EASY BAKED LEMON CHICKEN AND RICE
One pan baked lemon chicken and rice is a delicious, easy dinner recipe made in less than an hour from start to finish, with simple ingredients.

Steps:
- Preheat the oven to 200°C/390°F.
- Season chicken thighs with paprika, thyme, salt and pepper on both sides.
- Cook the thighs in an oven-proof pan set over medium-high heat, skin-side down until the skin is crisp and golden.
- Flip over and cook for another 5 minutes. Remove from the pan and set aside.
- Saute the onion and garlic in the same pan until fragrant then add the rice, lemon zest, lemon juice and stock/water.
- Bring to a simmer then place the chicken back on top. Cover with a lid then place in the oven.
- Bake the chicken and rice for 20-25 minutes until the chicken is cooked through and the rice is fluffy and tender.
- Scatter over chopped parsley and serve with lemon wedges.

- In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute chicken, onion, carrot and garlic until chicken is no longer pink, 5-7 minutes., In a small bowl, mix cornstarch, broth, lemon juice and salt until smooth. Gradually add to skillet; bring to a boil. Cook and stir until thickened, 1-2 minutes., Stir in peas; return to a boil. Stir in rice. Remove from heat; let stand, covered, 5 minutes.

DREW'S FAVORITE LEMON CHICKEN WITH RICE AND PEAS
Steps:
- PREP CHICKEN Dice chicken breasts in to 1 inch pieces Salt and pepper chicken Put flour on a plate an dredge chicken shaking off excess flour. COOK RICE Bring 1 1/2 cups of chicken stock to a boil in a medium sauce pan. Add rice & peas and bring back up to boil. Turn off heat and cover. MEANWHILE COOK CHICKEN Heat olive oil in a large skillet over medium-high heat Add chicken pieces and lemon zest. Cook turning occasionally until chicken is browned. Add remaining 1 cup of chicken stock and garlic stir to combine. Lower heat to medium and cook until bubbly and sauce is thick - about 4-5 minutes. FINISH MEAL Add butter to chicken and sauce mix. Turn off heat. Add lemon juice and stir to combine. Serve chicken and sauce over rice and peas.
LEMON HERB CHICKEN PASTA WITH GREEN PEAS, SNAP PEAS AND SPINACH
Steps:
- Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.
- Sprinkle the chicken with salt and pepper. Add 2 tablespoons olive oil to a large pan over medium-high heat. Cook the chicken until the internal temperature reaches 160 degrees F, about 5 minutes per side. Remove the chicken and slice it into strips.
- Add 1 tablespoon olive oil to the pan. Add the garlic and shallot and sprinkle with salt and pepper. Cook until fragrant, 1 minute. Add the lemon juice and sugar snap peas and cook, 2 minutes. Add the reserved pasta water and the frozen peas. Cook until the peas are just cooked through, 2 minutes more.
- Add the cooked pasta, spinach, sliced chicken, chopped basil, chopped parsley and the remaining 2 tablespoons olive oil. Toss all the ingredients together to coat, season with additional salt and pepper and garnish with parsley leaves. Serve immediately.

EASY LEMON CHICKEN WITH RICE
This chicken is so easy to make! I typically serve it with a long grain Basmati rice, and then a salad or other green vegetable. I don't know if "Lemon Chicken" is the best description, but it does call for lemon juice! I wanted to find a good chicken recipe, and I ended up tweaking until it was just perfect!

- Season chicken breasts generously with garlic powder, parsley, pepper, and if desired (for a more lemon taste) lemon pepper. Sprinkle a light amount of salt of the chicken.
- Heat up a skillet on high heat, and add butter and olive oil. Once hot (a sprinkle of water will "sizzle" in the oil), add seasoned chicken breasts.
- Sear chicken on both sides until lightly browned, then remove the chicken from the skillet to a plate (keep burner on high the entire time).
- Add lemon juice to the hot skillet and swirl it around to loosen all the chicken juices and flavor from the pan, but DO NOT DISCARD.
- Add water quickly after lemon juice has picked up the spices. Add bouillon cubes and bring to a boil.
- Stir in corn starch that has been dissolved in 1/2 Celsius cold water.
- Wait for a reboil, and then add the chicken breasts back into the gravy mixture.
- Wait for another reboil and then cover the skillet, and turn the heat to low.
- Let chicken simmer for 15-20 minutes (I usually start rice in the rice maker at this point because our rice only takes about 15-20 minutes to cook, but you'll have to adjust based on your needs and equipment).
- Serve chicken over rice.
LEMONGRASS CHICKEN WITH SNOW PEAS AND JASMINE RICE
Transform leftover cooked chicken into a dish that will delight the senses with color, texture, aroma, and flavor. Lemongrass, Thai red curry paste, and coconut (our heart-healthy recipe uses coconut extract) are the popular Thai ingredients that do the trick.
Yield serves 4, 1 cup chicken mixture and 1/2 cup rice per serving

- Prepare the rice using the package directions, except use 1 1/2 cups water and omit the salt and margarine.
- Meanwhile, trim and discard about 6 inches from the slender tip end of the lemongrass stalk. Remove the outer layer of the leaves from the bottom part of the stalk. Carefully cut the stalk in half lengthwise. Put in a large saucepan (don't add the lemon zest yet if using).
- Add the broth, remaining 2 cups water, and chicken to the pan. Bring to a boil over high heat. Reduce the heat to medium low. Cook, covered, for 6 to 8 minutes, or until the mixture has a lemon flavor. Don't stir. Discard the lemongrass.
- Add the remaining ingredients (if you are using lemon zest instead of lemongrass, add it now). Cook for 1 to 2 minutes, or until the snow peas are tender-crisp, stirring occasionally. Serve over the rice.
- Lemongrass is an herb that often is used in Thai cooking. Although the outer leaves and tops are too tough and fibrous to eat, they can be cooked to provide lemony flavor and an appealing fragrance without the acidity of fresh lemon. Chop or slice the lower part of the stem, the only edible part, for use in a variety of chicken and seafood dishes.
- Made of fresh chile peppers, herbs, and spices, Thai red curry paste is very hot and aromatic. The hotter the chile pepper used (Thai bird's eye is among the hottest), the hotter the chile paste; check the ingredients and make your selection accordingly. Among the many other ingredients that may be included in the paste are cinnamon, coriander seeds, cumin seeds, galangal or fresh ginger, garlic, kaffir lime leaves, lemongrass, onion, shrimp paste, turmeric, and vinegar.

- Heat the oil in a very large non-stick frying pan and cook the onions for 5 mins or until soft. Meanwhile, coat the chicken thoroughly with the thyme, curry powder and allspice. Add to the pan and briefly brown the chicken, then tip in the tomatoes, chilli, garlic and bouillon. Pour over 450ml water, cover and simmer for 30 mins or until the chicken is tender.
- Meanwhile, tip the rice into a medium-sized pan with the onion, garlic, thyme and bouillon. Pour in 600ml water, cover and cook for 25 mins or until the liquid has been absorbed and the rice is tender. Check toward the end of the cooking time to ensure it isn't starting to catch on the pan. Stir in the beans and heat through. If you're following our Healthy Diet Plan, serve half the rice with half the chicken (saving the leftovers for a second meal later in the week). Otherwise you can serve four portions, scattered with a few extra thyme leaves, if you like.
