This barbecue sauce is so wonderfully sweet, sticky and works equally well as a marinade or dipping sauce. It also has to be the easiest thing in the world to make! This will keep for a week in the fridge

EASTERN NORTH CAROLINA BARBECUE SAUCE WITH A WEST COAST TWIST
I'm not sure if using honey instead of sugar really qualifies as a 'West Coast twist,' but it does ensure that people from North Carolina can't attack me for this Eastern North Carolina-style barbecue sauce not being authentic. Anyway, while this isn't exactly what you might find in the Tar Heel State, it was fantastic on pulled pork.

EAST-WEST BARBECUED CHICKEN

- Place chicken in baking pan. Season with salt and pepper. Place mustard in small bowl. Whisk in orange juice, oil and pepper flakes. Pour over chicken, turning chicken to coat. Let stand 20 minutes. Combine chili sauce and hoisin sauce in small bowl.
- Prepare barbecue (medium-high) or preheat broiler. Grill chicken until just cooked through, about 10 minutes per side. Brush one side with chili-sauce mixture and grill until beginning to brown, about 3 minutes. Brush second side with sauce and grill until beginning to brown. Serve hot.

- Make the sauce: in a saucepan over medium heat, warm the oil.
- Add in the onion; cook until the onion begins to brown, 4-5 minutes, stirring occasionally.
- Add in the remaining sauce ingredients; simmer 5-10 minutes; remove from the heat.
- Let the tenderloins stand at room temperature for 20-30 minutes before grilling.
- Trim any excess fat or silver skin from the tenderloins; coat them evenly with the sesame oil.
- Season generously with salt and pepper; grill over direct medium heat until well marked on two sides, about 5 minutes, turning once.
- Using a brush, cover the tenderloins with a thin coating of the sauce and continue to grill until the pork is barely pink in the center, 10-15 minutes, turning and basting with the remaining sauce every 5 minutes.
- Let rest for 3-5 minutes before slicing on the bias; serve warm.

On a recent trip to the East Coast, I discovered this bold, spicy Carolina BBQ sauce. I'm not a huge fan of the thick and sugary sauces you typically see, so this recipe really intrigued me. I have tried a lot of recipes of Eastern North Carolina BBQ Sauce. This is the closest to what you will find in any of the BBQ Restaurants here in North Carolina. It is on the hot side, so you may wish to adjust the cayenne pepper and Tabasco™ sauce for milder flavor.
