Steps:
- Heat the oven to 425°F. Rinse blueberries; spread on tea towel or paper towels and pat to dry.
- Unroll pie crust in ungreased 11-inch tart pan; press gently against bottom and side. Add blueberries to pan; spread evenly.
- Bake 30 minutes or until crust edge is golden brown. Remove from oven to cooling rack; cool 3 to 5 minutes before cutting into wedges. Serve with ice cream.

BLUEBERRY COCONUT TART
This blueberry coconut tart with a crunchy almond crust is refreshing, fruity and totally easy and quick to make. It is loaded with delicious, healthy ingredients and does not contain any refined sugar! Plus, it's ideal to prepare in advance.

- Prepare a tarte pan (ø 26 cm) and preheat the oven to 170°C / 338°F.
- Place oats, cashews, and almond flour in a blender and blend until fine, at least 10 seconds.
- In a separate bowl, whisk together the melted coconut oil, maple syrup and salt. Add to the dry ingredients and blend again until everything is well combined. The mixture should stick together when pressed between your fingers. Otherwise, add another 1-2 tablespoon of maple syrup or coconut oil.
- Press the mixture firmly into the tart pan, also along the edge. Bake in the preheated oven for 12-14 minutes, until the edge has slightly colored. Remove from oven and let cool.
- For the cream, add all ingredients to a pot and bring to a boil. Turn down to medium heat and let simmer for 5 minutes.
- Transfer the mixture into a mixing glass and mix finely for at least 30 seconds (CAUTION HOT!).
- Empty the blueberry coconut cream into the cooled crust. Let cool at room temperature for 1 hour. Then place in the refrigerator for at least 5 hours or preferably overnight.
- Before serving, decorate with fresh berries as desired. Enjoy cold.
BLUEBERRY TART

- Special equipment: a 9-inch springform pan
- Preheat the oven to 375 degrees F. Coat a 9-inch springform pan with cooking spray.
- Combine 1 cup of the flour, 1 1/2 tablespoons of the granulated sugar and the salt in a food processor and pulse to combine. Add the butter and pulse until the mixture resembles coarse meal with some large lumps. Add the egg yolks and pulse until blended.
- Place the dough in the springform pan, and press it evenly against the bottom and about 1 inch up the sides. Toss 2 1/2 cups of the berries, the lemon zest, juice, cinnamon, nutmeg, remaining 1 tablespoon flour and remaining 1/3 cup granulated sugar in a medium bowl. Pour the berry mixture into the shell and bake until vigorously bubbling, about 1 hour. Remove from the oven and immediately top with the remaining 1 1/2 cups blueberries.
- Just before serving, dust with confectioners' sugar by tapping it through a fine-mesh sieve. Serve warm or at room temperature.
EASIEST AND BEST -BLUEBERRY-COCONUT TARTS
I made 1/2 the recipe first. But, I forgot and added 1 cup of coconut. Followed the recipe directions and prebaked shells for 10 min. Try to prick the shells on the bottom before baking. I forgot and nothing serious happened. Baked the tarts for 20 min. The filling was quite firm. We enjoyed them. I think I'll use double coconut all the time. I got 15 tarts. I had condensed milk left over so the next day I made more, 13 tarts this time. I didn't like the look of the mixture after the blueberries were mixed in yesterday, very blue looking. I even used frozen blueberries. You could add some flavoring if desired, taste the filling and see if you want to add anything more. Today I pre-baked the shells for 5 min. I put a few blueberries in the bottom of each shell, depending on size, I used 5-8 in each shell. These I baked for 15 minutes and they were a little runny in the middle. We liked them, there isn't any left. I think I'll try frozen raspberries next time. I'm posting the recipe the way it came to me.

- Prepare pie crust according to your directions and cut and fit into small tart tins. Press evenly against bottom and sides. (or you can use pre-made small tarts
- Cream butter and sugar.
- Add eggs, one at a time, beating until smoothly blended.
- Stir in coconut and vanilla.
- Spoon 1/2 teaspoon jam into each tart shell.
- Cover each tart 2/3 full with coconut mixture.
- Bake on bottom shelf at 300°F for 15-20 minutes or until golden brown.
- Cool slightly then remove from pans. Makes 2 dozen tarts.

- In a bowl, combine the flour, sugar, baking powder and salt. Beat the eggs, milk and oil; stir into dry ingredients just until moistened. BLUEBERRY-LEMON TART WITH TOASTED COCONUT
All you really need for a good dessert is some good jam and a little pastry in your freezer. This follows the same principle as the Cherry Almond Tart (page 163), but makes use of Blueberry Lemon Jam (page 10). You can substitute another homemade or store-bought jam of your choice.

- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- On a lightly floured countertop, roll out the pastry to about 6 inches square. Pierce the dough every 1/2-inch with a fork; this helps the pastry rise evenly. Mound the jam in the center of the dough. Lightly moisten the edges of the dough with water and pull and fold up the sides to the edges of the jam, forming pleats so the dough cradles the jam. Scatter the coconut flakes on top.
- Transfer the tart to the prepared baking sheet and bake for 20 to 25 minutes, until it has puffed and turned golden brown. Remove from the oven and let cool for a few minutes.
- Transfer to a dessert plate, spoon on the dollop of yogurt, and eat.
BLUEBERRY FLOWER TARTS RECIPE BY TASTY

- Preheat oven to 375°F (190°C).
- Roll out pie crusts onto a well-floured surface.
- Using a 4-inch (10 cm) flower-shaped cookie cutter, cut out as many flower shapes as possible. Ball up and roll out any remaining dough to make more flowers.
