EASY MOLE RECIPE
This EASY Mole recipe makes a delicious and rich sauce. It's made with chiles and rich Mexican chocolate. Ready in no time and perfect for any occasion.

Steps:
- In a large skillet, roast the tomatoes.
- Add the dried ancho chile.
- Toast for 1 minute on each side.
- Remove immediately.
- If the chile burns, the sauce will be bitter.
- Continue roasting the tomatoes while you boil 4 cups of water.
- Remove the stems and open up the anchos to remove the seeds.
- Discard the stems and the seeds.
- Place the anchos inside the boiling water.
- Turn the heat off and let them sit in the hot water for 5 minutes, or until pliable.
- Roast the tomatoes on all sides.
- Add the onion, garlic, and bread to the skillet.
- Char all the sides of the onions as well.
- Remove the garlic and bread once toasted.
- Remove the onions and tomatoes once they are ready.
- Discard the water from the dried chiles.
- Place the rehydrated dried chiles, tomatoes, onion, garlic, and bread into a blender.
- Add 1 cup of water.
- Blend until smooth.
- Heat the olive oil in a stock pot.
- Place a strainer over the top of the stock pot.
- Carefully and slowly strain the mole sauce into the stock pot.
- Remove strainer.
- Add the chicken broth and Mexican chocolate tablet.
- Stir until the chocolate has melted.
- Taste it. If you want it sweeter, add 1 tbsp sugar.
- Add the sauce, 2 cups chicken broth, and cooked chicken to a stock pot.
- Once the chicken is fully heated, it's ready!
- Serve with rice and tortillas. Enjoy!

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. , In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; set aside., Drain potatoes and transfer to a large bowl; add the tomatoes, cheese, onions and peppers., In a small bowl, whisk the mayonnaise, lime juice, seasoned salt and pepper; add to potatoes and gently stir to coat. Transfer to a greased 13x9-in. baking dish. Coarsely chop bacon; sprinkle over the top. Sprinkle casserole with chili powder., Bake, uncovered, at 350° for 25-30 minutes or until heated through. Sprinkle with cilantro. Let stand for 5 minutes before serving.

CHICKEN DURANGO
Not for butter phobes! This is one of the best tasting and easiest dishes you'll ever make. I got the recipe from my friend Cindy but she doesn't know where she got it. I have yet to meet a person who doesn't love this. Serve with a big loaf of crusty bread and/or mashed pots.

Steps:
- Mix together all ingredients except chicken.
- Place chicken in a baking dish skin up.
- Pour sauce over chicken and marinate for 3-4 hours.
- Bake uncovered at 350 for one hour or so.

- Pound chicken breasts until they are 1/2" thick.
- Mix spices with plain breadcrumbs; set aside.
- Dust chicken with breadcrumbs, dip in milk, then dip chicken breast back in seasoned bread crumbs.
- Heat oil in frying pan.
- Place chicken in heated fry pan.
- Fry breast on medium heat until golden brown.
- Remove chicken breasts and place on heatproof serving tray.
- Spread each breast with 1 1/2 Tablespoon of tartar sauce.
- Place ham on chicken followed by a slice of Swiss cheese.
- Place chicken in oven or microwave just long enough to heat and melt cheese.
- Serve with you favorite salad or side vegetable.
