EAGLE SALAD
Don't worry! It's not really eagle! This is an easy elbow macaroni salad that my Aunt makes. Everybody LOVES it!

Steps:
- Bring a pot of lightly salted water to a boil. Add macaroni, and cook until al dente, about 8 minutes. Drain, and rinse with cold water to chill. Set aside to dry.
- Mix together the cooled macaroni noodles, mayonnaise, onion and tuna in a bowl. Taste and add more mayonnaise, if desired. Season with salt and black pepper. Refrigerate until serving.

Who would have guess to use sweetened condensed milk in a salad dressing? But it complements the vinegar and mayonnaise perfectly.

- Combine milk, mayonnaise, vinegar, salt, pepper and sugar in separate container. Stir to combine.Cook pasta according to package directions; drain.Add pepper, carrots and onion to pasta. Pour dressing over macaroni. Mix well. Chill overnight.

- I usually wait and add the nuts right before serving this dish.
- Sometimes I even serve the nuts on the side.

- In a bowl, dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Gradually blend in the hot gelatin mixture, beating on low speed until smooth. MOM'S BEST MACARONI SALAD
This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

- Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
- In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

- Add drained fruit cocktail and crushed pineapple.
- Stir in sliced bananas with lemon and mix well. Add pecans and stir.

- FOR VARIATION: you can add 1/2 cup of small marshmallows and 1/2 cup shredded coconut if you like.
