Try this delicious recipe.

Number Of Ingredients 18

3 slices stale bread
crumbled
A splash or two beef stock or milk
2 pounds ground beef
1/2 cup Chianti red wine
Kosher salt and pepper
Freshly grated nutmeg
about 1/4 teaspoon
4 cloves garlic
finely chopped
12 leaves fresh sage
thinly sliced or chopped
A handful of flat-leaf parsley
chopped
1 large egg
A couple of handfuls grated Parmigiano-Reggiano or Pecorino cheese
EVOO - Extra Virgin Olive Oil
for drizzling

Steps:

  • Preheat oven to 400°F
  • Line a baking sheet with parchment paper
  • In a bowl, moisten bread with stock or milk
  • In a mixing bowl, mix beef with the wine and season with salt and pepper
  • Squeeze excess liquid from bread and tear it into small breadcrumbs as you add them to the bowl with the meat
  • Add nutmeg, garlic, herbs, egg, cheese and a fat drizzle of EVOO
  • Mix to combine with your hands
  • Using a scoop, roll 20-24 balls and place them on the parchment-lined baking sheet
  • Roast 18-20 minutes

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
  • Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!

2 tablespoon(s) bacon fat
MEATBALLS
1 1/2 pound(s) ground pork
3 pound(s) ground beef
4 large eggs (beaten)
1 package(s) (sleeves) crackers (crumbled)
3/4 cup(s) milk
1/2 teaspoon(s) poultry seasoning
1 teaspoon(s) salt (to taste)
1 1/2 teaspoon(s) ground black pepper
1 teaspoon(s) nutmeg or cardamom
1 1/2 teaspoon(s) lemon zest, grated
ONIONS
2 large onions (sliced thin or chopped)
SAUCE
- pan drippings
1 1/2 quart(s) beef broth (or boullion water)
1/3 cup(s) milk
4 tablespoon(s) corn starch
2 cup(s) sour cream
3/4 cup(s) dry vermouth
1/4 cup(s) vodka

Steps:

  • Mix together all meatball ingredients. Refrigerate 90 minutes Or put in freezer for 15 minutes.
  • Form into 1-inch meatballs. Brown in bacon fat, when cooked, remove from frying pan to large bowl. Put onions in the pan for about 8-10 minutes over medium heat. Put the onions with the meatballs.
  • Add broth into pan and stir until it is boiling, this helps to get the pan drippings. Add corn starch mixed with milk. Stirring constantly, add in the sour cream sour cream, then the alcohol. It will thicken to a rich sauce.
  • Put the meatballs and onions into the pan and gently fold into the sauce. Remove from heat and serve!
  • *** Serve over noodles or mashed potatoes, with a salad or vegetable.

3 pounds ground beef chuck
1 (14 ounce) can evaporated milk
1 (1 ounce) package onion soup mix
¼ cup dry bread crumbs, or as needed
1 tablespoon Worcestershire sauce
2 cups ketchup
1 cup brown sugar
½ cup port wine
1 tablespoon Worcestershire sauce

Steps:

  • Mix ground chuck, evaporated milk, onion soup mix, bread crumbs, and 1 tablespoon Worcestershire sauce together in a bowl. Refrigerate for 1 hour. Form approximately 40 small meatballs and place on a baking sheet.
  • Set the oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil meatballs until just browned, 2 to 3 minutes. Turn meatballs over and continue broiling until browned on other side, about 2 minutes more.
  • Transfer meatballs to a slow cooker.
  • Combine ketchup, brown sugar, port wine, and 1 tablespoon Worcestershire sauce in a saucepan over medium heat. Cook and stir until dissolved, about 2 minutes. Pour over the meatballs in the slow cooker. Cook on High until meatballs are no longer pink in the middle and the sauce is thick, at least 1 hour.

1 cup brown sugar
1 cup ketchup
1/2 cup Bourbon
4 dozen meatballs, small, already cooked

Steps:

  • Combine the first three ingredients and simmer for 5 minutes, until blended.
  • Add meatballs and simmer, covered for about 45 minutes.
  • CROCK POT: For the crock pot, prepare sauce as above. Put meatballs (they can be frozen meatballs) into crock pot, pour sauce over and cook on low for 8 to 12 hours.

  • Combine all the ingredients except the olive oil and garlic in a bowl. Add the olive oil and garlic in a small sauce pan and heat. Roll the ingredient mixture into 1 to 2 inch balls, place them in a large frying pan and cook until browned. Remove from heat and set aside.
  • Heat your favorite Spagehetti sauce in a separate saucepan. Bring to boil. Reduce heat. Slowly stir in meatballs and simmer until heated throughout. Serve over noodles.

2-1/2 cups reduced-sodium beef broth, divided

  • Mix first 4 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into 1-in. balls; toss with 1/4 cup flour, coating lightly., In a large skillet, brown meatballs over medium-high heat. Add 2 cups broth; bring to a boil. Reduce heat; simmer, covered, until meatballs are cooked through, 5-6 minutes., Remove meatballs with a slotted spoon. Mix the remaining flour and broth until smooth; add to pan. 1 (10 ounce) jar apple jelly
1 (10 ounce) jar jalapeno pepper jelly
