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) for 18 hours, until doubled in size.
- Preheat the oven to 550 degrees F (280 degrees C). Sprinkle a baking sheet with cornmeal.
- Turn the dough onto a lightly floured surface and sprinkle with more flour. Form the dough into a rectangle, and cut it into four equal parts. Shape each piece into a ball, stretching and tucking the dough to create a smooth surface, adding more flour if needed. Cover the dough balls with a towel and let rest for 15 minutes.
- To shape the dough, sprinkle the surface with flour and lightly pat flat. Use a rolling pin to form a thin disk about 9 inches in diameter.
- Transfer the formed crust to the prepared baking sheet and top as desired. Bake on the bottom rack for 4 minutes, move to the middle rack and bake for 5-6 minutes more minutes, until the bottom is crispy and the top is lightly browned. Move to cooling rack to cool slightly before serving.
